1 tablespoon dried parsley flakes
2 teaspoons salt
1-1/4 teaspoons pepper, divided
1-1/8 teaspoons dried thyme, divided
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon rubbed sage
1 pound chicken drumsticks
1 pound bone-in chicken thighs
2 tablespoons plus 1/2 cup bacon drippings or olive oil, divided
1/2 cup all-purpose flour
1/2 pound sliced fresh mushrooms
1 medium onion, chopped
1 medium green pepper, chopped
1 celery rib, chopped
1 jalapeno pepper, seeded and finely chopped
4 garlic cloves, minced
4 cups chicken stock
4 green onions, finely chopped
5 drops hot pepper sauce
Hot cooked rice

Steps:

  • In a small bowl, mix parsley, salt, 1 teaspoon pepper, 1 teaspoon thyme, garlic powder, onion powder, white pepper, cayenne and sage; rub over chicken. In a Dutch oven, brown chicken, in batches, in 2 tablespoons bacon drippings; remove chicken from pan., Add remaining 1/2 cup bacon drippings to the same pan; stir in flour until blended. Cook and stir over medium-low heat for 30 minutes or until browned (do not burn). Add mushrooms, onion, green pepper and celery; cook and stir for 2-3 minutes or until vegetables are crisp-tender. Add jalapeno pepper, garlic and remaining 1/8 teaspoon thyme; cook 1 minute longer., Gradually add stock. Return chicken to pan. Bring to a boil. Reduce heat; cover and simmer until chicken is very tender, about 1 hour., Skim fat. Stir in green onions, hot pepper sauce and remaining 1/4 teaspoon pepper. Serve with rice. , Freeze option: Place individual portions of cooled stew in freezer containers and freeze. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary.

3 teaspoons canola oil, divided
2 medium carrots, chopped
2 large portobello mushrooms, stems removed, chopped

3 garlic cloves, minced
2-3/4 cups water
1 can (15 ounces) black beans, rinsed and drained
1 package (8 ounces) red beans and rice mix

Steps:

  • In a large nonstick skillet over medium-high heat, brown chicken in 1 teaspoon oil; remove and set aside. In the same skillet, saute the carrots, mushrooms, onion and peppers in remaining oil for 5 minutes. Add garlic; cook 1 minute longer., Add water; bring to a boil. 1 cup butter
4 cups onions, chopped
2 cups celery, chopped
2 cups bell peppers, chopped

2 cups chicken stock
2 lbs chicken, thigh meat, cooked and chopped

Steps:

  • Cook rice as directed for the type of rice you are making.
  • While rice is cooking, start your dark roux. In a saute pan, melt your butter over medium heat, add flour, and whisk continuously for about 15-20 minutes until color is a medium-dark brown, a little darker than peanut butter, and should smell very 'nutty'. Time may vary; it's more about the color and smell.
  • Add the roux to a cold stock pot to stop the cooking. Add the cajun seasoning to your roux, along with the onions, celery, and peppers. Turn heat to low-medium and stir until well blended and simmering.
  • Add chicken, fresh garlic, dehydrated garlic, and half of the chicken stock to the pot, and stir. While stirring, gradually add more stock until the desired thickness is reached.
  • Add bay leaves, and cook for 30 minutes over medium heat.
  • Add green onion and parsley, stir, then serve over cooked rice.

1 (3 pound) whole chicken, skin removed and cut into pieces
⅓ cup all-purpose flour
1 tablespoon vegetable oil
½ pound smoked sausage
2 cloves garlic, minced
1 onion, chopped
2 red bell peppers, chopped
3 roma (plum) tomatoes, chopped
1 teaspoon brown sugar
¾ teaspoon dried thyme
¾ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground allspice
1 ½ cups long-grain white rice
2 ¼ cups chicken stock
1 tablespoon chopped fresh parsley, for garnish
1 lemon - sliced, for garnish

Steps:

  • Dredge chicken in flour, turning to coat all over.
  • In large saucepan or Dutch oven, heat oil over medium heat. Brown chicken pieces about 8 minutes per side. Transfer to plate.
  • Combine sausage, garlic, onion, peppers, tomatoes, sugar, thyme, oregano, salt, and allspice in the pan. Cook over medium heat, stirring occasionally, for 10 minutes or until peppers are softened.
  • Stir in rice, and add stock. Nestle chicken into rice. Bring to a boil. Reduce heat, and cover. Cook for 20 to 25 minutes, or until liquid is absorbed and juices run clear when chicken is pierced. Serve sprinkled with parsley. Garnish with lemon slices if you like.

