Spiced Sweet Potato Fries With Chili-Cilantro Cream image

Sweet potato french fries will surprise everyone at your holiday table - and nobody will miss the marshmallows. The potatoes are baked, not fried, so no need to feel guilty. Chili powder, cumin, cayenne and paprika complement the natural sweetness of the potatoes. It's probably a good idea to double this recipe, because they go fast.

2 large sweet potatoes, cut in matchsticks/batons, approximately 1/4 × 2 inches (no need to peel)
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper, or to taste
1 cup sour cream
1 tablespoon freshly squeezed lime juice
2 teaspoons sweet chili sauce
1 small garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 heaping tablespoon chopped cilantro

Steps:

  • Heat oven to 425 degrees. Toss the sweet potatoes and olive oil in a large bowl.
  • Combine the salt, cumin, chili powder, paprika, pepper and cayenne in a small bowl. Add to the potatoes and toss to coat.
  • Arrange the potatoes in one layer on a large baking sheet. Bake on the lowest rack of the oven until the undersides are browned, 12 to 15 minutes. Turn the potatoes with a spatula and bake for 10 more minutes.
  • While the potatoes are cooking, make the sour cream sauce. Combine all the ingredients except the cilantro in a medium bowl and whisk together. Stir in the cilantro.
  • Remove the potatoes from the oven and cool for a few minutes. Serve with the sour cream.

When I make these I always double the batch, because they are gobbled up faster than you can say "Southwestern Spiced Sweet Potato Fries." The heat and spice of cumin, chile powder and paprika complement the natural sweetness of the potatoes. I don't peel the sweet potatoes, because the skin adds extra texture and nutrients. The Chili-Cilantro Sour Cream is cooling and fresh, balancing out the kick of the spice and the earthiness of the potatoes.

2 liters vegetable oil
1/2 teaspoon ground cardamom
1/2 teaspoon smoked paprika
1/2 teaspoon salt
2 medium-size sweet potatoes, peeled
1/2 cup cornstarch
Chili Coconut Dip, recipe follows
1 tablespoon grapeseed oil
1/4 cup dried curry leaves, crushed
3 tablespoons unsweetened coconut flakes
1/2 teaspoon red chili powder
1/2 teaspoon ground coriander
1/2 teaspoon brown mustard seeds
Pinch of salt
Pinch of pepper
1/2 cup mayonnaise

Steps:

  • Heat the oil in a large pot with a heavy bottom, or in a deep fryer to 350 degrees F. Make sure the oil level is no more than one-third of the pot as it will rise during the frying process.
  • Mix the cardamom, paprika and salt together in a small bowl.
  • Cut the sweet potatoes into 1/4-inch-thick slices, and then cut the slices into 1/4-inch sticks. Put the cornstarch into a large bowl and add the sweet potatoes, tossing well using your hands to make sure they are well coated.
  • Working in batches, fry in the hot oil until golden brown, 6 to 7 minutes. Drain on paper towels, and then sprinkle liberally with the spice mixture. Serve with Chili Coconut Dip.
  • Heat the oil in a skillet over medium heat and add the curry leaves, coconut, chili powder, ground coriander, mustard seeds, salt and pepper. Toast until the coconut is golden brown, 2 to 3 minutes. Place in a bowl with the mayonnaise and stir well to combine.

  • 3. Put fries on a serving platter. Spoon chili over fries. Sprinkle with cheese & onions. Serve hot. Optional toppings that are low calorie: black olives, tomatoes, lettuce.
