1 (8 ounce) package penne pasta
1 teaspoon olive oil
1 onion, chopped
3 cups chopped cooked chicken
1 (14 ounce) can Italian-style diced tomatoes
1 (10 ounce) package spinach
1 (8 ounce) package cream cheese, softened
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat olive oil in a skillet over medium-high heat. Saute onion in hot oil until tender, 5 to 7 minutes.
  • Mix penne pasta, onion, chicken, diced tomatoes, spinach, and cream cheese together in a baking dish until the cream cheese melts and coats everything. Sprinkle mozzarella cheese over the pasta mixture. Cover baking dish with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and continue baking until heated through and beginning to brown along the edges, about 15 minutes more.

8 oz uncooked rotini pasta (about 2 1/3 cups)
1 tablespoon olive oil
1 package (20 oz) boneless skinless chicken breasts, cut into bite-size pieces
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped onion
1 tablespoon finely chopped garlic (3 cloves)
3/4 cup mayonnaise
1 cup sour cream
1 cup milk
1/2 teaspoon crushed red pepper flakes
1 cup grated Parmesan cheese
1 can (14 oz) small artichoke hearts, drained and coarsely chopped
1 box (10 oz) Cascadian Farm™ frozen organic chopped spinach, thawed and squeezed to drain
1 cup roasted red bell peppers, drained and finely chopped (from 16-oz jar)
2 cups shredded Monterey Jack cheese (8 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. Cook and drain pasta as directed on package; set aside.
  • Meanwhile, in 10-inch nonstick skillet, heat oil over medium-high heat. Season chicken with salt and pepper; cook chicken in oil 5 to 7 minutes, stirring occasionally, until chicken is no longer pink. Remove from skillet; set aside. Reduce heat to medium; in same skillet, add onion and garlic. Cook 2 to 3 minutes or until tender.
  • In large bowl, beat mayonnaise, sour cream and milk with whisk. Stir in onion mixture, crushed red pepper flakes, Parmesan cheese, artichoke hearts, spinach, roasted red bell peppers and Monterey Jack cheese. Add pasta and chicken; stir until combined. Transfer mixture to baking dish.
  • Bake 40 to 45 minutes or until cheese is melted and casserole is heated through.
  • If making ahead to bake and serve at a later date: Line 13x9-inch (3-quart) baking dish with 2 layers of plastic wrap, leaving enough overhang to completely enclose assembled casserole. Spread mixture in large shallow pan; cool mixture completely, covered, 30 to 45 minutes in refrigerator. Spoon mixture into baking dish; cover with another layer of plastic wrap. Freeze unbaked casserole about 8 hours or until completely frozen. Transfer frozen casserole to labeled 2-gallon resealable freezer plastic bag. Remove air; seal and freeze up to three months. To bake: Spray 13x9-inch (3-quart) baking dish with cooking spray. Remove plastic wrap from casserole; place in baking dish. Cover tightly with foil; thaw completely in refrigerator, 24 to 48 hours. Heat oven to 350°F. Uncover; bake 50 to 60 minutes or until casserole is heated through (165°F in center).

6 oz fresh baby spinach
8 oz fresh sliced mushrooms
1/2 c chopped onion
1/4 c all purpose flour
32 oz chicken broth
16 oz penne pasta
3 c shredded rotisserie chicken
2 (8oz) pkgs fresh mozzarella pearls, drained
1 c roasted red pepper (comes in jar) drained & cut in 1/4 in strips
1 T Dijon mustard
1 1/2 t salt
1/2 t ground black pepper
1/2 c shredded Parmesan

Steps:

  • Preheat oven to 350. Spray 13x9 baking dish with cooking spray. In lg pan, melt butter over med heat. Add spinach; cook, stirring occasionally just until wilted. Remove from pan & set aside. Add mushrooms & onion to pan; cook stirring frequently, 5 min. Add flour (dissolved in sm amount of water) & cook stirring occasionally, 2 min. Stir in broth & cook stirring often, 15 min until mixture is thickened & bubbly. Remove from heat & stir in spinach, pasta & next 6 ingredients. Spoon mixture into baking dish & sprinkle with Parmesan. Bake for 30 min. until hot & bubbly. Recipe can be assembled & frozen up to 1 mo. Let thaw overnight in refrigerator & bake as directed.

