1 package (16 ounces, 14-inch x 9-inch sheet size) frozen phyllo dough, thawed
1-1/4 cups butter, melted
1 pound finely chopped walnuts
1 package (10 ounces) miniature semisweet chocolate chips
3/4 cup sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon grated lemon zest
SYRUP:
3/4 cup orange juice
1/2 cup sugar
1/2 cup water
1/2 cup honey
2 tablespoons lemon juice

Steps:

  • Butter a 15x10x1-in. baking pans. Unroll one package of phyllo dough; cut stack into a 10-1/2x9-in. rectangle. Repeat with remaining phyllo. Discard scraps., Line bottom of prepared pan with two sheets of phyllo dough (sheets will overlap slightly). Brush with butter. Repeat layers 8 times. (Keep dough covered with plastic wrap and a damp towel until ready to use to prevent it from drying out.), In a large bowl, combine the nuts, chocolate chips, sugar, cinnamon and lemon zest. Sprinkle 2 cups over top layer of phyllo., Top with four layers phyllo dough, buttering each layer. Top with 2 or more cups nut mixture. Top with four layers phyllo dough, buttering each layer; top with remaining nut mixture. Top with the remaining phyllo dough, brushing each layer with butter. Drizzle any remaining butter over top. , Using a sharp knife, cut baklava into 1-1/2-in. diamonds. Bake at 325° for 50-60 minutes or until golden brown. Meanwhile, combine the syrup ingredients in a saucepan; bring to a boil over medium heat, stirring occasionally. Reduce heat; simmer, uncovered, for 20 minutes. Pour over warm baklava. Cool completely in pans on wire racks.

1 lb hazelnuts
12 ounces bittersweet chocolate, coarsely chopped
2 2/3 cups sugar
1 1/2 tablespoons cinnamon
1 lb phyllo dough
1 cup unsalted butter, melted
2 cups water
1 1/2 cups honey

Steps:

  • Preheat the oven to 350°. Spread the nuts on a baking sheet and bake for 12 minutes, until the skins are blistered; let cool. Leave the oven on. Transfer the nuts to a kitchen towel and rub off the skins, then transfer to a food processor and pulse until coarsely chopped.
  • Add the chocolate, 2/3 cup of the sugar and the cinnamon to the food processor and pulse until the chocolate and nuts are finely chopped and the same size.
  • Unwrap the phyllo and cover with a sheet of plastic wrap. Generously butter a 9-by-13-inch metal baking pan. Butter and stack 8 sheets of phyllo. Trim the edges. Ease the stack into the pan. Sprinkle about 2 cups of the filling over the phyllo. Butter and stack 2 more phyllo sheets; fold them in half crosswise and place over the filling. Sprinkle on another 2 cups of the filling. Top with 2 more buttered, folded sheets and 2 cups of filling. Butter and stack 3 more phyllo sheets, fold them in half and place over the filling. Fold in the overhanging phyllo on top and brush generously with butter. Using a ruler and a sharp knife, cut the baklava (through the top and bottom) into 3-inch squares (there will be a bit left on one long side). Cut each square in half to make triangles.
  • Bake the baklava for 25 minutes, then lower the oven temperature to 300° and bake for 50 minutes longer, until golden.
  • In a saucepan, bring the water, honey and the remaining 2 cups of sugar to a boil. Simmer over moderate heat for 10 minutes. Immediately ladle the hot syrup over the hot baklava and let stand until completely cool, at least 4 hours and preferably overnight.

