- Heat the butter in a large pan. Add the lardons and fry for 5 mins over a low-medium heat. Stir in the onion and fry for 10 mins more until the onion is soft but not coloured.
- Stir in the mushrooms and continue cooking, stirring, for 5 mins. Stir in the risotto rice and cook over a medium heat for 2 mins until the rice has started to turn translucent.
- Pour in the wine and allow it to bubble away over the heat. Pour in a quarter of the chicken stock and set a timer for 20 mins.
- Continue cooking, stirring very frequently, topping up with a splash more stock as it gets absorbed - this is best done in three more stages, until the rice is cooked and most of the stock has been absorbed (you may not need all the stock). The texture now should be creamy, like rice pudding.
- Stir through the chicken, warm briefly, then turn off the heat. Stir through the parmesan and parsley, cover and leave to rest for 5 mins to allow more liquid to be absorbed into the rice. Season to taste and serve with extra parmesan, if you like.

- In a large heavy saucepan, heat the butter and oil. Sauté the shallots and garlic with some seasoning for 5 mins, then stir in the chicken and cook for 2 mins.
- Add the barley and cook for 1 min. Pour in the wine and stir until it is absorbed. Add the mushrooms and thyme, then pour over ¾ of the stock. Cook for 40 mins on a low simmer until the barley is tender, stirring occasionally and topping up with remaining stock if it looks dry. Remove from the heat and stir in the grated Parmesan. Serve immediately, with chives and Parmesan shavings scattered over, if you like.

- In a large pot heat oil and add mushrooms and chicken and cook through until cooked. Remove from pot.
- Using the same pot, add butter and saute onions and garlic in butter and leftover oil mixture until translucent. Add the rice and stir until the rice turns opaque - about two minutes.
- Add the wine, salt and pepper to the rice and stir frequently until the wine has been absorbed into the rice.
- Add 1/2 cup of the heated chicken stock and stir frequently until absorbed. The rice and broth should bubble gently.
- Continue to cook the rice, adding chicken stock 1/2 cup at a time and allowing the rice to absorb it before adding the next 1/2 cup.
- Cook rice this way until tender which should take about 25-30 minutes.
- Just before the last batch of stock has been absorbed into the rice, add the chicken and mushroom mixture back into the pot. Stir through.
- Add 1/2 cup of grated parmesan cheese, the parsley and the cream and stir through.
- Remove from heat when all the remaining stock has been absorbed and the risotto mix is a thick creamy consistency.
- Serve immediately. The remaining parmesan can be added to each serve if requested.

- Soak the dried mushrooms in 500ml boiling water for 20 mins, then drain the liquid into the stock. The mushrooms will have absorbed a lot of the liquid; you should have 1.5l in total. Chop the soaked mushrooms and add to the chestnut mushrooms.
- Make the risotto: start by frying the bacon in half the butter, then add the onion. When they are soft, add the mushrooms and continue to cook for a few mins until soft. Stir through the rice and continue as in the basic recipe. When you add the final ladle of stock, stir through the chicken to reheat. - Preheat the oven to 350 degrees F (175 degrees C). Place chicken breasts in a baking dish and coat with balsamic vinegar.

- Heat oven to 180C/fan 160C/gas 4. First, make the stuffing. Finely chop the soaked porcini and set aside. Heat the oil in a shallow pan, then gently cook the onion for 5 mins, stirring occasionally. Add the porcini, button mushrooms and thyme leaves, season, turn the heat up, then cook for another 5 mins until the mushrooms have softened.
- Add the wine to the pan, then reduce fiercely until nearly dry. Add 50ml of the porcini soaking liquid, then continue to reduce for a couple of mins until you have a syrupy sauce. Allow to cool for a couple of mins, then carefully spoon between the skin and the flesh of the chicken breasts. Can be made a day ahead and chilled, or frozen for 1 month. Defrost in fridge before cooking. Season, place on a baking tray, skin-side up, then cook in the oven for 20 mins, until the chicken is cooked through and golden.
- While the chicken is cooking, make the risotto. Heat the butter and olive oil in a saucepan. Add the celery and onion, then cook over a medium heat for 5 mins until softened. Add the rice, coat it well in the oil, then cook for 1 min. Gradually add the stock a ladleful at a time, stirring with each addition until absorbed. Continue adding the stock and stirring until the risotto is oozing and thick - about 20 mins. Stir in the thyme, lemon juice, zest and Parmesan.
- When the chicken is cooked through and golden, remove from the oven. Spoon the risotto onto serving plates, sprinkle with the extra Parmesan and top with a chicken breast. Spoon over the juices from the chicken pan, then serve immediately.

