FRENCH FRIED ONION CHICKEN
An easy weeknight dinner with just 10 minutes of prep! Your family will love this crispy and flavorful baked French Fried Onion Chicken!

- Preheat oven to 350 degrees F. Line a rimmed baking sheet with foil and place a wire rack on top. Spray the wire rack with cooking spray. Set aside.
- Pat chicken dry with paper towel; sprinkle with seasoned salt on both sides.
- In a large Ziploc bag, combine fried onions, flour and garlic powder. Use a rolling pin or meat mallet to coarsely crush the fried onions. Transfer to a shallow dish.
- Place the eggs in a separate shallow dish.
- Working with one piece of chicken at a time, dip the chicken in the egg and then dredge in the onion mixture, gently pressing to make sure that both sides are evenly coated. Place the chicken on the prepared wire rack; repeat with remaining chicken.
- Bake chicken until it reaches an internal temperature of 165 degrees F - about 20-25 minutes.

- Dip chicken breasts in egg, then flour, then again in the egg and then press into french fried onions, making sure to coat chicken well . Then place chicken on cookie sheet and bake at 350 degrees for about 30 - 40 minutes or until chicken is cooked through.

- 1. In large mixing bowl, combine chicken and celery; chill. Combine mayonnaise, Durkee Sauce, salt, pepper, hot pepper sauce, chicken base and lemon juice; blend throughly. Combine chicken mixture and slad dressing; mix well and chill for at leats 4 hours.
- 2. To serve the Ayres way, serve with strawberries, banana slices, pineapple chunks, grapes and/or other fruits of your choosing. Don't forget the Ayres' Pumpkin Bread Fingers (I will post recipe)
- 3. *Note: Chicken base is a commercial product. Granule bouillon may be substituted or it may be omitted. Durkee's Famous Sauce is still made and can be found on the condiment isle where mayonnaise is found. Actually, I don't use Durkee's or Chicken Base when making chicken salad. I use a mixture of Helman's Mayonnaise and Kraft Miracle Whip and sometimes just a dab of Marzetti Country Style Slaw Dressing. I like the dressing to be thick and just enough to bring all the ingredients together. I don't like it loose or swimming in dressing.
CRUNCHY FRENCH ONION CHICKEN

- Preheat oven to 400 degrees F (200 degrees C).
- Spread crushed onions in a shallow bowl. Pour beaten egg into a separate shallow bowl.
- Dip chicken into beaten egg, then press into crushed onions. Gently tap chicken to let loose pieces fall away. Put breaded chicken to a baking sheet.
- Bake chicken until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

CHICKEN WITH DURKEE'S RECIPE

- Melt margarine in large pan. Add Durkee's and mustard using a little water until blended. Add lemon juice, vinegar, sugar, salt and pepper. Water may vary. Allow chicken to brown on both sides before dipping in sauce.

My favorite hot and spicy wings. The spiciness of the dipping sauce can be adjusted to your preferences. Durkee's has also gone by the name of Franks Red Hot Sauce

- Trim wings.
- Mix together hot sauce, oil and vinegar.
- Mix with wings and marinate 30 - 45 minute
- Place wings on broiler pan in single layer. Broil 20 ~ 25 minute Turn often and brush with marinate till crispy.
- Dipping Sauce - 1 tablespoon butter, 1 tablespoon lemon juice or vinegar. Cook until smooth with ------ Warm - 3 tablespoons Red Hot Hot - 4 tablespoons Red Hot Very Hot - 5 tablespoons Red Hot Scorching - 6 tablespoons.