1 cup unsalted butter, at room temperature, plus more for greasing pan
2 cups sugar
4 ounces bittersweet chocolate (85 per cent cocoa preferred), melted and cooled
2 large eggs
1 teaspoon vanilla extract
1/4 cup praline liqueur
3/4 cup all-purpose flour, plus more for dusting
1/4 cup unsweetened cocoa
1/4 teaspoon fine sea salt
5 sheets fillo dough
1/2 cup clarified butter
4 scoops good quality vanilla ice cream
1 cup caramel sauce
1 cup chocolate sauce
1 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 9 by 13-inch pan.
  • Place the softened butter in a large bowl or the bowl of an electric mixer, and whisk until it is pale yellow and light. Add the sugar and whisk until the mixture is light and fluffy. Whisk in the cooled chocolate, then add the eggs 1 at a time, whisking after each addition. Whisk in the vanilla and liqueur, sift in the flour, cocoa, and salt and fold them in until combined. Transfer the batter to the prepared baking pan, smoothing it out evenly, and bake in the center of the oven until the brownies have puffed slightly around the edges and are shiny on the surface, about 30 minutes. They will be very moist in the center. Allow the brownies to cool 4 to 6 hours, but overnight is best.
  • When you are ready to make the baklava, preheat the oven to 375 degrees F.
  • Brush the fillo sheets with clarified butter and stack them. Cut fillo sheets into 4 (6-inch) squares. Brush one side of the 4 squares with some caramel sauce and sprinkle with half of the chopped pecans. 2 cups unsalted butter
4 cups pecans, finely chopped
2 teaspoons cinnamon, ground
3/4 cup sugar
1 cup semi-sweet chocolate chips, melted
1 (16 ounce) package phyllo dough
3/4 cup orange juice
1 teaspoon vanilla extract
2 ounces semisweet chocolate
1 tablespoon butter

Steps:

  • In a small skillet, melt butter over low heat.
  • Let stand a few minutes.
  • Skim off and discard white foam from top and do not use any milky residue that sinks to bottom.
  • The clear yellow liquid is clarified butter.
  • Preheat oven to 350°F.
  • In a medium bowl, combine pecans, cinnamon, 1/4 cup sugar, and chocolate chips.
  • Mix well.
  • Open and stack phyllo sheets on a damp towel.
  • Cover with a damp towel to prevent drying out.
  • Brush a 12x18-inch sheet cake pan with clarified butter.
  • Layer half of phyllo sheets (about 10 x 12) in pan, brushing each sheet with butter.
  • Spread half of nut mixture evenly over layered phyllo sheets.
  • Brush next phyllo sheet on both sides with butter, then place on top of nuts.
  • Add 5 or 6 more phyllo sheets, brushing each sheet with butter.
  • Top with the remaining nut mixture.
  • Butter next phyllo sheet on both sides and place on top of the nuts.
  • Top with remaining phyllo sheets, brushing each with butter.
  • Using a sharp knife, cut pastry into 50 diamond-shaped pieces.
  • Do not remove pastry from pan.
  • Brush top with remaining clarified butter.
  • Bake 40 to 50 minutes, or until golden.
  • About 30 minutes before baklava is finished baking, in a small saucepan, combine remaining 1/2 cup sugar and orange juice.
  • Heat to boiling over medium heat, stirring often.
  • Reduce heat to medium-low and simmer 10 minutes.
  • Stir in vanilla.
  • Pour hot orange syrup over hot baklava as soon as it is removed from oven.
  • Let stand until cool, 4 hours or overnight.
  • When baklava is cool, drizzle Thin Chocolate Glaze on top.
  • Allow glaze to set up before serving.
  • Baklava may be kept, covered, 4 to 5 days at room temperature.
  • Freeze for longer storage.
  • To make the Thin Chocolate Glaze------------------.
  • In a small glass bowl, combine chocolate, butter, and 1 tablespoon water.
  • Heat in the microwave on High 30 to 45 seconds, or until melted and smooth when stirred.

6 ounces (about 1 cup) whole pitted dates
2 tablespoons sugar
1 tablespoon ground cinnamon
1 egg, beaten to blend
11 sheets frozen phyllo pastry (about 1/2 pound), thawed
3/4 cup (1 1/2 sticks) unsalted butter, melted
2 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 tablespoon unsalted butter
24 walnut halves
Whipped cream (optional)

Steps:

  • For syrup:
  • Bring all ingredients to boil in heavy small saucepan, stirring until sugar dissolves. Continue boiling 1 minute. Cool completely. (Can be prepared up to 2 days ahead. Cover and store at room temperature.)
  • For filling:
  • Combine 8 ounces walnuts, 6 ounces chocolate, dates, sugar and cinnamon in processor. Coarsely chop using on/off turns. Transfer filling to medium bowl. Mix in egg.
  • Position rack in center of oven and preheat to 350°F. Lightly butter 13 x 9 x 2-inch metal baking pan. Place 1 phyllo sheet on work surface (keep remainder covered with plastic and damp towel to prevent drying). Brush phyllo with butter. Top with second phyllo sheet and brush with butter. 100 g slivered almonds
2 sheets phyllo pastry
100 g butter, melted and cooled

Steps:

  • Combine chocolate, walnuts and almonds in a bowl and stand for 45 minutes or until mixture is firm.
  • Divide into 3 even pieces and roll each piece into a 12cm long cylinder.

