Chocolate-Covered Nuts are a simple no-bake Christmas treat that are great for gifting! This 3-ingredient recipe is easy to make ... and even easier to eat!

3 cups raw, unsalted nuts (like almonds, pecan halves, or walnut halves)
4 ounces dark chocolate, at least 60% cacao, coarsely chopped
3 tablespoons heavy cream

Steps:

  • Cover a large baking sheet with parchment or wax paper. Set aside.
  • In a small saucepan combine chopped chocolate and cream over low heat. Stir constantly until mixture is smooth and creamy. Remove from heat.
  • Dip nuts halfway into melted chocolate mixture then place on parchment-covered baking sheet. When all of the nuts have been dipped, refrigerate for 30 to 40 minutes or until chocolate is set.
  • Eat immediately or store in the fridge or freezer.

Cocoa Dusted Candied Walnuts (Vegan, Refined Sugar Free, Paleo) image

These chocolate covered candied walnuts are coated with a crunchy maple caramel, dipped in melted dark chocolate then dusted with cocoa.

Number Of Ingredients 7

2 cups/ 200g raw walnuts
¼ cup/ 60ml maple syrup
½ teaspoon flaky sea salt
5 ounces/145g 100% unsweetened chocolate, finely chopped
1 ½ Tablespoons/20g melted coconut oil
¼ cup plus 1 Tablespoon/75g maple syrup
1/2 cup/60g raw cacao powder or natural cocoa powder for dusting

Steps:

  • In a medium skillet, combine the walnuts, maple syrup and salt. Cook over medium high heat, stirring constantly, until golden and sticky and the walnuts are completely coated and separated (about 3 to 4 minutes).
  • Pour nuts onto a silpat or parchment lined pan and use a fork to separate them. Allow the nuts to cool and harden completely, (about 15 minutes). You can place the nuts in the fridge to firm them faster.
  • Meanwhile, place chocolate in a medium bowl along with the coconut oil; place bowl over simmering water and stir gently until melted (or alternatively you can melt on medium in the microwave).
  • Add maple syrup to the melted chocolate and stir until fully combined.
  • Transfer the candied maple walnuts to a large bowl, and pour the melted chocolate over the nuts. Stir until thoroughly coated.
  • Transfer onto lined baking pan. Using two forks, separate nuts so none stick together. Return the nuts to the refrigerator until chocolate has just about set, around 10 minutes.
  • Place cocoa powder into a shallow bowl or Ziploc bag. Toss the walnuts in the cocoa until well coated and sift out excess powder in a strainer.
  • Store in an airtight container in the fridge.

This simple and flavorful mix includes a fiery kick of cayenne pepper. It's a perfect snack for entertaining or to nosh on while simply lounging - I got this recipe from our local newspaper.

2 tablespoons butter
1/4 teaspoon cayenne pepper
2 teaspoons ground cinnamon
2 cups walnut halves
2 tablespoons granulated sugar
1 tablespoon cocoa powder

Steps:

  • Preheat oven to 250°F.
  • In a large microwaveable bowl, place butter, cayenne pepper, and cinnamon. Microwave on high until butter is melted, about 30 seconds.
  • Whisk ingredients together to combine. Add walnuts and stir to coat. Sprinkle with sugar and toss to coat walnuts.
  • Pour mixture onto a rimmed baking sheet. Bake in center of oven for about 1 hour stirring about every 15 minutes, until walnuts are a deep golden color and toasted.
  • Sift cocoa over warm walnuts. Let cool.
  • Store in an airtight container at room temperature for up to 5 days.