Last year, I had an appetizer similar to this served to me in New Orleans, and I've been playing about with the recipe ever since. It has a beignet-like dough, surrounding an incredible filling of bacon, chicken, and cream cheese. It's so yummy. So, you ready... Let's get into the kitchen.

3 - 4 slice(s) bacon, chopped
1 large chicken breast
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste
4 ounce(s) cream cheese, softened
THE BATTER
1 cup(s) flour, all-purpose variety
1 teaspoon(s) black pepper, freshly ground
2 teaspoon(s) cajun spice, or to taste i prefer tony chacheres
1/2 teaspoon(s) onion powder, or to taste
6 ounce(s) beer or light ale
1 large egg, just the yolk
ADDITIONAL ITEMS
- peanut oil, for frying

Steps:

  • PREP/PREPARE
  • THE FILLING
  • Gather your Ingredients (mise en place).
  • Cook the chopped bacon in a sauté pan, over medium heat, and cook until the fat has rendered and the bacon is crisp.
  • Remove from the pan, drain on paper towels, and reserve.
  • Salt and pepper both sides of the chicken breast.
  • Add the chicken breast to the sauté pan, and reduce the heat to medium low
  • Slowly cook the chicken breast in the bacon grease until cooked through, about 8 - 10 minutes.
  • Chef's Tip: If the chicken breast is thick, you can cut it in half, lengthwise, to cut down on the cooking time (like I did).
  • Remove from the pan, allow to slightly cool, then shred, and chop.
  • Add the chicken, bacon, and cream cheese, to a bowl, and gently mix together.
  • Cover, place into the fridge, and allow to cool for about 30 minutes.
  • Remove the filling from the fridge, and shape into small balls of one rounded tablespoon each.
  • Place on a baking tray, lined with parchment paper, and return to the fridge for an additional hour.
  • THE BATTER
  • Gather your ingredients (mise en place).
  • Add the flour, and spices to a large bowl, and then add the beer until the mixture begins to become smooth.
  • Then whisk in the egg yolk.
  • Chef's Note: The mixture will be thick; like a tempura batter.
  • THE ASSEMBLY
  • Add about 2 inches (5cm) of oil to a pot, and bring the temperature up to 375f (190c).
  • Take three of the chicken balls and add them to the batter.
  • Make sure that they are completely coated, and then remove and carefully place into the oil.
  • Chef's Note: Allow to cook until golden brown, about 3 - 5 minutes.
  • Remove from the oil, and place on paper towels to drain.
  • Chef's Note: Continue to cook the remaining beignets.
  • PLATE/PRESENT
  • Serve while nice and warm with your favorite dipping sauces. Enjoy.
  • Keep the faith, and keep cooking.

6 tablespoons flour
3/4 teaspoon salt
1/4 teaspoon pepper

1/4 teaspoon poultry seasoning
1 bay leaf
13/4 cups mushrooms, sliced
1/2 cup onion, diced
1/2 cup celery, diced

1/2 cup sour cream
1/4 cup green pepper, diced, for garnish (optional)
1/8 cup parsley, chopped, for garnish (optional)

Steps:

  • 1. Rinse chicken and dry.
  • 2. Mix flour, salt, pepper and paprika together.
  • 3. Dredge chicken in this mixture and reserve leftover mixture for later use.
  • 4. Melt 2 tbsp butter in pan and brown chicken breasts both sides and set aside.
  • 5. Melt remaining butter, stir in remaining flour mixture, add wine and stir until smooth.
  • 6. Add to wine mixture chicken bouillon, water, poultry seasoning, bay leaf, mushrooms, onions, carrots and celery.
  • 7. Add chicken and simmer covered for 25- 30 minutes.
  • 8. Once chicken is cooked, remove and add sour cream and cook until heated through.
  • 9. When ready to serve pour sauce over chicken and garnish with green pepper and parsley.

NEW ORLEANS PANEED CHICKEN WITH SHRIMP AND FUSILLI



New Orleans Paneed Chicken With Shrimp and Fusilli image

I was in shock to find no recipes for paneed chicken in here! In New Orleans "Paneed" mean pan fried. It's usually chicken coated in bread crumbs and seasonings that is pan fried and served with pasta alfredo. This recipe is one I found from Bon Appétit, September 1995. I have however tweaked it and made it a little more to my tastes.