1 tablespoon olive oil
8 ounces fresh mushrooms, sliced
1 cup onion, finely chopped

16 ounces cottage cheese
2 cups cooked chicken, shredded
1 cup cheddar cheese, grated
1/2 cup parmesan cheese, grated

Steps:

  • Cook pasta according to package directions. Drain.
  • Preheat oven to 425 degrees.
  • Heat olive oil in large skillet over medium high heat.
  • Cook mushrooms, onion and bell pepper until tender.
  • Add spinach, oregano, and pepper.
  • Mix well.
  • Remove from heat.
  • In a large bowl combine pasta, chicken, spinach mushroom mixture, soup, milk, 3/4 cup cheddar cheese, 1/4 cup parmesan cheese and mix well. Salt and pepper to taste.

1 lb spinach, thawed frozen chopped
15 ounces light ricotta cheese
3 tablespoons parmesan cheese, grated
2 egg whites
1/4 teaspoon garlic powder
1 pinch ground nutmeg
1 1/2 cups marinara sauce, reduced-sodium

Steps:

  • Preheat the oven to 400 degrees F.
  • Coat a 8-by-8 baking dish with olive oil spray.
  • Cook chicken in a skillet until just starting to brown.
  • Place the spinach in the middle of a clean dishtowel. Fold up the towel over the spinach and wring out as much moisture as possible.
  • Place the spinach in a large mixing bowl.
  • Add the ricotta, Parmesan, egg whites, garlic powder and nutmeg. Stir well.
  • Move spinach mixture to the prepared dish over top of the chicken. With the back of a spoon, spread it out to uniformly fill the dish.
  • Bake for 20 minutes, or until is hot throughout and the top begins to brown.

1 cup finely chopped onion

This recipe combines the elements of a spinach salad with chicken for a savory baked dish. I created it from ingredients that I needed to use before they went bad, and was very pleased with the results!

3 skinless, boneless chicken breasts
½ cup honey mustard dressing
¼ cup white wine
½ teaspoon freshly ground black pepper
3 slices bacon
3 tablespoons olive oil
1 tablespoon butter
2 small shallots, chopped
3 cloves garlic, sliced
3 cups fresh baby spinach leaves
salt and ground black pepper to taste
¾ cup shredded smoked provolone cheese

Steps:

  • Combine chicken, honey mustard dressing, white wine, and black pepper in a gallon-sized resealable plastic bag; seal and shake to mix. Let marinate in the refrigerator, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  • Place bacon slices in a large skillet and cook over medium-high heat, turning occasionally, until crispy, about 10 minutes. Drain on paper towels.

1 cup sour cream
1/2 cup of 2% milk
3 cups mozzarella cheese, divided

3/4 cups of Parmesan cheese freshly grated
4 ounces of cream cheese, room temp
10 ounces of spinach thawed, drained and chopped
1/2 teaspoon salt
1 teaspoon pepper
Parsley, for garnish

Steps:

  • Preheat oven to 425°F. Boil water and cook pasta for approximately 8 minutes, drain then place it in a large mixing bowl. To the drained pasta add chopped chicken, artichoke hearts, 1 tablespoon of olive oil, sour cream, cream cheese, 1 1/2 cups of mozzarella cheese, milk, spinach, parmesan cheese, and lemon juice. Mix all the ingredients together and set aside. In a medium sized frying pan cook the onion and garlic over medium heat with 2 tablespoons of olive oil. Lightly saute for about five minutes then add that to the pasta mix, add salt & pepper to the pasta mix and blend well. Place all your ingredients in a 13 x 9 inch pan, top the ingredients with 1 1/2 cups of mozzarella and then sprinkle with parsley. Place the pan in the oven and bake for approximately 15 minutes at 425°F.

