PARMESAN CHIVE SMASHED POTATOES

Steps:
- Preheat the oven to 400 degrees.
- Place the potatoes and 1 tablespoon salt in a large saucepan and add enough water to cover the potatoes. Bring to a boil, reduce the heat, and simmer for 17 to 20 minutes, until the potatoes are tender when pierced with a skewer. Drain the potatoes and place on a sheet pan. With a potato masher or metal measuring cup, press each potato until it's about 1/2 inch thick (they will be messy). Toss the potatoes with the olive oil, 1 teaspoon salt, and 3/4 teaspoon pepper.
- Roast the potatoes for 25 to 30 minutes, turning once, until the skins have become nicely browned. Sprinkle the potatoes with the Parmesan cheese and roast for another 2 to 3 minutes, just until the cheese melts. Sprinkle the potatoes with the chives and fleur de sel and serve hot.

- Place potatoes and bouillon in a Dutch oven and cover with 8 cups water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes., Drain and return to pan. Mash potatoes with cream cheese, cream, butter, salt and pepper. Garnish with chives.

- Cut potatoes into 2 inch chunks. Place in saucepan, cover with water and stir in 2 teaspoon salt. Bring to a boil over high heat, turn down to a simmer and cook for 15 to 20 minutes, until the potatoes are tender.
- Drain potatoes, return to saucepan. Mash potatoes by hand to a coarse texture. Turn heat to low, stir milk and butter. Fold in cheese and chives and add salt and pepper to taste.

- Cut potatoes into halves or fourths as needed to make similar-size pieces. Place in 5- to 6-quart slow cooker. Add water; mix well to coat all pieces.
- Cover and cook on Low heat setting 5 to 6 hours.
- Gently mash potatoes with fork or potato masher. Stir in potato topper, dressing mix (dry) and chives. Stir in half-and-half until potatoes are soft consistency. Potatoes will hold on Low heat setting up to 1 hour; stir occasionally.

- Place potatoes and 1 T. salt in a pot, cover with water, bring to a boil, reduce heat and simmer for 17-20 minutes.
- Drain the potatoes, place on a baking sheet, mash with a can (or whatever) until about 1/2" thick. (They'll be messy.)
- Toss with olive oil, salt, and pepper.
- Roast for 25-30 minutes, turning once, until golden brown.
- Spring with parmesan, roast another 2 minutes, remove, sprinkle with chives.