2 eggs
2 cups Italian style breadcrumbs
1/3 cup fresh parsley, plus
2 tablespoons chopped fresh parsley
3/4 teaspoon salt
1/2 teaspoon ground pepper
4 boneless skinless chicken breast halves (pounded out slightly)
4 tablespoons olive oil
1/2 lb uncooked large shrimp, peeled, deveined
3/4 cup green onion, chopped
1/4 red bell pepper, chopped
1/4 green bell pepper, chopped
2 garlic cloves, finely minced
2/3 cup dry white wine
1 cup whipping cream
1/4 teaspoon cayenne pepper
1/4 cup freshly grated parmesan cheese
1/2 lb fusilli

Steps:

  • Place eggs in shallow bowl and beat to blend. Mix breadcrumbs, 1/3 cup parsley, 3/4 teaspoon salt and 1/2 teaspoon pepper in another shallow bowl. Dip chicken into eggs, then into crumb mixture, turning to coat completely.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add chicken; sauté until cooked through, about 4 minutes per side. Transfer to a dish in a warm oven. Discard oil in skillet; add 1 tablespoon oil. Add shrimp, green onions and bell peppers; sauté over medium-high heat until just cooked through, about 3 minutes. Using slotted spoon, transfer shrimp and vegetables to dish with the chicken. Add wine to skillet; boil until reduced to 1/2 cup, about 2 minutes. Add cream and garlic; boil until sauce thickens slightly, about 3 minutes. Mix in cayenne and Parmesan.
  • Return shrimp, veggies and any collected juices to sauce in skillet. Stir over medium heat until heated through.
  • Meanwhile, cook fusilli in large pot of boiling salted water until just tender but still firm to bite.
  • Drain pasta. Add to skillet; toss to coat. Season with salt and pepper. Plate each chicken breast and divide the pasta between the four plates of chicken. Sprinkle with the 2 table spoons of fresh chopped parsley to garnish before serving.
  • Great served with fresh french bread and butter. Also goes great with a little side salad.

1/4 cup onion, finely chopped
4 tablespoons butter
1 1/2 lbs chicken livers
2 egg yolks, hard-boiled
4 tablespoons butter, softened
1/2 cup heavy cream
1/3 cup cognac
1/4 teaspoon nutmeg, grated
salt, to taste
black pepper, freshly ground, to taste
1 tablespoon green onion, chopped (fresh chives OK)

Steps:

  • Saute the onions in 4 tablespoons butter in a skillet over medium heat for 2 to 3 minutes. Add the chicken livers and cook just until the pink disappears. Remove from heat.
  • Puree the mixture in a blender or food processor until smooth. Put the egg yolks through a sieve and add to the liver mixture together with the 4 tablespoons softened butter, cream, Cognac, nutmeg, salt and pepper. Process to mix well.
  • Spoon the pate into a decorative bowl, cover and chill for several hours. Sprinkle the top of the pate with the green onions and chives before serving with toast points or crackers.

ITALIAN CHICKEN WITH NEW ORLEANS SPAGHETTI BORDELAISE



Italian Chicken With New Orleans Spaghetti Bordelaise image

This is one of Emeril Lagasse's recipes with a couple of my own variations. It has become one of DH's favorite meals. You may want to reduce the amount of butter or only add half the butter at first and then you can add the remaining if need be. Don't let the long list of ingredients fool you. It is very easy to make and not very time consuming as you can cook your spaghetti while the chicken is baking in the oven. You can even substitute breasts if you prefer white meat but the thighs come out so tender and juicy.

12 chicken thighs

ground cayenne pepper
4 heads garlic, cloves separated and peeled (yes 4 heads)