3 large eggs
1/2 teaspoon onion salt

2 cups whole milk

  • Drain and squeeze out excess moisture from spinach. Beat eggs, onion salt and nutmeg. Add spinach and 1/4 cup Parmesan cheese; mix well. Combine bread crumbs and remaining Parmesan. I got this recipe years ago from a friend of the family and replaced ground beef with ground chicken. It's a good way to get kids to eat spinach. It is very comforting. Tastes great with some garlic bread and salad :) The photo shows it with beef..which is delicious.

1 lb ground chicken (or turkey or beef)
1 cloved minced garlic
2 Tbsp olive oil
10 oz frozen spinach
1 medium chopped onion
1 lb can spaghetti sauce w/ mushrooms
8 oz can tomato sauce
6 oz can tomato paste
7 oz pkg of elbow macaroni; cooked
2 c shredded italian cheese blend (or mozzarella or cheddar)
1/2 c bread crumbs, dry
2 beaten eggs
salt and pepper

Steps:

  • 1. Preheat oven to 350. Brown the chicken, garlic and onions; drain. Cook the spinach according to microwave directions; squeeze dry-BUT SAVE THE JUICE.
  • 2. Cook the macaroni while chicken and spinach is cooking; drain.
  • 3. Add the spinach liquid to the chicken mixture; along with the sauces.
  • 4. Combine the elbow noodles with the cheese, eggs, drained spinach, oil and bread crumbs. Put the noodle mix into a 13 x 9 inch baking pan. Top with the chicken mixture.
  • 5. Bake for 30 mins. Let stand 10 min. before serving.

  • Preheat the oven to 450°. In a large skillet, heat the olive oil over medium-high heat. Season the chicken with salt and pepper, add to the pan and cook, turning once, until cooked through, about 5 minutes. Let cool, then shred the meat. Whisk together the salsa verde and ricotta; season with salt and pepper. In a greased 9-inch square baking dish, layer one-third of the salsa mixture, tortillas, chicken, onion, spinach and pepper jack; repeat twice. Bake until golden-brown, 15 to 20 minutes. Let stand for 10 minutes before serving.

This fettucine dish is baked with garlic bread on top. For quicker preparation, use a packet of garlic bread. But if you've a little more time, then you'll probably want to make your own, which gives you so much more choice of what bread you use, how much garlic you add to it and if you want to add other herbs as well. The recipe also has instructions for heating and re-serving. I've included the instructions for a single 10-cup capacity dish, but if you are wanting to freeze smaller quantities in several smaller dishes, remember to adjust the cooking times appropriately. I've adapted this recipe substantially from one I found in a recent issue of the Australian magazine 'New Idea'. I've also recently posted recipes for a Greek Lamb & Yoghurt Pasta Bake and a Lentil & Sausage Lasagne (also a baked dish), both adapted from the same source, and with the same detailed instructions for freezing the recipe.

250 g fettuccine pasta
2 (250 g) frozen spinach
1 onion, finely chopped
4 garlic cloves, crushed (vary according to taste preferences)
50 g butter, chopped
500 g chicken strips, stir-fry strips
1 tablespoon Dijon mustard
1 1/2 tablespoons coarse grain mustard
2 (300 ml) containers light cream
1/2 cup grated parmesan cheese
salt, to taste
fresh ground black pepper, to taste
200 g garlic bread

Steps:

