This is one of our family's favorite recipes. It can be used with chicken or pork. The marinade is a must--the longer the better! We prefer it with red, orange, or yellow bell peppers, but the original recipe calls for green bell peppers. The sauce is especially tasty too! It's similar to a sweet and sour sauce.

Number Of Ingredients 14

4 chicken breasts, cut into cubes
2 bell peppers, cut into big pieces
1 large onion, cut into big peices
mushroom
1/2 cup canola oil
1/3 cup light soy sauce
1 teaspoon dry mustard
1/4 teaspoon minced garlic cloves or 1/4 teaspoon garlic powder
1/4 cup pineapple juice
1/2 cup pineapple juice
1/2 cup sugar
1/4 cup vinegar
1 teaspoon light soy sauce
2 teaspoons cornstarch

Steps:

  • Mix together all the ingredients for the marinade.
  • Marinate the meat for at least 2 hours in the refrigerator.
  • Put the cubes of meat on the skewers, alternating with the peppers, onions, and mushrooms.
  • Grill on the BBQ or in the oven at 350F for about 20 minutes.
  • Mix all the ingredients for the sauce and bring to a boil for a few minutes until it starts to thicken a little.
  • Serve with rice.

2 lbs of skinless boneless chicken breast, cut into cubes/Kabab chunks
1 cup of freshly squeezed lemon juice
a small slice of lemon with the peel (optional, don't put too much)
15 cloves of garlic, crushed
6 table spoons of plain yogurt (Greek yogurt)
6 table spoons of olive oil
2 table spoons of red vinegar (apple cider vinegar)
1.5 to 2 teaspoons of ground white pepper
⅓ teaspoon of ground ginger spice
½ teaspoon of ground thyme, or ground oregano
⅓ teaspoon of paprika
1+ teaspoon of salt (or to taste)
½ to 1 teaspoon of tomato paste
Lebanese Garlic Paste

Steps:

  • Mix all ingredients well together while rubbing the chicken Place in a container, cover, and let rest/marinate in the fridge for at least 4 hours Skewer the chicken right before grilling Grill on medium heat for 12-18 minutes maximum As soon as you remove them from the grill, place them in a big warm pot, replace the lid tightly, and let rest for 8-10 minutes - this helps the chicken become more moist (this step is optional) Spread 1 teaspoon of our garlic paste along the diameter of a pita bread, add some salted cucumber pickles, french fries, grilled tomatoes or peppers (optional), the grilled chicken shish tawook, roll as in a burrito and enjoy. You could also toast the sandwich roll through a panini grill for 2-3 minutes.

4 cup Secolari Arbequina Olive Oil
1 cup lemon
4 cup Secolari Pacific Spice Vinegar
1 teaspoon Secolari Mediterranean Herb Seasoning
1 teaspoon black pepper
1 teaspoon Secolari Roasted Garlic Sea Salt
2 pound boneless skinless chicken breast cut into 1 1/2-inch pieces
2 wedges bell pepper cut into 1 1/2-inch pieces
1 slice red onion cut into 1 1/2-inch pieces
1 pint grape or cherry tomatoes whole
1 pint baby portabella mushrooms or white button mushrooms, whole
4 tablespoons Secolari White Balsamic optional

Steps:

  • Whisk the olive oil, lemon juice, vinegar, herb seasoning, salt, and pepper together in a large bowl. Add the chicken and toss to evenly coat. Cover the bowl with plastic wrap; marinate in the refrigerator for at least 2 hours.
  • Soak wooden skewers in water for about 30 minutes before use. Preheat an outdoor grill for medium-high heat; lightly oil the grate. If using a stove top grill, you do not need to soak the skewers.
  • Remove the chicken from the marinade and shake off excess liquid. Discard the remaining marinade. Alternately thread pieces of the marinated chicken with pieces of bell pepper, onion, cherry tomatoes, and mushrooms onto the skewers.
  • Cook the skewers on the preheated grill, turning occasionally until nicely browned on all sides, and the chicken is no longer pink in the center, about 10 minutes. Transfer to a plate and drizzle some white balsamic vinegar on top if desired