3 lemons, quartered

1 teaspoon dried oregano
2 bay leaves
1/2 cup chopped Italian parsley
1 lb angel hair pasta or 1 lb thin spaghetti
1/4 cup olive oil
8 cloves garlic, minced
1/2 cup chopped green onion
2 tablespoons dry white wine
3/4 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper (or more to taste)
1/2 cup butter (8 Tbsp)
1/2 cup chopped Italian parsley
2 cups finely grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Season thighs with salt, black pepper and cayenne.
  • Peel 4 heads of garlic and crush half leaving the remaining cloves whole.
  • Heat 1/2 cup olive oil in a roasting pan large enough to hold the chicken in 1 layer, over 2 burners on medium-high heat.
  • Add chicken and brown on both sides, setting aside when brown.
  • Add crushed garlic and cook, stirring about 1 minute.
  • Remove from heat and add remaining ingredients, stirring to mix well.
  • Place chicken in roaster, cover tightly and cook for 1 hour.
  • Remove cover and roast until the chicken is brown and tender, about 30 minutes, basting occasionally.
  • Remove and set aside.
  • Spaghetti Bordelaise:.
  • In large pot bring salted water to a boil and cook spaghetti until al dente, about 10 minutes.
  • Drain well.
  • In medium saucepan heat oil over medium heat.
  • Add minced garlic and green onions and cook stirring until fragrant and starting to turn golden, about 2 minutes.
  • Add the wine, basil, oregano, thyme, salt, pepper and cayenne and cook 2 minutes.
  • Add the butter and parsley and cook for another 2 minutes.
  • Pour sauce over drained spaghetti, tossing to coat.
  • Place in large serving bowl and coat with Parmesean Cheese.
  • Place Spaghetti Bordelaise on plate and top with chicken thigh.

1 Tbsp vinegar (i use rice vinegar; however, white vinegar will do)
THE CHICKEN TENDERS
3/4 c flour, all purpose variety
2 Tbsp cajun spice (i recommend, homemade)
1 1/2 c breadcrumbs, panko variety
2 medium eggs, beaten
2 medium chicken breasts, cut into strips
peanut oil, for deep frying

Steps:

  • 1. PREP/PREPARE
  • 2. THE DIPPING SAUCE
  • 3. Gather your ingredients.
  • 4. Add all the ingredients to a non-reactive bowl.
  • 5. Whisk to combine.
  • 6. Cover and reserve.
  • 7. Chef's Tip: If you can give the dipping sauce an hour or two to rest, it will help to build flavor, and give the ingredients a chance to know each other.
  • 8. THE CHICKEN TENDERS
  • 9. Gather your ingredients.
  • 10. Lay the chicken strips on a clean surface.
  • 11. Coat both sides with 1 tablespoon of the Cajun spice.
  • 12. Chef's Note: If you would like to make your own Cajun spice (I do), then play around with different combinations of the following spices: chili powder, cumin, basil, salt, black pepper, garlic powder, paprika, onion powder, cayenne pepper, dried oregano, and dried thyme.
  • 13. Add the remaining tablespoon of Cajun spice to the panko breadcrumbs, and combine.
  • 14. Add a chicken strip to the flour, and thoroughly coat.
  • 15. Dip into the egg wash.
  • 16. Place into the panko breadcrumbs, and press the crumbs into the chicken.
  • 17. Place on a wire rack, and repeat for the other chicken strips.
  • 18. Allow the chicken strips to rest for 10 minutes, before frying.
  • 19. Place about 1 inch (2.5cm) of peanut oil into a pot with high sides, and allow to get up to temperature, 350f (175c).
  • 20. Add the chicken strips to the hot oil.
  • 21. Cook the chicken tenders until golden brown, about 2-3 minutes per side.
  • 22. Chef's Note: You do not want to crowd the pan, so you will probably need to do these in batches.
  • 23. PLATE/PRESENT
  • 24. Serve these on a platter with some dipping sauce, and watch them dissapear. Enjoy.
  • 25. Keep the faith, and keep cooking.

1/2 cup dry white wine

1 lb red potatoes, cut in 1/2 inch cubes

4 boneless, skinless chicken breast fillets
6 Tbsp flour
3/4 tsp salt
1/4 tsp pepper
1/4 tsp paprika
4 Tbsp butter
3/4 c white wine
1 tsp chicken bouillon
1/4 tsp poultry seasoning
1 bay leaf
1 3/4 c sliced mushrooms
1/2 c onion, diced
3/4 c celery, diced
1/2 c carrot, grated
1/2 c sour cream

Steps:

  • 1. Rince chicken, pat dry. Mix flour, salt, pepper and paprika. Dredge chicken. Melt 1/2 butter in large fry pan until bubbly. Brown chicken on both sides and set aside. melt remaining butter, flour from dredging, and wine. When smooth add remaining ingredients but sour cream. Return chicken to pan, cover and simmer 20-25 min or until cooked through. Remove chicken to plate. Stir in sour cream and cook until heated through and pour sauce over chicken. Serve sprinkled with parsley.
