I frequently prepare this fabulous, filling salad for supper.

1 can (8 ounces) unsweetened sliced pineapple
3 tablespoons canola oil
2 tablespoons light soy sauce
1 tablespoon white vinegar
1 tablespoon honey
1/4 teaspoon ground ginger
1/4 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (1 pound)
1/2 to 1 teaspoon black pepper
5 cups torn salad greens
1 small green pepper, julienned
1 small sweet red pepper, julienned
1 cup sliced fresh mushrooms
1 small onion, sliced into rings

Steps:

  • Drain pineapple, reserving 2 tablespoons juice. In a small bowl, combine the juice; oil, soy sauce, vinegar, honey, ginger and cayenne. Brush some over pineapple slices; set aside. , Sprinkle both sides of chicken with pepper; grill or broil for 4-5 minutes on each side or until a thermometer reads 170°. Slice into strips. , Grill or broil pineapple, turning to brown both sides, for 2-3 minutes or until heated through. In a large bowl, toss the greens, peppers, mushrooms and onion. Top with chicken and pineapple; or arrange on four plates. Drizzle with remaining dressing.

2 teaspoons plus 1 tablespoon low-sodium soy sauce
1 teaspoon plus 2 tablespoons vegetable oil
4 teaspoons minced garlic
4 teaspoons minced peeled fresh ginger
12 ounces skinless boneless chicken breast halves or chicken tenders, cut crosswise into 1/2-inch strips
2 3/4 cups water
1 1/2 cups basmati rice or long-grain white rice
6 tablespoons fresh lime juice
1 cup cubed peeled pineapple
1 kiwi, peeled, cubed
3/4 cup thinly sliced green onions
1/2 cup chopped red bell pepper
4 large curly lettuce leaves

Steps:

  • Mix 2 teaspoons soy sauce, 1 teaspoon oil, 2 teaspoons garlic and 1 teaspoon ginger in medium bowl. Add chicken and toss to coat. Let stand 30 minutes.
  • Meanwhile, bring 2 3/4 cups water to boil in heavy medium saucepan. Add rice; return to boil. Reduce heat to medium-low, cover and simmer until rice is tender and water is absorbed, about 15 minutes. Uncover; let stand until cool.
  • Sprinkle chicken with salt and pepper. Heat large nonstick skillet over high heat. Add chicken with marinade to skillet and sauté until golden brown and cooked through, about 4 minutes. Cool.
  • Whisk lime juice, 1 tablespoon soy sauce, 2 tablespoons oil, 2 tablespoons garlic and 3 teaspoons ginger in large bowl. Mix in rice, chicken, pineapple, kiwi, 1/2 cup green onions and bell pepper. Season with salt and pepper. (Can be made 6 hours ahead. Chill. Let stand up to 2 hours at room temperature before continuing.
  • Line bowl with lettuce leaves. Spoon salad into bowl. Sprinkle with remaining 1/4 cup green onions and serve.

1 (8 ounce) can pineapple chunks
1 apple
2 tablespoons raisins (optional)
1/2 cup cheddar cheese

  • Boil Macaroni till cooked, set aside in fridge as you are preparing the following ingredients.
  • dice chicken breast into cubes.
  • dice pineapple (tidbit size).
  • peel and dice apple.
  • dice cheddar cheese.
  • mix raisins along with the cooked macaroni and all diced ingredients in a large bowl, stir in enough mayonnaise to bind all ingredients together as you don't want your salad too fattening and too creamy.

6 (6-ounce) chicken breasts, boneless and skinless
Salt and pepper
3 tablespoons olive oil
2 whole pineapples, peeled, cored, and sliced into 3/4-inch slices
3/4 cup walnut oil
2 tablespoons chopped chervil
1 cup minced celery
1/2 cup minced red onion
1 cup chopped roasted walnuts
6 to 8 large nice Bibb lettuce leaves, for serving
1 tablespoon finely chopped parsley
1 quart vegetable oil
10 square wonton wrappers, cut in 1/4-inch strips
2 teaspoons sesame oil

Steps:

  • Preheat the grill. Season the chicken with salt, pepper, and 1 1/2 tablespoons of olive oil. Place the chicken on the grill and cook for about 4 minutes on each side, or until cooked through and nicely marked by the grill. Brush the pineapple slices with the remaining olive oil and season lightly with salt and pepper. Place the pineapple slices on the grill and cook for 1 to 2 minutes on each side, or until the fruit is slightly softened and nicely marked by the grill. Remove from the grill and cool. Reserve 4 slices of the pineapple and dice the rest of the fruit. Dice the cooled chicken. In the bowl of a food processor, add the 4 reserved slices of fruit. Process until mostly smooth. While the processor is still running, add the walnut oil in a steady stream until combined and emulsified. Stir in the chervil and season the vinaigrette with salt and pepper. In a mixing bowl, toss the diced chicken, pineapple, red onions, celery, and walnuts with the dressing. Cover the salad and refrigerate for 1 hour.
  • Heat the vegetable oil in a non-reactive and heavy-bottomed pot until 350 degrees F. Add wontons slowly to prevent the oil from bubbling over. Fry the wontons for 30 seconds or until crispy. Drain on paper towels and season with salt and sesame oil.
  • Serve chicken salad on top of Bibb lettuce leaves and garnish with chopped parsley and fried wontons.

