GINGER CHICKEN AND SHRIMP STIR FRY

I don't remember where this one came from, then again I've changed it around so much it's nothing like whatever it was I started out with. I'm pretty happy with it, as it is now. Times and servings are a guess.

6 tablespoons soya sauce
1/3 cup chicken stock
1/2 teaspoon rice vinegar
2 tablespoons rice wine (dry sherry will do, NOT COOKING SHERRY)
2 tablespoons cornstarch
1 teaspoon sesame oil
1 teaspoon clover honey (any light flavored honey will do)
2 tablespoons peanut oil
count shrimp, peeled, veined
1 tablespoon peanut oil
1/2 lb boneless skinless chicken thighs, cut bite size
4 garlic cloves, minced
2 tablespoons ginger, grated
2 tablespoons peanut oil
1/2 cup celery, sliced 1/4 inch thick
2 cups onions, coarsely chopped
1 cup baby carrots, quartered length wise
1/2 red bell pepper, julienned

Steps:

  • Combine the sauce ingredients. Set aside.
  • Heat the wok over high heat. Add 2 TBS oil and swirl to coat.
  • Add shrimp and stir fry 2 minutes.
  • Remove and set aside.
  • Add 1 TBS oil, swirl.
  • Add chicken, stir fry 3 minutes.
  • Add garlic and ginger; stir fry 1/2 minute more.
  • Empty and scrape the good stuff from the wok. Set aside.
  • Reheat wok and add 2 Tbs oil. Swirl to coat.
  • Add celery, onion, carrots, and bell pepper. Stir fry 2 minutes.
  • Add 1 TBS water; cover, steam 1 minute.
  • Push vegetables up the sides of the wok.
  • Stir the sauce well to mix all of the cornstarch.
  • Add to the center of the wok.
  • Stir until thick and bubbly.
  • Add the shrimp and chicken. Combine with the vegetables.
  • Heat through.
  • Serve.

1 lb spaghetti
3 tablespoons olive oil
3/4 lb chicken breast, cut into strips
1 lb frozen cocktail shrimp, thawed and de-tailed
1 bunch scallion, chopped into 2-inch pieces
4 -5 ounces mushrooms, sliced (original recipe calls for Shiitake)
1/2 red bell pepper, seeded and cut into pieces
6 garlic cloves, pressed
2 inches fresh ginger, peeled and grated
1 teaspoon coarse black pepper
1/3 cup soy sauce (original recipe calls for tamari (dark soy sauce)
2 tablespoons sesame oil
2 tablespoons toasted sesame seeds

Steps:

  • Cook spaghetti until al dente. Drain in colander.
  • While noodles cook, heat olive oil over high heat until rippling in a large nonstick skillet.
  • Add chicken and stir fry till golden. Add scallions, mushrooms, red pepper, garlic and ginger and stir-fry 2 minutes. Add shrimp after 1 minute. Season with salt and pepper and keep warm.
  • While spaghetti drains, add sesame oil and soy sauce to pasta pot. Add spaghetti and toss to coat.
  • Either add stir-fry to noodles and toss to mix or serve stir-fry on top of noodles.
  • Top with toasted sesame seeds.

This is one of my all time favorites, in any of it's incarnations. It's from the little booklet that came with my first wok. I found it in a box of stuff I hadn't been into in years. It got me started on a stir fry binge. It's been fun to relive some of the fun I've had learning to stir fry. Like most stir fries this one's quick, easy, and delicious. Yield, prep, and cooking times are a guess.

3/4 cup water
1/4 cup white vinegar
1/4 cup fresh orange juice
3 tablespoons clover honey (any lightly flavored honey will do)
2 tablespoons lemon juice
3 tablespoons ketchup
1 1/2 tablespoons cornstarch
2 tablespoons peanut oil
4 garlic cloves, minced
4 green onions, cut into 1 inch pieces, all the white, some green
1 lb boneless skinless chicken thighs, cut into 3/4 inch cubes or count shrimp, peeled, deveined
2 tablespoons peanut oil
1/2 green bell pepper, cut in half across, julienne
1/2 red bell pepper, cut in half across, julienne
1 cup baby carrots, cut in quarters lengthwise
1 yellow onion, very coarsely chopped
1 vine ripened tomatoes, skinned, drained, cut into eighths (OMIT TOMATO WITH THE SHRIMP)
2 (8 ounce) cans pineapple chunks, drained (make the cook a nice rum drink with the juice)
1/4 cup chicken stock (pork recipe only)

Steps:

  • Combine the sauce ingredients, set aside.
  • Heat the wok over high heat.
  • Add oil swirl to coat.
  • Add garlic and green onions, Stir fry 1/2 minute.
  • Add pork or chicken, stir fry 3 minutes or 'til is opaque.
  • If doing shrimp, stir fry 2 minutes, 'til pink.
  • Remove and set aside.
  • Keep warm.
  • Quickly wipe the wok, Reheat.
  • Add oil, swirl to coat.
  • Add peppers and carrots, stir fry 2 minutes.
  • Add onion and tomato, (omit tomato with shrimp) stir fry 1 minute.
  • Push the vegetables up the sides of the wok.
  • Stir the sauce, pour into the center of the wok.
  • Stir 'til bubbly.
  • Return the meat to the wok.
  • Add pineapple, combine with vegetables.
  • For shrimp or chicken, heat and serve.
  • For pork, add chicken stock, cover, cook over medium heat for 4-5 minutes 'til pork is opaque throughout.
  • Serve with jasmine or basmati rice.

