SLOW COOKER ROAST LAMB LEG WITH GRAVY



Slow Cooker Roast Lamb Leg with Gravy image

Recipe video above. The easiest, most succulent roast lamb you'll ever have! This is not the carving sort of lamb, you can just tear the meat off using tongs.

2.0 kg / 4 lb lamb leg, bone in ((Note 1))
1 tsp salt
black pepper
2 large garlic cloves (, minced)
1 1/2 tsp dried thyme OR rosemary ((or 2.5 tsp finely chopped fresh))
1 tbsp olive oil
2 cups / 500ml beef stock ((or chicken) (Note 2))
1 sprig rosemary (, optional)
50 g / 3 tbsp butter
3 tbsp / 40 g flour ((any white))
2 cups / 500 ml braising liquid from slow cooker (, strained)
Salt and pepper

Steps:

  • Place lamb in slow cooker or on work surface. Sprinkle with salt, pepper, thyme or rosemary and garlic. Drizzle over oil, then rub on both sides.
  • Pour beef stock into slow cooker, add sprig of rosemary (if using).
  • SLOW COOK on low for 10 hours, or pressure cook on high for 1 hour 40 minutes. (See oven version here)
  • The lamb should be tender enough to pull off with tongs, but still holding together (just!). Carefully remove lamb from slow cooker and transfer to tray.
  • Drizzle lightly with oil (any). Bake at 200C/390F for 20 minutes or until browned. Remove and rest for 10 minutes before serving with gravy.

1 (3 pound) bone-in leg of lamb, or more to taste
½ cup red wine
1 lemon, juiced
2 tablespoons raw honey
2 tablespoons Dijon mustard
3 cloves garlic, minced
1 tablespoon apple cider vinegar
1 tablespoon dried rosemary
1 teaspoon dried thyme
1 teaspoon sea salt
½ teaspoon fresh cracked pepper

Steps:

  • Bring leg of lamb to room temperature, about 2 hours.
  • Pour wine into a slow cooker. Mix lemon juice, honey, mustard, garlic, vinegar, rosemary, thyme, sea salt, and pepper together in a bowl until a thick paste forms. Massage paste into the lamb using your hands; gently place into the slow cooker.
  • Cook on Low, without removing the cover, for 5 hours. An instant-read thermometer inserted near the bone should read 145 degrees F (65 degrees C). Let lamb rest for 15 to 20 minutes.

I wanted to cook some chicken and decided to add the leg of lamb since I only had one left. Then I realized I didn't have any chicken broth, so I improvised with canned tomatoes and artichokes. It turned out very Arabic-ish! Enjoy! (Please note that I don't know the exact size of the onion soup mix package. If you buy a box of the Lipton variety, for instance, just use one of the envelopes.)

5 chicken thighs, skin on, frozen is okay
1 frozen leg of lamb, from Costco, fully cooked and individually wrapped
2 ounces onion soup mix (1 envelope)
14 ounces crushed tomatoes (1 can)
14 ounces water-packed artichoke hearts (1 can)
5 5/8 ounces parmesan couscous

Steps:

  • Combine all ingredients except couscous in crock pot.
  • Cook on low 6 hours.
  • Cook on high for up to 1 additional hour.
  • Cook couscous according to package directions.
  • Remove chicken and lamb, cut meat up into bite sized chunks.
  • Discard skin and bones.
  • Put cut up meat back into crock pot with the soupy mixture.
  • Spoon over Parmesan couscous.

I love the flavour combination of lemon, garlic and herbs with lamb and this recipe fulfills my taste buds' expectations! This is not meant to be a roast, but is meant to be fall apart soft - almost like a Mediterranean flavoured "pulled lamb".

3 1/2 lbs leg of lamb, preferably bone out
1/4 cup olive oil
1/2 cup lemon juice
4 -6 garlic cloves, crushed
1 teaspoon dried oregano
1 teaspoon nutmeg
2 teaspoons dried mint
1 teaspoon sugar
1/4 cup white vinegar

Steps:

  • Using the crock pot's ceramic dish, mix together oil, lemon juice, garlic, oregano and nutmeg.
  • Immerse leg of lamb into the mixture and cook on high for 6- 8 hours until falling apart.
  • Just before removing meat from crock pot, mix together mint, sugar and vinegar in dish and microwave for 30 seconds until vinegar is hot enough to melt sugar.
  • Remove meat to serving platter and pull apart with forks until you have chunky shreds of meat.
  • Drizzle over mint vinegar and serve piping hot.

We adore Australian or New Zealand lamb, which has more flavor than the blander US lamb. So I was happy to have been given this simple recipe using a Crock-Pot®. Great served with mashed potatoes.

1 tablespoon extra-virgin olive oil
1 (4 pound) leg of lamb
1 large sweet onion, sliced
5 cups water
½ cup soy sauce
2 cloves garlic, minced
1 (1 ounce) package dry onion soup mix
2 tablespoons butter
2 tablespoons all-purpose flour

Steps:

  • Heat oil in a large skillet over medium-high heat. Add lamb and cook until outside is browned, about 5 minutes per side. Remove to a plate and add onion to the oil in the skillet. Saute until lightly browned, about 5 minutes.
  • Place onion in the bottom of a slow cooker pot and place the lamb roast on top. Mix water, soy sauce, garlic, and onion soup mix together and pour over the roast. Cook on Low for 8 to 10 hours.
  • Remove roast, cover lightly with foil, and let rest for 20 minutes before carving. Mix butter and flour into a paste. Add small pieces of this paste to the hot cooking liquid, mixing well to incorporate. Cook until sauce reaches desired thickness, 5 to 6 minutes.
  • Slice roast thinly and serve with gravy.