This is a recipe that's quite close to me as it's one of the first things I learnt how to cook, and it's the first I created on my own, so I hope you enjoy. As with all risottos, you know the deal, the key is to continually stir the rice to release the starch.

- Heat a small amount of oil in a large heavy based pot and add the chicken. When cooked, remove from the pot and set aside.
- On a high heat, warm a little more oil to the pot and add the garlic and onion. Saute until the onion is translucent.
- Add the rice to the pot and stir to coat the grains with the oil and onion. Add wine and saffron. Stir to combine.
- Add one cup of the stock and continually stir whilst bringing to the boil.
- Turn down to a medium heat. When the liquid has almost all been absorbed add another cup of stock and keep stirring continuously.
- Keep repeating step 5 until the rice is cooked. I find that I need to use six cups of stock, but quantities can vary from person to person. The best technique (I find) is to taste the rice after four cups, and keep checking after each cup you add after that.
- When the rice is cooked and almost all liquid has been absorbed stir in the chicken and mushrooms. Remove from heat when the mushrooms are starting to look cooked.
- Slowly add in the spinach and stir until the spinach has wilted. Add pepper to taste.
- Serve warm.
- If desired, a large handful of parmesan can be added with the chicken and mushrooms, or sprinkled over the top when served.

MUSHROOM, CHICKEN & BACON RISOTTO WITH A SPINACH SALAD

- Soak the dried mushrooms in 500ml boiling water for 20 mins, then sieve the mushrooms and add liquid to a saucepan. Quickly rinse the mushrooms to ensure no dirt present, then chop and add to the chestnut mushrooms.
- Add the stock to the saucepan holding the mushroom liquid, bring to the boil, and keen on a low simmer.
- Season the chicken thighs with salt and pepper.
- Heat a frying pan on a medium heat. Add 25g butter to a frying pan, along with some olive oil (to avoid the butter burning), and once the butter melted, add the chopped chicken thighs. Cook for a few minutes, stirring, until the thighs are browned. Then put the chicken on a plate to the side.
- Put frying pan back on heat, add 25g butter and allow to melt. Add bacon and cook until starting to turn golden brown. Then add the chopped onion and cook until it's translucent and soft. Then add the sliced mushrooms and porcini mushrooms and cook for a further 8--10 minutes.
- Add the rice to the frying pan and stir continuously until the rice is completely coated in butter, shiny, and the edges of the grain start to look transparent.
- Pour the white wine into the frying pan and simmer until totally evaporated.
- Add one ladleful of stock, and stir the rice over a low heat until liquid is absorbed. Add another ladleful of stock and continue stirring. Repeat until the rice is cooked al dente (after say 25-30 mins). It should be slightly firm but with a starchy bite in the middle. The risotto should be creamy and slightly soupy, and when you draw a wooden spoon through it, there will be a wake that holds for a few moments.
- Add the final ladle of stick and add the chicken thigh to reheat. Stir in the chopped parsley, parmesan, and 10g of butter. Leave to rest for a few minutes, then serve.
- To make the salad: Put balsamic vinegar, lemon juice, olive oil, and a good pinch of salt and pepper into a large salad bowl. Add the pine nuts, sliced spinach leaves, mint leaves, sun-dried tomatoes, and cucumber. Toss together and serve.