2 cups coarsely chopped pecans
1 cup chopped dates
6 ounces bittersweet chocolate, chopped
1 tablespoon granulated sugar
2 teaspoons cinnamon
2 teaspoons grated orange rind
12 sheets phyllo pastry
2/3 cup butter, melted
3/4 cup liquid honey
1/4 cup orange juice
1 ounce bittersweet chocolate, chopped

Steps:

  • Toast pecans on baking sheet in center of 350°F oven for 5 to 10 minutes or until fragrant; let cool. In bowl, toss together pecans, dates, chocolate, sugar, cinnamon and orange rind. Set aside.

Baklava is a Greek dessert pastry consisting of layered phyllo dough and chopped nuts soaked in a sweet syrup. Traditionally this is a very rich and time consuming dessert to make. So I lightened it up and created a baklava that's a much more approachable. Oh, and it's delicious too!

2 cups pistachios, roasted, salted, and roughly chopped
1 cup almonds, roasted or raw, and roughly chopped
1 1/2 cups semi-sweet chocolate chips
1/2 teaspoon cinnamon
24 sheets frozen phyllo dough, thawed (about 1/2 a pound)
1 stick salted butter, melted
1 cup honey
2 teaspoons vanilla extract

Steps:

  • 1. Preheat the oven to 350 degrees F. Line a 9 inch spring form pan with parchment paper.2. In a medium bowl, combine the pistachios, almonds, chocolate chips, and cinnamon.3. Fold 1 sheet of phyllo dough in half and then place in the prepared pan. Brush the phyllo dough with melted butter. Repeat, layering 8 more times, placing the sheets of dough over top of each other. Spoon half of the nut/chocolate mix over the dough. Now add another 8 sheets of phyllo, brushing each with butter. Spoon over the remaining filling. When my family found this recipe in Pillsbury's "Best Desserts", we couldn't resist giving it a try - and of course, being a health nut, I couldn't resist the challenge of tweaking it into a lighter dish without compromising its flavor. As long as you like chocolate, there's no going wrong with this one!

1 (8 ounce) package phyllo pastry sheets, thawed
3/4 cup earth balance butter substitute, melted
2 cups walnuts, coarsely chopped
1 cup miniature semisweet vegan chocolate chips
2 tablespoons brown sugar
1/2 cup sugar
1/4 cup brown sugar, packed
1/2 cup water
1/2 cup light corn syrup
1 teaspoon maple extract

Steps:

  • Unroll pastry sheets and cover with damp towels and plastic wrap. Heat oven to 350. Place one sheet of dough in a 9x13" pan and brush with butter substitute. Place another sheet on top, brushing with butter substitute, and repeat until half the sheets have been used.
  • Sprinkle on walnuts, chocolate chips, and the 2 tablespoons brown sugar.
  • Place the rest of the dough sheets on top, brushing each with butter substitute. Press down around edges and, with a knife, make five evenly-spaced length-wise incisions so that you wind up with six long strips. Make diagonal cuts every 1.5", so that your six long strips become diamond-shaped pastries. (Feel free to cut squares, instead.).
  • Bake at 350 for 30-35 minutes or until puffy and golden.
  • Combine the rest of the ingredients except the maple flavor in a small saucepan and cook over medium heat until boiling and boil for five minutes, stirring constantly. Remove from heat and stir in maple flavor; refrigerate until baklava is ready.
  • Pour syrup over baklava as soon as it comes out of the oven and let cool.

This chocolate version of the traditional Greek dessert is a cinch to make but looks like you've slaved for hours. It is very impressive and tastes delicious.

