CRISPY CHICKEN WONTONS
Served with a choice of sauces, these crunchy appetizers are a big hit at parties. They're so popular that my family has even requested them as a main dish for dinner. -Connie Blesse, Auberry, California

Steps:
- In a large bowl, combine the chicken, carrots and water chestnuts. In a small bowl, combine the cornstarch, water, soy sauce and ginger until smooth. Add to chicken mixture; toss to coat. , Position a wonton wrapper with one point toward you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Place 1 teaspoon of filling in the center of wrapper. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with water; press to seal. Repeat with remaining wrappers and filling., Place on greased baking sheets. Combine butter and oil; brush over wontons. Bake at 375° for 10-12 minutes or until golden brown. Serve with plum or sweet-sour sauce.

- 1. Stir together first 7 ingredients in a medium bowl. Spoon 1 teaspoon mixture in center of each wonton wrapper. Moisten wonton edges with water. Bring corners together, pressing to seal. Pour oil to a depth of 3 inches into a soup pot or Dutch oven; heat to 375 degrees. Fry wontons in batches until golden, turning once. Drain on wire racks over paper towels. PORK-AND-SHRIMP WONTONS WITH PEANUT SAUCE
Steps:
- For the spicy peanut sauce: Combine the peanut butter, soy sauce, oil, vinegar, brown sugar, garlic, ginger, chili paste and water in a blender. Blend until smooth, adding more water as needed. Set aside.
- For the wontons: In a large bowl, combine the pork, shrimp, chives, sesame oil, soy sauce, brown sugar, salt and pepper. Mix everything gently but thoroughly together with your hands (or a wooden spoon).
- Bring a large saucepan filled with 3 to 4 inches of chicken stock to a boil.
- Place 1 tablespoon of the pork mixture in the middle of a wonton wrapper. With your finger, dab the edges of the top half of the wrapper with beaten egg. Fold the top over to enclose the filling, press to seal the edges, then fold two corners in and press to seal the corners together. Place the finished wonton on a lightly floured baking sheet and repeat with the rest of the filling and wrappers.
- When you have enough wontons to begin to cook, gently transfer wontons into the boiling stock, making sure not to overcrowd the pot. Simmer until the filling is cooked through, about 5 minutes. Continue forming wontons while the batches cook.
- Transfer cooked wontons to a bowl. Top with peanut sauce, a drizzle of toasted sesame oil, and garnish with some cilantro and serrano pepper slices. Enjoy!
CHICKEN WON TONS WITH HOISIN-PEANUT DIPPING SAUCE
You can stir up the chicken mixture and fill the wonton wrappers while the frying oil heats. The dipping sauce that follows is great with these crispy won tons, but if you'd prefer, use one of the many bottled Asian sauces on the market.

- Won Tons:.
- Pour peanut oil to a depth of 3 inches into a large Dutch oven; heat to 375 F (about 25 minutes).
- While oil heats, combine chicken and next 6 ingredients in a medium bowl. Spoon 1 heaping teaspoonful of meat mixture in center of each won ton wrapper, moisten edges with water.
- Carefully bring 2 opposite points of wrapper to center over filling; pinch points gently to seal. Bring remaining opposite points to center, and pinch gently to seal.
- Fry won tons, in batches, 1 1/2 minutes or until golden, turning once. Drain well on paper towels. Serve with Hoisin-Peanut Dipping Sauce.
- Hoisin-Peanut Dipping Sauce:.
- Combine all ingredients in a small saucepan; bring to a boil. Cook, stirring constantly, 1 minute. Serve with Chicken Won Tons or other Asian dippers.