- Light pan-fry chicken in olive oil until browned and keep aside. Add onion and 1/2 of the sliced mushroom, saute for 1 minute. Add the rice and stir for 1-2 minutes. Add wine slowly until absorbed. - Add chicken and mushrooms. Brown for 5-10 minutes. Set aside and cover to keep warm.
- Add onion and cook 3 minutes, until translucent.
- Add arborio rice and wine and heat through.
- Begin adding warmed chicken broth to rice and onion mixture. A ladle is helpful in this part.
- Add 1/2-1 cup broth at a time. Stir continuously. This part is very important, you must keep stirring or it will stick.
- As the broth is absorbed continue adding more broth until you have used the entire saucepan. This may take 15-25 minutes.
- After all the broth has been added, taste the rice. If it is not done (still with some bite in the center), add water until it is cooked.
- Stir in the chicken and mushroom mixture.
- Add butter and parmesan cheese and stir until melted.
- Serve with asparagus or a fresh green salad.

- 1. In a large pot, heat the butter over moderate heat. Add the mushrooms. Cook, stirring frequently, until the mushrooms are browned, about 5 minutes. Add the chicken, 1/4 tsp of the salt, and the pepper. Cook until the chicken is done, 3 to 4 minutes. Remove the mixture from the pan. In a medium saucepan, bring the broth to a simmer. 2. In the large pot, heat the oil over moderately low heat. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the rice and stir until it begins to turn opaque, about 2 minutes. 3. Add the wine and the remaining 3/4 teaspoon salt to the rice. Cook, stirring frequently, until all of the wine has been absorbed. Add about 1/2 cup of the simmering broth and cook, stirring frequently, until it has been absorbed. The rice and broth should bubble gently; adjust the heat as needed. Continue cooking the rice, adding broth 1/2 cup at a time, and allowing the rice to absorb it before adding the next 1/2 cup. Cook the rice in this way until tender, 25 to 30 minutes in all. The broth that hasn't been absorbed should be thickened by the starch from the rice. You may not need to use all the liquid, or you may need more both or some water. 4. Stir in the chicken and mushrooms, the Parmesan, and the parsley and heat through. Serve the risotto with additional Parmesan.

- for meatballs:.
- preheat oven to 375.
- heat 2 tablespoons olive oil and saute onions for 3-4 minutes and season with a little salt.
- add garlic to onions and saute till onions are translucent about 4 minutes remove from heat and cool on a plate.
- in a bowl combine chicken, onions, egg, parmesean cheese 1 teaspoon kosher salt, remaining spices and milk mix well.
- add breadcrumbs and mix thoroughly.
- shape into 8-10 meatballs.
- heat 2 tablespoons olive oil in a oven proof skillet and fry meatballs for 3 minutes a side.
- when meatballs are brown all over cover and place skillet into preheated oven.
- cook for 12 minutes and let stand for 5 minutes.
- Risotto:.
- heat 1 tablespoon olive oilin a pan add onions and a pinch of salt and saute for 3-4 minutes.
- add garlic and sute for 2-3 more minutes.
- add mushrooms and cook for 3-4 minutes more.
- add rice and cook for 2-3 minutes, do not allow rice to brown.
- add two cups of broth and stir constantly until most of liquid is gone.
- continue cooking down each cup of broth for all five cups until risotto is creamy.
- remove risotto from heat and add parmesean mix thoroughly.
- Basil Pesto:.
- place garlic, basil and toasted pine nuts into a processor and grind till coarsely chopped.
- add oil and continue pulsing umtil smooth.
- add 1/2 cup parmesean, salt and pepper to taste, and mix one more time.
- transfer pesto to pan and heat through.
- to serve place risotto into bowls and add meatballs to each.
- spoon pesto sauce over meatballs and risotto, top with remaining parmesean.