2 lbs boneless chicken breasts, cut into chunks
1 lb medium or large shrimp, shelled & deveined
2 yellow bell peppers, seeded & cut into strips
2 broccoli crowns, cut into florets
2 cups chicken broth (or 14 oz can)
2 tbsp brown sugar
1 tbsp cider vinegar
3 tbsp soy sauce
2 tbsp sesame oil
3, 4 garlic cloves, finely minced (or garlic powder)
1/4 cup cornstarch + 1/4 cup water
sesame seeds (garnish)
1 tbsp ginger (optional)

Steps:

  • Cut chicken breasts into about 1-inch chunks or flat pieces. Heat olive oil in a large non-stick skillet or wok if available. Saute chicken pieces for about 5 minutes or until slightly browned. Then add the shrimp, cooking another few minutes until cooked through. Add broccoli and bell pepper, saute a few minutes enough to retain crispness. In a saucepan, mix together chicken broth, cider vinegar, soy sauce, sesame oil, and minced garlic. Bring to a boil over high heat, stirring constantly, a few minutes and then reduce to low. Add cornstarch/water mixture, simmer and stir vigorously to avoid clumping. Pour sauce into the skillet and mix ingredients together until thoroughly coated. Cook for another few minutes until ready to plate. Garnish with sesame seeds and serve with rice . *Just a reminder to continually taste-test your sauces (especially when making them separately) throughout the cooking process. Even the most exact measurements of ingredients usually do not produce the same results. What's spicy, salty, bland, sweet, and sour to me will most likely be different than your taste profile. This helpful tidbit works well with all recipes and it's something I remind myself while cooking.

We love fresh vegetables and once in awhile we need some thing really fast but good for you. I'll use up roasted chicken and throw in some frozen shrimp. mmmm good!

4 or 5 spring onions, sliced 1/4 inch thick
1 c sliced, red, green, yellow and orange peppers
1/2 c celery, cut into match sticks
1/2 c carrots, cut into match sticks
1 large clove of garlic, minced
1 c mushrooms, fresh sliced
1 1/2 c broccoli, cut into small pieces
1/4 c frozen baby peas
4 to 6 Tbsp vegetable oil, divided
chinese five spice powder
1 1/2 Tbsp corn starch
1 c vegetable broth or chicken broth
1 tsp chicken soup base
1 tsp teriyaki sauce
1 pkg 9 oz. size of chicken & prosciutto tortelloni
1 c diced baked chicken or raw & sliced
1/2 c fresh or frozen shrimp, cleaned
hot water
1/2 tsp lemon grass, comes in tubes

Steps:

  • 1. Prepare all the vegetable and meat.
  • 2. Mix the sauce: corn starch, vegetable or chicken broth, soup base, teriyaki sauce & lemon grass, dash of Five spice. Taste. If to strong, add some hot water a tblsp. at a time. Set aside.
  • 3. Use a large stir fry pan or a large fry pan. Turn on heat and add oil, when hot add the celery, carrots and peppers. Stir fry to two minutes and then add onions and garlic. Stir fry till they start to darken in color but still crisp. Remove to a bowl.
  • 4. Now add a little more oil, add the mushrooms and stir till both sides have softened. Add broccoli and peas, stir broccoli until its crisp tender. Now add the chicken & shrimp. Stir until shrimp and chicken are done.
  • 5. Add back rest of vegetables and sprinkle a little five spice and stir. Now stir the sauce base to mix and add to the vegetables and meat. If it gets to thick add some hot water. Stir thoroughly and pour into a bowl or large platter. May serve with rice.

1/3 Cup Water
1/3 Cup Honey
3 TBS Apple Cider Vinegar
2 TBS + 1 tsp Corn Starch
6 TBS Olive Oil (divided 3 and 3)
3 Cloves Garlic
1 Medium Onion Chopped Large
1 Bag Frozen Stir Fry Vegetables (or 2 cups broccoli florets, 1 cup baby carrot "toothpick" and one cup sliced fresh mushrooms)
1/2 LB Shrimp peeled and veined
1/2 LB Steak cut in 3/4" strips
1/2 LB Chicken cut in 3/4" strips
1/2 tsp Black pepper
a few red pepper flakes if you like 'em

Steps:

  • 1- Whisk soy sauce, water, honey, cider vinegar and cornstarch in a bowl and set aside. 2- Heat 3 TBS olive oil in wok or large non-stick skillet, stir in garlic and cook for 10 seconds 3- Add onions and stir until they JUST start to turn translucent 4- Add veggies and black pepper and stir until broccoli and carrots start to become tender 5- Remove veggies and set aside 6- Add chicken to skillet and stir fry until it is almost done 7- Add steak to skillet and stir fry until medium rare 8- Add shrimp to skillet and stir fry until pink 9- Add back veggies and sauce 10- Simmer until thickened (a couple minutes) Serve over rice of choice