1 small fennel bulb (3/4 cup)
1 large pineapple (1 1/2 cups)
8 ounces skinless, boneless chicken
8 ounces fresh corkscrew pasta
8 large black Italian, Greek or French olives
1 tablespoon grated onion
1 teaspoon anchovy paste
1 teaspoon dry mustard
1 teaspoon Dijon mustard
4 teaspoons Worcestershire sauce
1/2 cup plain nonfat yogurt
1 teaspoon raspberry or balsamic vinegar
1 bunch arugula
Freshly ground black pepper

Steps:

  • If using a broiler, turn it on.
  • For the pasta, bring water to boil in a covered pot.
  • Wash, trim and chop fennel finely and place in large serving bowl.
  • Cut pineapple into small pieces. You will need about 3/4 of the pineapple to make 1 1/2 cups. Add to fennel.
  • If using a stove-top grill, prepare. Grill or broil chicken until it is brown on both sides, about 10 minutes, depending on thickness of pieces.
  • Cook pasta according to package directions.
  • Cut up olives and grate onion; add to bowl along with anchovy paste, mustards, Worcestershire sauce, yogurt and vinegar.
  • Wash, trim and dry arugula.
  • When chicken is cooked, remove and cut into julienne strips; add to bowl.
  • Drain pasta and add to bowl. Season with pepper.
  • Arrange arugula on two serving plates and top with chicken salad. Add two slices of crusty French or Italian bread.

  • Mix all of the ingredients together and pour over desired salad, pasta or fruit. It's also great over freshly sliced cucumbers, zucchini, peaches, pears, or apples. Toss and chew!

Lucky for us, we found a great recipe in this month's issue of Cooking Light that not only provided something light and healthy, but provided proteins (chicken) that we essentially need in order to call it a meal. Here is our spin on this recipe. As with most recipes that we find online or in magazines, we do some tweaking to fit our eating style.

1 pineapple cut in half insides out.
1 1/2 c turkey or chicken cooked cut into squares
instead of that you can use1 1/2 cans chicken drained
1 c mayonaise to moisten
1 Tbsp sour cream
2 Tbsp cranberries
1/4 c mandarin oranges drained
1/2 c cashews salted or almonds
1/4 c pineapple drained
2 green onions chopped small
1/4 c diced celery small pieces
1/2 c green or red grapes cut in half
1/2 tsp lemon juice
dash pepper, salt, tabasco
coconut sprinkles on top

Steps:

  • 1. Start with a pineapple the largest you can find. The one I found in Utah was pretty small.
  • 2. Slice a pineapple in half. Cut out all the insides of the pineapple.
  • 3. Take a bowl and put mayonaise, lemon juice, and sour cream and mix together. Put in the seasonings a dash of tabasco sauce optional.
  • 4. Use1 1/2 cups of chicken or turkey and place in the bowl with mayonaise. Add the fruit, nuts, mandarins, and coconut. Mix together your done!

I had left over grilled chicken and some pineapple salsa, so I threw these things together. You can use rotisserie chicken and/or peach salsa instead. Eliminate the tequila if you don't want to use alcohol. Prep time includes marinating the pineapple.

2 Tbsp tequila
2 Tbsp lime juice, divided
1/2 tsp brown sugar
1 Tbsp coconut oil (or other oil)
1/2 c red onion, finely chopped
1/4 c poblano pepper, finely chopped
1/4 c cilantro, minced
1 Tbsp grape seed oil
1/4 tsp garlic salt, or to taste
1/8 tsp freshly ground black pepper
12 oz chicken breast, cooked
10 oz fresh spinach (about 2-3 cups per person)
your favorite vinaigrette dressing

Steps:

  • 1. For Pineapple Salsa: marinade pineapple in a small bowl with the tequila, half the lime juice and the brown sugar for at least 1/2 hour.
  • 2. Heat skillet with coconut oil, add pineapple. Saute on medium-hot until pineapple has browned a bit, turning so each side gets browned. Remove from pan.
  • 3. Mix cooled pineapple, onion and pepper together in a small bowl. Add cilantro, olive oil, the rest of the lime juice, salt and pepper.
  • 4. If you don't have left-over chicken, pan-fry or grill the chicken, seasoned with salt and pepper while pineapple is marinating.
  • 5. Dice or shred chicken into bite-sized pieces.
  • 6. For the salad: Divide spinach between 4 large salad bowls. Top with chicken and pineapple salsa. Drizzle each portion with vinaigrette.