  • Cook pasta in a pan of boiling, salted water until al dente, and drain.
  • Mix the mustards and cream in a small bowl until they are well-combined.
  • Thaw and drain spinach, squeeze out moisture and chop coarsely.
  • Sauté the onion and garlic in butter over a medium heat until it has just softened but not browned; add chicken; cook, stirring occasionally for about 5 minutes or until it has changed colour and is clearly cooked through.
  • Add the mustards and cream mixture and increase the heat so that the mixture just comes to the boil; reduce the heat slightly and stir in the cheese and spinach, mixing until everything is well-combined.
  • Season with salt and freshly ground black pepper, to taste.
  • Stir in the pasta, and make sure that everything is well-combined.
  • Spoon the mixture into a large ovenproof - and if you are planning to freeze the dish also freezer-proof - 10-cup capacity dish.
  • Arrange garlic bread slices over the top and cook uncovered in a moderately hot oven (190°C) for about 30 minutes, or until the bread is golden brown.
  • Stand for 5 minutes and serve.
  • TO FREEZE: Make the recipe to the end of step 8; cool for 15 minutes; cover tightly with plastic wrap; label and date; freeze for up to 2 months.
  • TO SERVE: Thaw pasta in its dish in the refrigerator; remove plastic wrap; cover tightly with foil; place on an oven tray; cook in a hot oven (200°C) for about 11/2 hours, or until hot; remove foil; arrange garlic bread slices over the top of the pasta and cook uncovered for a further 15 minutes or until the bread is golden brown; stand for 5 minutes and serve.

1 can (10 oz.) enchilada sauce
1 cup KNUDSEN Sour Cream
1 Tbsp. chopped canned chipotle peppers in adobo sauce
1 tsp. olive oil
1 pkg. (6 oz.) baby spinach leaves
2 cups shredded cooked chicken
1-1/2 cups KRAFT Finely Shredded Cheddar Cheese
8 corn tortillas (6 inch)
2 green onions, sliced

Steps:

  • Heat oven to 350°F.
  • Combine enchilada sauce, sour cream and peppers. Heat oil in medium nonstick skillet on medium heat. Add spinach; cook 2 to 3 min. or just until wilted, stirring frequently. Remove from heat. Add chicken and 1/2 cup enchilada sauce mixture; mix lightly.
  • Spread half the remaining enchilada sauce mixture onto bottom of 8-inch square baking dish sprayed with cooking spray; cover with 4 tortillas, cutting into pieces and overlapping edges as necessary to form even layer. Top with half each of the chicken mixture and cheese; repeat all layers. Cover.
  • Bake 20 min. or until heated through, uncovering after 15 min. Sprinkle with onions.

for the crepes - 3 egg, 3 cups plain flour, 3 and 3/4 cups of milk, pinch of salt, butter
1 -2 chicken breast fillet
2 cups tomato puree
300 ml cooking cream
3 -4 tablespoons tomato paste
750 g fresh ricotta
120 g Baby Spinach
2 teaspoons vegetable Vegeta (or to taste)
1 cup grated cheddar cheese or 1 cup mozzarella cheese

Steps:

  • First make the crepes if you have not bought them from the store.
  • Mix the flour, eggs, milk and salt into a large bowl and mix until well combined and mixture is smooth.
  • Allow the mixture to rest for 30 minutes before cooking.
  • Using a large pan, add a small amount of butter and when melted ladle the crepe mixture into the pan, spreading the mixture thinly. Flip over once before placing onto a plate.
  • To make the filling, chop the chicken into small pieces and fry in a pan until cooked.
  • Add the tomato puree, cream and tomato paste to the chicken. Continue to simmer for a few minutes.
  • Add the Vegeta or other stock seasonings until you have a desired flavour.
  • Scoop out the chicken, leaving majority of the saucy mixture in the pan, and combine the chicken with the ricotta.
  • Add the chopped baby spinach to the ricotta/chicken mixture.
  • spread a thin layer of the ricotta mixture onto a crepe and roll. Continue until all of the mixture or crepes have run out. Place each crepe next to each other in a baking dish. Some can be layered on top of each other.
  • Once all of the crepes are in the baking dish, pour the remaining creamy tomato sauce from the pan, over the top of the crepes. Make sure to spread the sauce evenly and try to get some between the top crepes.
  • Sprinkle shredded cheese over the top and place into the oven at 180 degrees to bake. Once the cheese begins to crisp, remove from the oven and allow it to set for a few minutes before serving.

