Number Of Ingredients 9

4 tablespoons olive oil
1 large onion, chopped
4 large garlic cloves, chopped
1 28-ounce can diced peeled tomatoes
3 3 x 1/2-inch strips orange peel (orange part only)
2 1/2 teaspoons dried oregano
2 bay leaves
1/2 teaspoon paprika
4 skinless boneless chicken breast halves

Steps:

  • Heat 2 tablespoons oil in heavy large saucepan over medium heat. Add onion and garlic and saut$amp;eacute; until tender, about 10 minutes. Add tomatoes with their juices, orange peel, oregano, bay leaves and paprika and cook until sauce thickens, stirring occasionally, about 30 minutes. Discard bay leaves.
  • Heat remaining 2 tablespoons oil in heavy large skillet over medium-high heat. Season chicken with salt and pepper. Add chicken to skillet and sauté until cooked through, about 5 minutes per side. Transfer to plate. Rewarm sauce and spoon over chicken.

This is my family's all time favorite. We serve it with buttered pasta penne noodles- add a sprinkle of garlic powder and parmesan cheese to the noodles to make them taste even better! It is an easy to cook dish you could serve at a dinner party!

8 boneless skinless chicken breasts
1/4 cup butter
1/4 cup olive oil
1 onion, chopped
4 green onions, chopped
1 clove garlic, minced
1 (15 ounce) can tomatoes
1 bay leaf
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon chili powder
1 (4 ounce) can diced green chilies, drained
1/2 cup chopped ripe olives
1/4 cup red wine
salt and pepper

Steps:

  • Season chicken generously with salt and pepper.
  • In a large frying pan saute the chicken in the butter until golden brown on both sides.
  • Put on a plate and keep warm.
  • Add the olive oil to the same pan and saute the onions and garlic until soft.
  • Add the remaining ingredients and stir together.
  • Return the chicken to the pan.
  • Cover and simmer for 1 to 1 1/2 hours.

1 10oz package pearl onions
3 TBSPs olive oil, divided
8 chicken drumsticks
8 boneless chicken thighs with skin
3 6oz packages crimini (baby bella) mushrooms, quartered
4 whole star anise
2 bay leaves
10 garlic cloves, peeled, thinly sliced
2 cups dry white wine
6 plum tomatoes, quartered lengthwise
4 1/4 cups low-salt chicken broth
2 TBSPs (1/4 stick) butter, room temperature
2 TBSPs all purpose flour
1 cup pitted Kalamata olives

Steps:

  • Preheat oven to 350 degrees. Blanch onions in pot of boiling water 2 minutes. Using slotted spoon, transfer onions to bowl of ice water; cool 5 minutes. Drain onions; peel. Heat 2 TBSPs oil in large wide ovenproof pot over high heat. Sprinkle chicken with salt and pepper. Working in batches, cook chicken until browned, about 12 minutes per batch. Transfer chicken to plate. Drain all but 3 TBSPs drippings from pot. Add remaining 1 TBSP oil. Add mushrooms and onions; saute 7 minutes. Add star anise, bay leaves, and garlic; saute 3 minutes. Add wine and tomatoes and boil until liquid is reduced by half, about 8 minutes. Stir in chicken broth. Return chicken to pot, pressing to submerge. Cover, place in oven, and cook until chicken is very tender, about 1 hour. Transfer chicken to plate; tent with foil to keep warm. Boil sauce until reduced to 7 cups, about 20 minutes. Mix butter and flour in small bowl. Gradually whisk butter mixture into sauce. Simmer until thickened, about 5 minutes. Add olives to sauce. Season with salt and pepper. Return chicken to pot; simmer until heated through, about 5 minutes.

a 3-pound chicken
1 small onion
1 garlic clove
2 plum tomatoes
1/4 cup Kalamata olives
1/2 cup packed fresh basil leaves
1/2 cup dry white wine
3/4 cup veal stock

Steps:

  • Preheat oven to 450°F. Season chicken with salt and pepper. In an 8- to 10-inch ovenproof skillet roast chicken in middle of oven 20 minutes.
  • Reduce temperature to 350°F.
  • Roast chicken 40 minutes more, or until a thermometer inserted in fleshy part of an inner thigh registers 170°F. and juices run clear. Transfer chicken to a cutting board and keep warm, loosely covered.
  • While chicken is roasting, finely chop onion and garlic separately. Seed tomatoes and cut into 1/4-inch dice. Pit olives and finely slice. Chop enough basil to measure 2 tablespoons and cut remaining leaves into thin strips.
  • Pour off all but 2 teaspoons fat from skillet and sauté onion over moderately high heat, stirring, 30 seconds. Add garlic and sauté, stirring, 30 seconds. Add wine and deglaze skillet, scraping up brown bits. Simmer mixture until reduced by about half. Add stock and return mixture to a simmer. Add tomato and olives and simmer until sauce is slightly thickened, about 3 minutes. Stir in basil strips and remove pan from heat. Cut chicken into 4 serving pieces.
  • Pour sauce over chicken and sprinkle with chopped basil.

