CHERRY CORDIAL COOKIES

You need these soft sugar cookies on your holiday cookie tray. They have little bits of dried cherries, are topped with a dollop of chocolaty cherry preserves and drizzled with white chocolate. Oh my... they're good. Chewy, chocolaty, sweet, and fantastic.

Number Of Ingredients 10

1/2 c butter, room temperature
1 c sugar
1 1/2 tsp pure vanilla extract
2 c all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 c chopped dried cherries
1 c cherry preserves
1 c semi-sweet chocolate chips
1/2 c vanilla or white chocolate chips

Steps:

  • 1. Pre-heat oven to 350° F.
  • 2. Cream together butter and sugar.
  • 3. Blend in egg and vanilla.
  • 4. Sift together flour, baking powder, and salt.
  • 5. Add to butter mixture along with dried cherries, just until blended.
  • 6. Scoop rounded teaspoonsful of dough onto a parchment-lined baking sheet.
  • 7. Bake at 350° F. for 10-12 minutes or until lightly golden.
  • 8. While cookies are baking, melt cherry preserves. In a microwave-safe bowl, heat cherry preserves on high for one minute in the microwave.
  • 9. Using an immersion blender blend the preserves to break up the cherries. Or use a small chopper or fork to mash them.
  • 10. Stir semi-sweet chocolate chips into the hot cherry preserves. Continue to stir until chocolate chips are melted and the mixture is smooth.
  • 11. Remove cookies from the oven. Using the back of a spoon, immediately form a shallow well on the top of each cookie. Transfer cookies to a rack to cool.
  • 12. Spoon chocolate cherry mixture into the wells on top of each cookie.
  • 13. Melt white chocolate chips in a double boiler or in a stainless steel bowl set over boiling water.
  • 14. Drizzle white chocolate over filled cookies. Allow to cool completely.

1 package (17-1/2 ounces) sugar cookie mix
3/4 cup chopped dried cherries
1/2 cup butter, softened
1 egg
3/4 cup cherry preserves
1-1/2 cups semisweet chocolate chips
2/3 cup white baking chips

Steps:

  • Place the cookie mix, cherries, butter and egg in a large bowl; beat until well mixed. Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until edges are browned., Meanwhile, place cherry preserves in a small microwave-safe bowl. Microwave on high for 1 minute. Stir in chocolate chips until melted. If necessary, microwave in 10- to 20-second intervals until chips are melted; stir until blended., Using the back of a tablespoon, make an indentation in the center of each warm cookie. Fill indentations with cherry mixture. Remove to wire racks to cool completely., Microwave white baking chips until melted. Drizzle over cookies. Let stand until set.

1/2 cup butter, softened
1 cup sugar
1 egg
1 teaspoon rum extract
1 1/2 cups flour
1/3 cup cocoa
1/4 teaspoon baking soda
1/4 teaspoon baking powder
30 maraschino cherries, drained and patted dry
1/3 cup sugar, for rolling
glaze
1 cup powdered sugar
1/2 teaspoon rum extract
4 tablespoons maraschino cherry juice

Steps:

  • Pre-heat oven to 350 degrees in a large bowl beat butter, sugar, eggs and rum extract until light and fluffy.
  • Add flour cocoa, salt, baking powder and baking soda. Beat well.
  • Flatten about 1 tablespoon of dough.
  • Place a cherry in the middle of the dough and mold the dough around it.
  • Roll in sugar and repeat with remaining dough.
  • Place cookies 2 inches apart of an un-greased baking sheet.
  • Bake for 8 minutes and let cool on rack.
  • For glaze whisk ingredients together and spoon over cookies.
