MOM'S CHICKEN POT PIE

Number Of Ingredients 11

⅓ cup butter
⅓ cup chopped onion
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 ¾ cups chicken broth
⅔ cup milk
2 cups chopped cooked chicken
1 (14.5 ounce) can peas and carrots
½ (15 ounce) can whole new potatoes, drained
1 (15 ounce) package prepared double-crust pie pastry

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt butter in a large skillet over medium heat. Cook and stir onion, flour, salt, and pepper in melted butter until the onion is translucent, about 5 minutes.
  • Remove skillet from heat and pour chicken broth and milk into the skillet; bring the mixture to a boil and cook to thicken slightly, about 1 minute.
  • Remove skillet from heat and stir chicken, peas and carrots, and potatoes into the broth mixture.
  • Press one pie pastry into the bottom of a deep-dish pie pan. Pour the broth mixture into the pie pastry. Top with remaining pastry and press edges together to form a seal. Cut several slits into the top pastry. Place pie plate on a baking sheet.
  • Bake in preheated oven until the crust is golden brown, about 30 minutes. Let pie cool and filling thicken at room temperature for 15 to 20 minutes before cutting.

Leftover chicken or rotisserie chicken from the supermarket helps on the ease of preparation of this fabulous comfort style dinner. Fresh vegetables gives this a very special added flavor and is worth the effort. Everyone loves Mom's Chicken Pot Pie! Serve with a green salad.

¼ cup butter
1 small onion, chopped
3 celery ribs, chopped
3 carrots, chopped
⅔ cup frozen peas
3 tablespoons chopped fresh parsley
¼ teaspoon dried thyme
¼ cup all-purpose flour
2 cups lower-sodium chicken broth
⅔ cup half-and-half cream
salt and ground black pepper to taste
3 cups cooked chicken, cut into bite-size pieces
1 (16.3 ounce) can refrigerated flaky-style biscuits (such as Pillsbury Grands®)
1 egg yolk, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium-low heat, and cook the onion, celery, and carrots until the celery and carrots are tender, about 15 minutes, stirring occasionally. Stir in peas, parsley, thyme and flour, and cook, stirring constantly, until the flour coats the vegetables and begins to fry, about 5 minutes. Whisk in chicken broth and half-and-half, and cook until the sauce is thick and bubbling. Season to taste with salt and black pepper, and mix in the chicken meat.
  • Transfer the chicken, vegetables, and sauce into a 2-quart baking dish. Arrange biscuits on top of the filling. In a small bowl, beat egg yolk with water; brush egg yolk on the biscuits.
  • Bake in the preheated oven until the biscuits are golden brown and the pie filling is bubbling, 20 to 25 minutes. Let rest 10 minutes before serving.

Mom always started with fresh vegetables, (no frozen or canned) and a home-made creamy sauce (no canned soups, etc.). Once you try this, you will never make another recipe... guaranteed. VEGETABLES
1 c carrot, chopped
1 c onion, chopped
1 stalk(s) celery, chopped
1 c potato, chopped
SAUCE
1/2 c flour
1 c half and half or milk
2 c canned chicken broth
1 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder, optional
ADDITIONAL INGREDIENTS
1/3 c butter, no substitutes
2-3 boneless skinless chicken breasts, poached and cubed.
1 double pie crust, home-made (if you don't like making your own pie crust, betty crocker makes a boxed mix found in the baking isle that is pretty good... much better than the refrigerated red boxed one.)

Steps:

  • 1. Preheat oven to 350 degrees. Cook vegetables in a large pan in butter until tender. Add flour to vegetables, cooking flour for a minute or so. Add milk or half and half and broth gradually to pan. Continue to cook on med/low until it starts to thicken and get bubbly. Remove from heat. Add garlic powder, salt, pepper and cubed chicken.
  • 2. Place bottom crust in deep pie plate. Pour in filling. Lattice cut remaining pie crust, if desired, or use solid top crust. Cut slits in top crust. Bake for 45 minutes at 350 degrees or until it starts to bubble from the top. Cover with a loosely fitting foil tent half way through to prevent crust from getting too brown.
  • 3. Allow to cool slightly before serving.

Two 10-ounce packages Pepperidge Farm Puff Pastry Shells
2 cups diced (1/2-inch ) carrots
1-1/2 cups diced (1/2-inch) celery
3/4 teaspoon kosher salt
1-1/4 cups diced (1/2-inch) onion
3/4 cup frozen peas
9 tablespoons butter
3/4 cup + 2 tablespoons flour
1/2 teaspoon ground white pepper
1/4 cup + 2 tablespoons Better Than Bouillon chicken base
4 cups diced or shredded rotisserie chicken
Milk (optional)

Steps:

  • 1. Preheat the oven to 425 degrees. 2. Set the pasty shells on a baking sheet and bake them according to the package directions. Set aside to cool, then remove the tops. 3. Meanwhile, in a medium saucepan, combine the carrots, celery, salt, and 1-1/2 cups water. Bring to a boil over medium-high heat and cook until just tender, about 5 minutes. Add the onion and boil 5 more minutes. Add the peas to warm them through. Drain the vegetables and run them under cold water to stop the cooking. Set aside. 4. In a Dutch oven, melt the butter over low heat. Whisk in the flour and white pepper and cook, whisking constantly, until the mixture has thickened, about 1 minute. Stir 3 cups water into the chicken base, then add to the pot and cook, stirring, until thick. 5. Add the vegetables and chicken to the sauce and cook until heated through. If the sauce is to thick, stir in a bit of milk. 6. To serve, divide the chicken mixture among the pastry shells and top with the pastry lids. Spoon additional chicken mixture on top, if desired, and some around the base. (If you still have leftover chicken mixture, serve it the next day over mashed potatoes.)