PROVENçALE GARLIC CHICKEN AND POTATOES

1 pound small red potatoes, cut into fourths
1 bag (16 ounces) baby-cut carrots
15 cloves garlic (about 1 bulb), peeled and cut in half
2 1/2 pounds bone-in chicken pieces (breast halves, legs, thighs), skin removed
1 cup chicken broth
1/2 cup dry sherry or chicken broth
1 teaspoon dried basil leaves
1/2 teaspoon dried rosemary leaves, crumbled
1/2 teaspoon salt
1 jar (6 ounces) marinated artichoke hearts
2 teaspoons cornstarch
1 tablespoon water

Steps:

  • Place potatoes, carrots and garlic in 4- to 5-quart Crock-Pot slow cooker. Place chicken on top of vegetables.
  • Mix broth, sherry, basil, rosemary and salt; pour over chicken and vegetables. Cover and cook on low heat setting about 6 hours or until vegetables are tender and juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Remove chicken from slow cooker, using slotted spoon; keep warm. Drain artichoke hearts; stir 2 teaspoons artichoke marinade into mixture in slow cooker (discard remaining marinade). Cut artichokes in half; add to slow cooker.
  • Mix cornstarch and water until smooth. Gradually stir cornstarch mixture into artichoke mixture. Cover and cook on high heat setting about 15 minutes or until slightly thickened.
  • Serve chicken with vegetables, spooning some of the cooking juices over each serving.

From Australian magazine Super Food Ideas. I have made the olives optional as I omit them and due to allergy issues I cut the onion into wedges so the person can remove. Suggeested you serve with steamed potatoes and broccolini, we quite like it over pasta with some steamed vegetables.

4 chicken breast fillets
1/3 cup plain flour
50 g butter (chopped)
1 medium brown onion (finely chopped)
1/2 cup dry sherry
400 g diced tomatoes
1/4 cup kalamata olive (optional)
2 tablespoons fresh parsley leaves (fresh flat-leaf chopped)

Steps:

  • Preheat oven to 180C (160C fan forced).
  • Place flour in a shallow bowl (snap/zip lock bag), season with salt and pepper and coat the chicken breasts (if using bag do 2 at a time) and shake of excess and place on a plate.
  • Melt butter in a frying pan over medium high heat and add the chicken breasts and cook for 2 to 3 minutes each side or until golden.
  • Transfer to a 5cm deep x 20cm x 30cm (base measurements) oven proof baking dish.
  • Reduce heat to medium low and add onion to pan and cook stirring occasionally for 5 minutes or until softened.
  • Increase heat to medium high and add sherry and bring to the boil and boil for 1 minute.
  • Add tomatoes and cook stirring occasionally for about 5 to 6 minutes or until boiling.
  • Spoon tomato mixture over the chicken and cover.
  • Bake for 30 minutes or until chicken is cooked through.
  • Add olives if using in the last 5 minutes.
  • Sprinkle with parsley and serve.

CHICKEN PROVENCALE WITH BELL PEPPERS AND OLIVES

4 skinless boneless chicken breast halves, about 5 ounces each
4 teaspoons dried mixed herbs de Provence
4 tablespoons fruity olive oil
6 cups mixed-color bell pepper strips
6 large garlic cloves, finely chopped
1 cup red or white wine
2/3 cup pitted and halved meaty black olives such as Gaeta

Steps:

  • Use the heel of your hand to flatten chicken into more or less even 1/2-inch thickness. Sprinkle both sides with herbes de Provence and season with salt and pepper. In a large skillet, heat 1 tablespoon oil. Add chicken and saute over medium to medium high heat until well-browned on both sides and almost cooked through, about 5 minutes. Remove to plate, leaving drippings in pan.
  • Add remaining oil to pan. Add peppers and cook, stirring until they begin to soften and brown, about 3 minutes. Add garlic and cook, stirring, for 1 minute. Add wine, bring to a boil, and cook, stirring up any brown bits, for 30 seconds. Return chicken and any accumulated juices to pan, reduce heat to medium-low, and simmer, partially covered, until chicken is cooked through, about 3 minutes. Add olives and heat through, about 1 minute.

1 (3 1/2 lb.) chicken
2 tbsp. olive oil
2/3 c. flour
2 tbsp salt
1 c. dry white wine or red wine
1 red pepper chopped
1/2 onion chopped
2 cloves garlic, peeled
3 tbsp tomato paste
White pepper
1 tsp. sugar
4 lg. or 6 sm. tomatoes, peeled, seeded, juiced & chopped
3 tablespoons Herbs de Provence
1 tablespoon dried oregano
1 teaspoon ground thyme
1/2 teaspoon dried rosemary
1-2 tsp anchovy paste
16 pitted kalamata olives
8 pitted green olives
zest of 1 lemon
2 tablespoons chopped parsley

Steps:

  • Cut the chicken into 8 pieces and dry the pieces. Mix flour and salt in a bag. Dry chicken pieces and coat in flour mixture. Heat the oil in a large heavy saucepan and brown the chicken pieces. Remove chicken from pan. Cook onion and pepper. Add garlic and tomato paste. Add the white wine and bring to a boil. Turn the heat very low. Add the pepper, sugar, herbs, oregano, thyme, rosemary, anchovy paste and tomatoes. Cook for 5 minutes. Add back the chicken and cook for about 25 minute or unit chicken is done. Add the lemon zest, basil and olives. Cook over moderate heat for a further 2-3 minutes and serve. Serves 4.
