BARBECUED STICKY CHINESE PORK CHOPS

4 pork chops
1 tsp five-spice powder
½ tsp ground cinnamon
1 tbsp hoisin sauce
2 tbsp each soy sauce , brown sugar, honey
1 tsp dry sherry , or Shaohsing rice wine
thumb-sized piece ginger , grated
1 garlic clove , crushed
2 tsp fish sauce
juice 2 limes
2 tsp soft brown sugar
1 shallot , thinly sliced
1 red chilli , thinly sliced
1 cucumber , halved lengthways, then sliced
small bunch mint , roughly chopped
50g roasted peanuts , chopped

Steps:

  • Make marinade by mixing ingredients together. Put chops in a shallow bowl or tray, pour marinade over, turning chops to make sure they are coated all over, and leave to stand for at least 30 mins.
  • To make salad, put the fish sauce, lime juice and 1 tbsp water into a small bowl, add the sugar, then mix until dissolved. Stir in shallot and chilli. Put cucumber in a serving dish, sprinkle mint over, pour dressing over and scatter with peanuts.
  • Heat the barbecue or griddle pan and cook chops on each side for 4-5 mins, until cooked. Serve with cucumber salad.

8 Pork Chops
12oz Char Siu Marinade *recipe below
1/4 cup Honey (warmed to thin)
1 Shallot chopped fine
6 cloves Garlic minced
2 Tablespoons Fresh Ginger chopped fine
1 cup White Sugar
1/2 cup Honey
1/4 cup Hoisin Sauce
1/4 cup Soy Sauce
1/4 cup Rice Wine Vinegar
1 teaspoon Sesame Oil
1 Tablespoon Chinese 5 Spice
1/2 teaspoon White Pepper
1 teaspoon Red Food Coloring

Steps:

  • Combine marinade ingredients and stir to dissolve sugar and spices. Reserve 1/2 cup of marinade for glaze
  • Place pork chops in a large resealable plastic bag and pour marinade over the chops.
  • Close the top of the bag and move the pork chops around so everything is covered with the marinade. Place in the refrigerator for 12 hours.
  • Preheat Drum style smoker or other bbq grill/smoker for indirect cooking at 325 degrees.
  • Remove pork chops from marinade and place on the cooking grate. Cook chops indirect for 15 minutes and flip.
  • Combine the reserved 1/2 cup of marinade with 1/2 cup of warm honey and brush over chops. Flip the chops every 5-10 minutes and continue to brush with marinade. The Char Siu chops are done when the outside is charred and the internal temperature reaches 150-155 degrees.

⅔ cup soy sauce
½ cup honey
½ cup Chinese rice wine (or sake or dry sherry)
⅓ cup hoisin sauce
⅓ cup ketchup
⅓ cup brown sugar
4 cloves garlic, crushed
1 teaspoon Chinese five-spice powder
½ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
⅛ teaspoon pink curing salt
1 (3 pound) boneless pork butt (shoulder)
1 teaspoon red food coloring, or as desired
1 teaspoon kosher salt, or to taste

Steps:

  • Place soy sauce, honey, rice wine, hoisin sauce, ketchup, brown sugar, garlic, five-spice powder, black pepper, cayenne pepper, and curing salt in a saucepan. Bring to a boil on high heat; reduce heat to medium-high. Cook for 1 minute. Remove from heat. Cool to room temperature.
  • Cut pork roast in half lengthwise. Cut each half again lengthwise forming 4 long, thick pieces of pork.
  • Transfer cooled sauce to a large mixing bowl. Stir in red food coloring. Place pork sections into sauce and coat each piece. Cover with plastic wrap and refrigerate 4 to 12 hours.
  • Preheat grill for medium heat, 275 to 300 degrees F (135 to 150 degrees C) and lightly oil the grate. Line a baking sheet with parchment paper.
  • Remove sections of pork from marinade and let excess drip off. Place on prepared baking sheet. Sprinkle with kosher salt to taste.
  • Transfer pork sections to grate over indirect heat on prepared grill. Cover and cook about 45 minutes. Brush with marinade; turn. Continue cooking until an instant-read thermometer inserted into the center reads 185 and 190 degrees F, about 1 hour and 15 minutes more. Do not use any more marinade on cooked meat until after you boil it.
  • Place leftover marinade in saucepan; bring to a boil; let simmer 1 minutes. Remove from heat. Now you can use it to brush over the cooked pork.

