2 cups diced cooked chicken
1/2 cup shredded carrots
1/2 cup finely chopped fresh broccoli
1/3 cup finely chopped sweet red pepper
1 cup shredded sharp cheddar cheese
1/2 cup mayonnaise
2 garlic cloves, minced
1/2 teaspoon dill weed
1/4 teaspoon salt
1/4 teaspoon pepper
2 tubes (8 ounces each) refrigerated crescent rolls
1 large egg white, beaten
2 tablespoons slivered almonds

Steps:

  • In a large bowl, combine the first 10 ingredients. Unroll crescent dough and place in a greased 15x10x1-in. baking pan; press seams and seal together, forming a 15x12-in. rectangle (dough will hang over edges of pan). , Spread filling lengthwise down the center of the dough. On each long side, cut 1-1/2-in- wide strips 3-1/2-in. into center. Starting at one end, alternate strips, twisting twice and laying at an angle across filling. Seal ends. , Brush dough with egg white; sprinkle with almonds. Bake at 375° for 30-35 minutes or until golden brown. Cut into slices; serve warm.

2 pkgs. chicken flavor top ramen, 3 oz. each
1 egg, beaten
1 tsp. sesame oil
2 cups sliced cooked chicken breast
1 cup chopped red bell pepper
1 cup broccoli florets
1 can crushed pineapple, 8 oz, in syrup
1 tbsp sugar
1 tbsp. vinegar
2 tsp. cornstarch
broccoli and red pepper for garnish, optional

Steps:

  • 1. Preheat oven to 350. Grease a 10 inch pie plate
  • 2. Cook noodles in 3 cups boiling water for 3 minutes. Drain. Mix beaten egg into noodles. Place half of the noodles in pie plate.
  • 3. Heat oil in saute pan over medium heat. Add chicken and cook for 5 minutes. Add bell pepper and broccoli; saute for 3 additional minutes. Stir in noodle seasoning packet, pineapple and juice, sugar, vinegar and cornstarch. Cook for 3 to 5 minutes til thickened.
  • 4. Spread chicken mixture evenly over noodles in pie plate.Top with remaining noodles. Bake for 20 minutes. Garnish with broccoli and red pepper. Makes 6 to 8 servings.

1 (26 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
3 (14.5 ounce) cans chicken broth
2 cups diced, cooked chicken breast meat
2 teaspoons onion powder
1 teaspoon seasoning salt
½ teaspoon garlic powder
2 (9 ounce) packages frozen egg noodles

Steps:

  • In a large pot, mix the cream of chicken soup, cream of mushroom soup, chicken broth, and chicken meat. Season with onion powder, seasoning salt, and garlic powder. Bring to a boil, and stir in the noodles. Reduce heat to low, and simmer for 20 to 30 minutes.

This was a Sunday favorite when I was growing up. Sometimes my mother dipped the chicken in seasoned flour after boiling and fried it.

1 (2 to 3 pound) whole chicken, cut into pieces
4 stalks celery, diced
celery tops
1 carrot, shredded
1 onion, halved - unpeeled
ground black pepper to taste
3 (32 fluid ounce) containers chicken broth
2 eggs, beaten
1 cup warm water
2 tablespoons vegetable oil
1 teaspoon salt
3 cups all-purpose flour

Steps:

  • In a large pot over medium heat, combine chicken, celery and their tops, carrot, onion and its peel, and pepper. Pour broth over and bring to a boil. Cover, reduce heat and simmer until chicken is tender and falls from the bone, about 45 minutes.
  • While chicken is cooking, make noodles. In a large bowl, combine eggs, water, oil, salt and enough of the flour to make a stiff dough.
  • Strain chicken stock, reserving meat, celery and carrots. Pull meat from bones and return strained stock and meat, celery and carrots to pot. Bring to a boil. Make noodles by cutting dough from a broth-dipped spoon or using scissors or your fingers to make small, chickpea sized, noodles and dropping them in the boiling water. When the noodles rise to the surface they are done.

This recipe reminds me of my Grandmother...she use to make it quite often. It's a 'comfort' food for me.

1 (8 ounce) package medium noodles
2 lbs cottage cheese
3 eggs (beaten)
1 cup sugar
2 cups golden raisins
1 cup sour cream
1/2 cup breadcrumbs, toasted
3 tablespoons melted butter

Steps:

  • Cook noodles according to pkg directions drain.
  • Stir beaten eggs into noodles.
  • Combine cottage cheese, sugar raisins, sour cream.
  • Pour mixture in greased baking dish (8X8).
  • Combine bread crumbs and butter and sprinkle on noodle mixture.

Lighten up the classic soup by using zoodles in place of noodles. We like a tangle of zucchini ribbons, but any vegetable noodle you like would work, too.

4 cups low-sodium chicken broth
1 pound boneless, skinless chicken breasts
2 stalks celery, thinly sliced
2 carrots, peeled and thinly sliced
1 small onion, finely diced
Kosher salt and freshly ground pepper
2 medium zucchini (1 pound), trimmed and cut into thin noodles (about 5 cups)
1/4 cup chopped fresh dill
Extra-virgin olive oil, for drizzling
Lemon wedges, for serving

Steps:

  • In a medium pot, combine broth, 4 cups water, chicken, celery, carrots, and onion. Bring to a boil; season with salt and pepper.
  • Reduce heat to a simmer, cover, and cook until chicken is cooked through, about 10 minutes; transfer chicken to a plate. Let cool slightly, then shred into bite-size pieces.
  • Return broth to a simmer; add zucchini noodles. Cook until just tender, about 2 minutes. Remove from heat. Stir in chicken and dill. Season with salt and pepper. Serve, with a drizzle of oil and a squeeze of lemon.
