1 tablespoon olive oil
1 small onion, diced
3 stalks celery, diced
3 cloves garlic, minced
2 carrots, shredded
1 pound cooked, cubed chicken breast
4 cups chicken broth
1 (16 ounce) package mini potato gnocchi
1 (6 ounce) bag baby spinach leaves
1 tablespoon cornstarch
2 tablespoons cold water
2 cups half-and-half cream
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Cook onion, celery, garlic, and carrots in the hot oil until onion is translucent, about 5 minutes. Stir in cubed chicken and chicken broth; bring to a simmer.
  • Stir gnocchi into the simmering soup and cook until they begin to float, 3 to 4 minutes. Stir in spinach; cook until wilted, about 3 additional minutes.
  • Whisk cornstarch into cold water until smooth. Stir cornstarch mixture and half-and-half into simmering soup. Cook until soup thickens slightly, about 5 minutes. Season to taste with salt and black pepper.

This is very close to the Olive Garden soup. There's another recipe on the web, which was the basis of this recipe, however, I have changed it to use less cream. Still tastes good! I did end up using a little cornstarch to thicken. I guess you could sub heavy cream for the half-and-half to make it a little thicker without using cornstarch. The gnocchi is usually in the spaghetti section of the grocery store.

3 -4 chicken breasts, cooked and diced
4 cups chicken stock
2 cups half-and-half
1 stalk celery, diced
1 garlic clove, chopped
1/2 carrot, shredded
1/2 onion, diced
1 cup fresh spinach, chopped
1 tablespoon olive oil
1 teaspoon thyme
salt and pepper
16 ounces potato gnocchi
1 tablespoon cornstarch (optional)

Steps:

  • Saute the onion, celery, garlic, carrot in oil over medium heat until onion is translucent.
  • Add chicken, chicken stock, half and half, salt and pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes, then turn down to a simmer for 10 minutes.
  • Add spinach and cook for another 1-2 minutes until spinach is wilted.
  • (Heat to boiling and add cornstarch dissolved in 1-2 Tbsp water at this point if you want a thicker soup.).
  • Ladle into bowls and serve!

  • In a Dutch oven, brown chicken in 2 tablespoons butter. Remove and keep warm. 1 teaspoon sugar

2 cups frozen peas (8 ounces)

Steps:

  • Put chicken broth, garlic, butter and sugar in a large saucepan over medium-low heat, bring it to a simmer, and cook, uncovered until the garlic is tender, about 2 minutes. 1 cup whipping cream
1/4 cup basil pesto
1 lb prepared gnocchi
3 cups shredded cooked chicken
1/4 cup chopped fresh parsley
2 teaspoons lemon juice

Steps:

  • In a large pot, melt butter. Add onion and sauté until softened. Add stock, salt and pepper; bring to a boil.
  • Stir in cream and pesto; bring to a simmer, stirring often. Do not let boil.
  • Add gnocchi and simmer 3 minutes. Add chicken, parsley and lemon juice. Taste and adjust seasoning with salt and pepper.
  • Serve garnished with parsley.

8 ounces boneless skinless chicken breasts, cut into cubes
1 tablespoon vegetable oil
1 small onion, diced
1 carrot, diced
1 stalk celery, diced
2 garlic cloves, minced
1 teaspoon dried oregano
1 pinch salt
1 pinch black pepper
1 bay leaf
1 (900 ml) package chicken broth
1 (16 ounce) package gnocchi
1 cup spinach leaves, chopped
1/2 teaspoon lemon rind, grated
2 teaspoons lemon juice
2 teaspoons extra virgin olive oil
1 garlic clove, minced

Steps:

  • In a large saucepan, heat the oil over medium heat.
  • Fry the chicken, onion, carrot, celery, garlic, oregano, salt, pepper and bay leaf, stirring occasionally, until the onion is softened, about 5 minutes.
  • Add the chicken broth and 1-1/2 cups water; bring to a boil.
  • Reduce the heat to medium; cover and simmer for 10 minutes.
  • Add the gnocchi; simmer, uncovered, until the gnocchi float to the top and are firm to the touch, about 5 minutes.
  • Discard the bay leaf.
  • To make the gremolata, combine in a bowl the spinach, lemon rind and juice, oil and garlic.
  • Sprinkle onto the bowls of soup.

2 tablespoons olive oil
1 pound chicken tenders
2 tablespoons pesto
1 pinch garlic powder, or to taste
salt and ground black pepper to taste
2 cups chicken broth
1 medium onion, diced
1 medium green bell pepper, diced
3 medium carrots, sliced
3 tablespoons unsalted butter
½ cup all-purpose flour
4 cloves garlic, crushed
1 teaspoon dried oregano
¼ teaspoon dried sage
2 cups milk, or more as needed
1 (17.5 ounce) package potato gnocchi
6 large fresh basil leaves
3 cups fresh spinach

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), add oil, and select Saute function. Add chicken, pesto, garlic powder, salt, and pepper to the hot pot, then pour in chicken broth.
  • Place onion, bell pepper, and carrots on top of chicken and season with salt and pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Meanwhile, melt butter in a skillet over medium heat and cook until golden. Stir in flour until mixture thickens. Add garlic, oregano, and sage while continuously stirring, as a roux burns fast. Slowly pour in 2 cups of milk, stirring until all clumps are gone and sauce it thick, adding more milk as needed.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
  • Remove chicken from the Instant Pot®, let cool for 5 minutes, and dice into small cubes.
  • While you are waiting for the chicken to cool, add gnocchi, basil, and roux mixture to the Instant Pot®. Close and lock the lid. Select low pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 to 15 minutes for pressure to build.
  • Slice spinach into strips; add to the cooker with chicken. Mix for 2 minutes to heat through before serving; the heat from the soup will cook the spinach quickly.

Steps:

  • Melt butter in a large heavy saucepan.
  • Add onions, celery, carrots, garlic and sauté until soft.