½ cup soy sauce
¼ cup brown sugar
2 tablespoons lemon juice
1 tablespoon vegetable oil
½ teaspoon ground ginger
⅛ teaspoon garlic powder
6 boneless pork chops

Steps:

  • In a bowl, mix the soy sauce, brown sugar, lemon juice, vegetable oil, ginger, and garlic powder. Set aside some of the mixture in a separate bowl for marinating during cooking. 1 1/2 tbsp brown sugar ((white also ok))
1/4 cup honey
1/4 cup hoisin sauce
2 tbsp light soy sauce (, or all purpose soy (Note 1))
1 tbsp soy sauce (, just all purpose (or more light soy) (Note 1))
1 tsp Chinese five spice powder ((Note 2))
1 tbsp oil ((vegetable or canola) (Note 3))
2 tsp red food colouring (, optional (Note 4))
1.2 - 1.5kg / 2.4 - 3lb pork scotch fillet (aka collar neck, pork neck) OR pork shoulder ((Note 5))
2 tbsp Extra Honey

Steps:

  • Cut pork in half to make two long strips. (Note 5)
  • Mix Marinade ingredients in a bowl.
  • Place the pork and Marinade in a stain proof container or ziplock bag. Marinate 24 to 48 hours in the fridge (3 hours is the bare minimum).
  • Preheat oven to 160C/320F.
  • Line a tray with foil and place a rack on top (recommended but not critical).
  • Remove pork from the marinade, save Marinade. Place pork on rack.
  • Roast for 30 minutes.
  • Meanwhile, pour reserved marinade in a saucepan. Mix Extra Honey into marinade. Bring to simmer over medium high and cook for 2 minutes until syrupy. Remove from heat.
  • Remove pork from oven. Dab marinade all over, then turn. Baste then roast for a further 30 minutes.
  • Remove pork from oven. Brush with marinade again, then turn, brush with marinade and roast for a further 20 minutes. If charring too quickly, cover with foil.
  • Baste again on surface then bake for a further 10 minutes until caramelised and sticky. Meat should be tender but not falling apart, like with pulled pork. Allow to rest for 10 minutes before slicing.
  • Serve with rice and steamed Chinese greens. See notes for more uses!

16 ounces pork chops, 4 of them about 1 inch thick
1/2 cup hoisin sauce
2 tablespoons soy sauce
1 1/2 tablespoons sherry wine
1 tablespoon chili-garlic sauce
1 teaspoon chili-garlic sauce, optional for more heat
1 teaspoon sesame oil
1 teaspoon honey

Steps:

  • Prepare the pork chops by removing all of the fat.
  • Then poke both sides of each chop with a fork.
  • Place the chops in a container with a tight fitting lid to be marinated.
  • In a separate bowl, mix together thoroughly all of the ingredients for the marinade.
  • Pour the marinade over the pork chops and stir them to coat.
  • Place them in the refrigerator and marinate overnight.
  • When you are ready to cook the chops, pre heat the grill to medium high.
  • Once the grill is hot remove the chops from the marinade and immediately place them on the grill.
  • Reserve the marinade in the container and let the pork chops sit for 2 minutes.
  • After 2 minutes, rotate the chops, don't flip them yet.
  • Just turn them to make nice grill marks on the one side.
  • Then using the reserved marinade, lightly baste each pork chop.
  • Let them cook another 2 minutes and then flip them.
  • Lightly baste again with the remaining marinade.
  • After another 2 minutes, rotate them to create grill marks on the other side and lightly baste them one more time.
  • After 2 more minutes check to make sure that the internal temperature of each pork chop has reached 140 degrees.
  • Once they are done, remove them from the heat, cover them with foil and let them sit for about 10 minutes and then serve.

CHINESE STYLE FRIED PORK CHOPS

Savory with just a hint of sweetness, this pork chop is one of my husband's favorites. It whips up in no time and served with a quickly stir-fried veggie and rice, it makes a complete meal in under 30 minutes.

4 pork chops or 4 pork tenderloin
1 tablespoon soy sauce
1 tablespoon rice wine
2 teaspoons sugar
1/2 teaspoon salt
1 dash pepper or 1 dash five-spice powder
1 tablespoon minced garlic
1 egg
6 tablespoons cornstarch
oil (for frying)

Steps:

  • Tenderize meat pork with a meat mallet. If you're short on time, pound to at least 1/4 inch thickness or thinner.
  • Mix together all the ingredients except cornstarch and oil and pour over pork. Allow to marinate for 30 minutes. (I've marinated it as long as 1 day and as little as 10 minutes.).
  • Just before frying, pour cornstarch on top of pork and stir into marinade.
  • Heat enough oil in a large skillet to cover bottom. Place pork in pan when oil begins to shimmer. Cook pork chops over med-high heat until cooked through.