12 ounces boneless skinless chicken breast halves or 12 ounces chicken tenders, cut crosswise into ½ inch wide strips
2 3/4 cups water
1 1/2 cups basmati rice or 1 1/2 cups long-grain rice
6 tablespoons fresh lime juice
1 cup cubed peeled pineapple
1 kiwi, peeled,cubed
3/4 cup thinly sliced green onion
1/2 cup chopped red bell pepper
4 large curly lettuce leaves

Steps:

  • Mix 2 tsps soy sauce, 1 tsp oil, 2 tsps garlic and 1 tsp ginger in medium bowl.
  • Add chicken and toss to coat.
  • Let stand 30 minutes.
  • Meanwhile, bring 2 ¾ cups water to boil in medium saucepan.
  • Add rice; return to boil.
  • Reduce heat to medium-low, cover and simmer until rice is tender and water is absorbed, about 15 minutes.
  • Uncover; let stand until cool.
  • Season chicken.
  • Heat large nonstick skillet over high heat.
  • Add chicken with marinade to skillet and sauté until golden-brown and cooked through, about 4 minutes.
  • Cool.
  • Whisk lime juice, 1 tblp soy sauce, 2 tblsps oil, 2 tsps garlic and 3 tsps ginger in large bowl.
  • Mix in rice, chicken, pineapple, kiwi, ½ cup green onions and bell pepper.
  • Season to taste.
  • Line bowl with lettuce leaves.
  • Spoon salad into bowl.
  • Sprinkle with remaining green onion and serve.

1 tablespoon cornstarch
1/2 teaspoon salt
1/4 cup unsweetened pineapple juice
1/4 cup chicken broth
2 tablespoons plus 1-1/2 teaspoons white vinegar
1 tablespoon reduced-sodium soy sauce
1 teaspoon canola oil
SALAD:
1 pound boneless skinless chicken breast, cut into 1/2-inch strips
2 teaspoons reduced-sodium soy sauce
1/2 teaspoon minced fresh gingerroot
2 teaspoons canola oil
1 medium cucumber, quartered, seeded and thinly sliced
1 large red onion, quartered and thinly sliced
1 celery rib, thinly sliced
Lettuce leaves, optional
5 pineapple slices, halved
2 tablespoons sesame seeds, toasted

Steps:

  • In a large saucepan, combine the sugar, cornstarch and salt. Gradually add the pineapple juice, broth, vinegar, soy sauce and oil until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cover and refrigerate., In a large bowl, toss chicken with soy sauce and ginger. In a large nonstick skillet, saute chicken in oil until no longer pink. Remove from the heat and allow to cool. Combine the cucumber, onion, celery and chicken. , Pour chilled sauce over chicken; toss to coat. Just before serving, line salad plates with lettuce if desired. Arrange chicken salad and pineapple over lettuce. Sprinkle with sesame seeds.

Peppered Chicken, Pineapple and Arugula Salad image

2 tablespoons olive oil
2 skinless boneless chicken breast halves (about 12 ounces total)
2 teaspoons ground black pepper
4 1/4-inch-thick rounds fresh pineapple
1/4 cup dry white wine
1/4 cup plus 3 tablespoons purchased citrus vinaigrette
1 1/2 tablespoons chopped fresh basil
4 cups (packed) fresh arugula

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Sprinkle chicken on each side with salt and 1/2 teaspoon pepper. Sauté until cooked through, about 5 minutes per side. Transfer to plate. Sprinkle pineapple with salt and generously with pepper on both sides. Add to same skillet and sauté until lightly browned, about 1 minute per side.
  • Transfer to plate with chicken. Remove skillet from heat. Add wine to same skillet; stir, scraping up any browned bits. Stir in 1/4 cup vinaigrette and basil. Season with salt and pepper.
  • Place arugula in medium bowl. Add remaining 3 tablespoons vinaigrette; toss to coat. Divide salad between 2 plates. Slice each chicken breast crosswise into 4 slices. Arrange 4 slices atop each salad. Arrange 2 pineapple slices on each plate. Pour pan juices over salads and serve.

ASIAN CHICKEN AND PINEAPPLE SALAD

Asian inspired flavors are a nice complement to left-over chicken. Adding pineapple brought a level of coolness to a luncheon salad competing with the summer heat. I put it together early in the morning when it was a little cooler, over night would work, too.

1 c cut-up rotisserie chicken or chicken breast
1 c pea pods, trimmed and blanched
3 oz linguini, cooked and cooled
1/4 c sweet onion, minced
1 c pineapple, cut up
1 Tbsp cashews
cilantro, to garnish
DRESSING
1/2 c mayonnaise, light
1/4 tsp chili oil (optional)
1 tsp sesame oil
1 tsp soy sauce
1/2 Tbsp rice vinegar
garlic salt, to taste

Steps:

  • 1. Cook pasta in bottom of pot while blanching the pea pods in strainer set on top. Remove and cool when peas are tender crisp. Finish cooking pasta, drain and rinse in cold water.
  • 2. Make the dressing. If too thick, add more vinegar. Set aside. Season to taste with a little garlic salt, if desired.
  • 3. Cut up chicken, onions, pineapple. Cut pea pods diagonally. Mix together in serving bowl along with pasta. Stir in dressing.
  • 4. Sprinkle some cashews and cilantro on top to serve.

4 plum tomatoes, thinly sliced lengthwise
4 scallions (about 1/2 cup), thinly sliced
