This chicken will melt in your mouth and is much better than fried chicken. Very easy to make. Got this recipe from a friend from High School.

2 lb chicken breast halves, skinless and boneless
1 c greek yogurt-plain
1/2 c parmesan cheese
1 tsp garlic powder
1 1/2 tsp seasoning salt
1/2 tsp black pepper

Steps:

  • 1. Mix all together and spread mixture over chicken. Bake at 375 for 45 min.

Try this and you'll know why they call it saltimbocca--Italian for 'jump in your mouth.' It's kind of like it jumps right off of your plate. Though it's traditionally made with veal, I made it with chicken. Quick, easy, and so delicious!

8 (6 ounce) chicken cutlets
1 teaspoon salt
½ teaspoon black pepper
16 large fresh sage leaves
16 thin slices prosciutto
3 tablespoons olive oil
1 cup dry white wine
1 cup low-sodium chicken broth
½ stick butter

Steps:

  • If cutlets are thick, lay them between 2 sheets of wax paper and pound to 1/2-inch thickness with flat side of a meat mallet or bottom of a small, heavy skillet. Sprinkle with salt and pepper. Put 2 large (or 5 small) sage leaves on top of each cutlet, then wrap 2 slices of prosciutto crosswise around each cutlet, holding sage in place.
  • Heat 1 1/2 tablespoons oil in a large skillet over medium heat. Add 4 cutlets and cook until no longer pink in the center and the juices run clear, about 2 minutes per side. Transfer to a platter; tent with foil to keep warm. Repeat with remaining 1 1/2 tablespoons oil and remaining 4 cutlets.
  • Add wine to skillet and simmer, scraping up any browned bits, 1 minute. Add broth and simmer until slightly reduced, 4 to 5 minutes. Remove from heat, add butter, and swirl skillet until butter has melted and sauce is creamy. Spoon 2 tablespoons sauce over each cutlet and serve.

Looking through my old and very large recipe file, (from the old days when I wrote everything down!), I found this. I'm not completely sure if it came from The Seattle Times. I think I took it to potlucks back in the 80's.

1 cup cooked chicken, diced
1 cup celery, sliced
2 tablespoons onions, finely chopped
1/2 cup black olives, chopped
1/2 cup pimento stuffed olive, sliced
1/4 cup toasted walnuts, chopped
1 (10 3/4 ounce) can cream of chicken soup
1/2 teaspoon salt
3/4 cup mayonnaise
1/2-1 cup potato chips, crushed

Steps:

  • Combine all ingredients except chicken and potato chips.
  • Gently fold chicken into this mixture.
  • Rectify seasonings to taste.
  • Turn into buttered baking dish and top with crushed potato chips.
  • Bake in preheated 450* oven for about 20 minutes.

This recipe using only three chicken breasts is very economical and super delicious! My kids love it and they are extremely picky. The chicken just melts in your mouth and is so flavorful! Garlic bread and salad goes well with this meal. I always taste before serving so I will know what, if anything more, I need to add such as Parmesan, Italian dressing, or milk if it's too thick, etc.

1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon Italian seasoning
1 teaspoon garlic powder
3 skinless, boneless chicken breast halves
1 (10.75 ounce) can cream of mushroom soup
6 ounces Italian salad dressing
⅔ cup sour cream
½ cup grated Parmesan cheese
¼ cup all-purpose flour
2 teaspoons malt vinegar
1 (8 ounce) package angel hair pasta

Steps:

  • Whisk sea salt, black pepper, cumin, paprika, Italian seasoning, and garlic powder together in a bowl. Season chicken breasts with seasoning mixture and place chicken in the slow cooker.
  • Stir cream of mushroom soup, Italian dressing, sour cream, Parmesan cheese, flour, and vinegar together in a bowl; pour over chicken.
  • Cook on Low for 6 hours.
  • Shred chicken in the slow cooker using 2 forks.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes. Drain.
  • Serve chicken over angel hair pasta.
