This classic Italian-American chicken recipe includes tender, perfectly pan seared chicken cutlets, and flavor enhancing browned mushrooms, and it's all covered with a richly seasoned marsala wine, garlic and herb sauce.

1 1/4 cups dry marsala wine*
1 1/4 cups unsalted chicken broth
2 (10 - 11 oz) boneless skinless chicken breasts, (butterflied and halved, pounded to an even thickness)
Salt and freshly ground black pepper
1/3 cup all-purpose flour
2 Tbsp unsalted butter
2 Tbsp olive oil
8 oz. cremini mushrooms, (sliced)
3 garlic cloves, (minced (1 Tbsp))
1 tsp minced fresh thyme ((or scant 1/2 tsp dried))
1 tsp minced fresh oregano ((or scant 1/2 tsp dried))
1 1/2 tsp cornstarch (whisked with 1 Tbsp chicken broth (in a small bowl until well combined))
1/3 cup heavy cream
1 Tbsp minced fresh parsley

Steps:

  • Add marsala wine and chicken broth to a medium saucepan. Heat over medium-high heat, bring to a boil, then reduce heat to medium and let gently boil until reduced to 1 cup**, about 15 minutes.
  • Meanwhile season both sides of chicken with salt and pepper. Dredge each side in flour.
  • Melt 1 Tbsp butter with 1 Tbsp olive oil in a 12-inch skillet over medium-high heat. Add chicken pieces and let sear until cooked through (165 in center), turning once halfway through, about 10 - 12 minutes.
  • Transfer chicken to a plate. Tent with foil.
  • Reduce burner temperature to medium heat. Melt remaining 1 Tbsp butter with 1 Tbsp olive oil, add mushrooms.
  • Sauté mushrooms, just tossing occasionally (and increasing burner temp slightly as needed to encourage browning), until mushrooms have shrunk and are golden brown, about 8 minutes. Add garlic during last 1 minute of sautéing.
  • Remove pan from heat then pour in marsala reduction***, thyme and oregano.
  • Return to heat, bring to a simmer, while scraping up browned bits from the bottom, then stir in cornstarch chicken broth mixture. Stir until thickened****.
  • Off heat stir in heavy cream, season sauce with salt and pepper to taste. Return chicken breasts to pan, spoon sauce over top.
  • Sprinkle with parsley and serve immediately.

salt and ground black pepper to taste
2 pounds chicken tenders
2 tablespoons olive oil
2 tablespoons butter
½ cup Marsala wine
½ cup chicken stock
1 cup heavy whipping cream
1 teaspoon ground mustard

Steps:

  • Mix flour, salt, and pepper in a shallow dish. Press chicken tenders in the flour to coat completely; shake gently to remove any excess flour.
  • Heat olive oil in a large skillet over medium, tilting the pan to coat the cooking surface in oil. Melt the butter in the skillet. Cook the chicken tenders in the hot butter until evenly browned, 7 to 8 minutes.
  • Pour the Marsala wine into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon; cook until the wine is hot, about 30 seconds. Pour chicken stock into the skillet.
  • Stir heavy cream and mustard together in a bowl; add to the skillet. Bring the mixture to a simmer and cook another 10 minutes.

I made this up because I thought the flavors would match perfectly--and they do. The balsamic vinegar is really the key ingredient and adds a nice zip. This is for one serving, but it can be doubled, tripled, etc. to feed a larger crowd.

1 carrot
1/2 granny smith apple
1/2 cup fresh cranberries
1 chicken breast
1/4 cup applesauce
1/2 teaspoon cinnamon
salt, to taste
pepper, to taste
sugar, to taste
balsamic vinegar

Steps:

  • Preheat oven to 350°F.
  • Cut chicken into chunks or strips and dice apple.
  • Using a vegetable peeler, peel carrot into strips and sauté until soft.
  • Add salt and pepper during cooking process.
  • Deglaze with balsamic vinegar (as much as you want, actually) Stir in apple sauce, cranberries, diced apple, cinnamon, chicken, then pour into oven proof baking dish.
  • Bake for 15- 20 minutes or until done.
  • Season with more salt, pepper, cinnamon, sugar if desired.
  • Note: Feel free to change the amount of any of the ingredients.

3 boneless skinless chicken breasts, 1 1/2 to 2 pounds
Kosher salt and freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup olive oil
12 ounces cremini mushrooms, sliced 1/4-inch thick
1 large shallot, finely chopped
1 1/2 cups dry marsala wine
6 tablespoons unsalted butter, cut into pieces
1/3 cup flat-leaf parsley, chopped, plus more for garnish

Steps:

  • Set a wire rack inside a rimmed baking sheet. Cut two 12-inch sheets of plastic wrap.
  • Cut the chicken breasts in half lengthwise, making 6 roughly equal pieces; they should look like large chicken tenders. Place one sheet of plastic on a clean cutting board. Put a chicken piece in the center of the plastic and top with the other sheet of plastic. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4 inch thick and 6 to 8 inches long. Transfer to the wire rack. Repeat with the remaining chicken pieces. Liberally sprinkle the chicken with salt and pepper.
  • Mix the flour with 1 1/2 teaspoons salt and a generous amount of pepper in a shallow bowl or plate. Dredge the cutlets in the seasoned flour, shaking off any excess. Heat 3 tablespoons of the oil in a large skillet over medium-high heat until very hot, about 1 minute. Sear 3 cutlets until golden brown, about 2 minutes per side. Transfer the cutlets to a plate. Add the remaining 1 tablespoon of oil to the pan and sear the remaining 3 cutlets until golden brown, about 2 minutes per side. It's ok if the chicken is not completely cooked through; it will finish cooking in the sauce.
  • Add the mushrooms and 1/2 teaspoon salt to the same pan and cook, stirring and scraping up any browned bits, until the mushrooms are slightly softened and just beginning to release some liquid, 3 to 4 minutes. (The mushrooms will soak up the oil quickly and dry up the pan; that's ok, more liquid will release as they cook longer.) Add the shallots and cook, stirring and scraping up any browned bits, until starting to soften, 3 to 4 minutes.
  • Remove the pan from the heat. Pour in the wine and 1/2 cup water. Return the pan to high heat and bring to a boil. Reduce the heat to medium and simmer until the liquid reduces by a third and starts to thicken, 6 to 7 minutes. Whisk in the butter and continue whisking until it is melted and the sauce has thickened, 1 to 2 minutes.
  • Add the cutlets and any accumulated juices to the pan and cook, flipping halfway through, until the chicken is cooked through and the sauce has thickened, about 2 minutes.
  • Remove the chicken to a platter and stir the parsley into the sauce. Pour the sauce over the chicken and garnish with more parsley.

1 pound chicken tenders
Kosher salt and freshly ground black pepper
3/4 cup all-purpose flour
2 tablespoons olive oil
8 ounces cremini mushrooms, sliced
3 tablespoons unsalted butter
2 tablespoons dried porcini mushrooms
2 shallots, minced
2 teaspoons unflavored powdered gelatin
3/4 cup chicken broth
2 cloves garlic, minced
1 cup dry Marsala wine
2 tablespoons chopped fresh parsley
2 tablespoons fresh lemon juice
Warm crusty Italian bread, for serving, optional

Steps:

  • Season the chicken tenders with salt and pepper, then dredge in the flour, shaking off excess. Heat a 12- to 14-inch nonstick pan over medium-high heat. Add the olive oil and brown each side of the chicken until golden brown, 2 minutes a side (you want to actually undercook the chicken a bit; it will finish in the pan later). Transfer the chicken to a plate.
  • To the same pan, add the cremini mushrooms, butter, dried porcini and shallots and cook until deeply caramelized, about 15 minutes.
  • Meanwhile, in a small bowl, whisk the gelatin and 1/4 cup of the broth together and let sit to bloom.
  • Add the garlic to the pan and cook for another 20 seconds. Deglaze with the Marsala, scraping up any bits. Whisk in the remaining broth and the gelatin mixture and bring to a simmer. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.
  • Nestle the browned chicken in the pan and gently simmer for 3 minutes. Top with the fresh parsley and lemon juice. Serve with warm crusty Italian bread.

CHICKEN WITH CHANTERELLE MUSHROOMS AND MARSALA WINE

½ teaspoon paprika
2 skinless, boneless chicken breast halves
2 tablespoons butter
½ pound sliced chanterelle mushrooms
4 tablespoons butter
salt and ground black pepper, or to taste
1 cup chicken broth
½ cup dry Marsala wine
1 teaspoon dried tarragon, crushed

Steps:

  • Stir flour and paprika together in a shallow dish. Remove and set aside 1 tablespoon of the flour mixture for later use. Dredge the chicken in the flour mixture to coat evenly.
  • Melt 2 tablespoons butter in a skillet over medium heat; cook and stir chanterelle mushrooms in melted butter until they release their liquid and begin to brown, about 5 minutes. Transfer mushrooms to a bowl and set aside.
  • Melt 4 tablespoons butter in the skillet. Cook the chicken breasts in the melted butter until browned, about 3 minutes per side; season with salt and pepper.
  • Return the cooked mushrooms to the skillet and stir in chicken broth, reserved 1 tablespoon of flour-paprika mixture, Marsala wine, and dried tarragon. Place a cover on the skillet, reduce heat to low, and cook until the sauce is thick, the chicken is no longer pink in the center, and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons spicy brown mustard
4 boneless skinless chicken breast halves, about 4 oz. each
1 tablespoon vegetable oil, for the chicken
1 teaspoon vegetable oil, for the sauce
2 apples, halved, cored, each half cut into 8 wedges
1 cup canned whole cranberry sauce
1/2 cup apple cider or 1/2 cup apple juice, can also use chicken broth

Steps:

  • Mix four, salt and pepper on waxed paper or a plate.
  • Rub mustard all over the chicken, then coat in the flour mixture, shaking off excess.
  • Heat 1 tablespoons oil in a large nonstick skillet over medium heat.
  • Add chicken and cook 4 minutes per side or until browned and opaque in center.
  • Remove to a serving platter; cover loosely to keep warm.
  • Heat 1 teaspoons oil in skillet, add apples and cook, stirring often, 4 minutes or until slightly softened.
  • Add cranberry sauce and cider; stir until boiling.
  • Serve over the chicken.