8 oz uncook rigatoni
1 T EVOO
1 C chopped onion
10 oz pkg frozen spinach; thawed
3 C cubed chicken breasts, cooked
1 14 oz can Italian-style diced tomatoes; reserve juice
1 2 or 4 oz container Philadelphia cream cheese (with chives/onion if available)
1/2 t each: salt, pepper
1 1/2 C shredded mozzarella cheese

Steps:

  • Pre-heat oven to 375 degrees. Heat water for pasta and cook according to package directions. Chop onion, add EVOO to large pan. Add onion when heated and cook about 5 minutes. Drain spinach between 2 paper towels until dry. Add tomatoes with juice to onion mix in pan. Add cubes of chicken and salt and pepper and cook 2-3 minutes. Then add spinach and stir. Stir in cream cheese. Turn off heat. Spray baking dish (11 x 7) with cooking spray. Mix drained pasta with tomato mixture and pour into baking dish. Top with shredded cheese. Bake for 20 minutes covered. Uncover and bake another 15 minutes.

Ingredients:
Yields 6 - 8 servings.
10 ounces dry pasta (I used a combination of rotini, farfalle and penne. Any similar size would work.)
2 tablespoons butter
1/2 onion, chopped
2 cloves garlic, minced
4 ounces chive and onion cream cheese
1 cup sour cream (or plain Greek yogurt)
1 cup whole milk, heavy cream or half-and-half (I used half-and-half)
1/2 cup shredded or grated Parmesan cheese
2 cups shredded mozzarella cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
Pinch crushed red pepper flakes (optional)
1 - 1 1/2 cups chopped fresh spinach
2 cups cooked chicken (cubed or shredded)
1/2 cup fresh tomatoes, cut into large chunks (I used grape tomatoes sliced in half)
Fresh basil or parsley, for garnish

Steps:

  • Preheat oven to 400 degrees. Coat a medium casserole dish with non-stick spray. (Mine was a 10" round, but a 9 x 13 would work fine.) Cook pasta in salted, boiling water to al dente. Drain and set aside. While pasta is cooking, heat butter in a medium saute pan set to medium heat. Add in the onion and garlic. Cook for 3 - 4 minutes to slightly soften veggies. Do not brown. Add in cream cheese and stir to melt. Reduce heat to low. Stir in sour cream, milk, Parmesan cheese, 1 cup of the mozzarella cheese, salt, black pepper and red pepper flakes (if using). Stir until everything is well-combined and melted. Turn off heat. Combine the pasta, chicken, spinach and tomatoes in a large bowl. Add in the sauce and gently stir to coat. Pour into the prepared baking dish. (I drizzled in a little more half-and-half over the mixture once it was in the baking dish because it looked a little dry to me.) Top with the remaining mozzarella. Bake uncovered for about 20 -25 minutes ... or until casserole is bubbly and beginning to brown. Top with basil or parsley for garnish.

1 cup chopped onion (1 large)

16 sheets frozen phyllo dough, thawed (14x9-inch )

Steps:

  • Preheat oven to 375 degrees. Coat a 3 quart rectangular baking dish with cooking spray.
  • In an extra-large skillet, heat butter over high heat until melted. Add ground chicken and onion; cook about 8 minutes or until chicken is browned and onion is tender, breaking up chicken as it cooks. Drain off fat. Stir in spinach, 1 teaspoons freshly ground black pepper, 1/2 teaspoons salt, the nutmeg and crushed red pepper; cook and stir for 5 minutes. Transfer mixture to a bowl. Stir in eggs, cheese, and oregano.
  • Unfold phyllo dough. Cut a 1" strip off one of the short ends of the phyllo stack; discard. Place a phyllo sheet in the bottom of the prepared baking dish; lightly coat with cooking spray. As you work, cover the remaining phyllo with plastic wrap to prevent it from drying out. Top with seven more phyllo sheets, coating each sheet with cooking spray. Spread chicken mixture over phyllo in dish. Top with the remaining phyllo, coating each sheet with cooking spray.
  • Bake, uncovered, about 45 minutes or until mixture is heated through and phyllo is golden.