1 pound pecans, finely chopped
8 ounces dark chocolate (such as Callebaut®), finely chopped
¾ cup white sugar
1 ½ teaspoons ground cinnamon
1 pound phyllo dough, thawed
1 ¼ cups unsalted butter, melted
¾ cup orange juice
½ cup honey
½ cup water
½ cup white sugar
2 tablespoons lemon juice
2 ounces semisweet chocolate
1 teaspoon butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 10x14-inch baking pan with butter.
  • Mix pecans, dark chocolate, 3/4 cup sugar, and cinnamon in a bowl. Trim phyllo dough to fit prepared baking pan. Layer 8 sheets of phyllo dough in prepared baking pan, brushing each sheet with melted butter; sprinkle with 2 cups pecan mixture. Spread butter on 4 more sheets of phyllo and layer over pecans; sprinkle with 2 more cups pecans. Repeat layers with 4 more sheets of phyllo and remaining pecans. Pour any leftover butter over baklava.
  • Cut through the top few layers of phyllo lengthwise, leaving bottom layer intact, to create 4 long rows. Make evenly-spaced zigzag cuts along each row to create small triangles, again leaving bottom layer of phyllo intact.
  • Bake in preheated oven until phyllo dough is golden brown and flaky, about 1 hour; immediately finish cutting through to bottom layer of baklava.
  • Bring orange juice, honey, water, 1/2 cup sugar, and lemon juice to a boil in a saucepan; reduce heat to medium and simmer until thickened, about 20 minutes. Pour sauce over baklava.
  • Melt remaining 2 ounces chocolate and 1 teaspoon butter in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Drizzle chocolate over baklava. Cover and refrigerate until ready to serve.

BAKLAVA WITH SPICED NUTS, RICOTTA & CHOCOLATE

Make some burma-style baklava from Turkey with spiced nuts, ricotta and chocolate. This style is rolled to make finger-shaped portions, as opposed to squares

500g sugar
lemon juice, to taste
300g walnuts
200g pecans
100g almonds
2 tbsp ground cinnamon
1 tsp ground cardamom
500g ricotta
1 lemon, zested
1 orange or clementine, zested
1 tbsp vanilla bean paste
250g unsalted butter
500g pack filo pastry
150g dark chocolate
100g finely ground pistachios (I use Iranian pistachios)

Steps:

  • First, make the syrup. Tip the sugar into a large saucepan with 650ml water. Stir over a low heat until the sugar has dissolved, then turn up the heat and bring to the boil. Reduce the heat to a simmer and cook for 15 mins, then squeeze in a few drops of lemon juice and simmer for a further 5 mins. Remove from the heat and leave to cool. Meanwhile, for assembling the baklava later, melt the butter in a small pan over a low heat for 5 mins, skimming and discarding any froth that rises to the surface.
  • For the filling, crush all of the nuts in a pestle and mortar, or blitz in a food processor - you want a mixture of finely ground nuts with a few chunky pieces. Tip into a bowl, stir through the spices and set aside.
  • In a separate bowl, mix the ricotta with the lemon and orange zests and vanilla. Heat the oven to 180C/160C fan/gas 4. Brush the bottom of a large baking tray (about 35 x 47cm) with some of the melted butter. Working with one sheet of filo at a time (covering the rest with a damp tea towel to prevent it drying out), lay the sheet out on a board so one of the short ends is facing you. Sprinkle 30g of the nut mixture evenly over the whole sheet, then spoon 1 tbsp of the ricotta mixture across the end closest to you. Fold this end over to enclose the filling, then lay a long, thin skewer next to the folded edge and roll the pastry around it to create a long roll. When it's fully rolled up, it should be roughly the thickness of a chipolata sausage. While holding one end of the rolling pin or skewer, gently scrunch the filo roll like an accordion and carefully push it off the skewer and onto the prepared tray. Repeat with the rest of the filo and fillings - you should get about 12 rolls. Cut each roll into four to make 48 large baklava, or eight to make 96 mini.
  • Brush with the remaining melted butter. Bake for 20-25 mins until evenly golden, turning the tray around halfway through. While still hot, immediately pour over 5-6 ladlefuls of the syrup. You should hear the syrup sizzle as it hits the hot baklava. Set aside to cool and absorb.
  • Melt the dark chocolate in a heatproof bowl set over a pan of simmering water, ensuring the bowl doesn't touch the water, or in the microwave in short bursts. Drizzle this over the cooled baklava and sprinkle with the ground pistachios.
