CHICKEN, EGGPLANT, AND GREEN BEANS CASSEROLE

This was one of the very first casseroles I made for my family. It was originally a green bean casserole recipe, but since I wanted this to be an (almost) all-in-one dish I added the ground chicken and eggplant. I also added more spices. My 2-year-old twins loved it and so did my hubby! It's a hearty dish that we usually eat with brown rice and/or crusty bread. It's also good served with a side of fresh and crisp green salad with tangy dressing. This casserole may be too mushy for some people. If you don't want it to turn out that way, you can substitute the ground chicken with 1 1/2 to 2 cups of cooked and cubed boneless, skinless chicken breast.

2 tablespoons butter
2 tablespoons all-purpose flour
¾ cup sour cream
¼ cup diced onion
2 teaspoons garlic powder
1 teaspoon white sugar
1 teaspoon ground nutmeg
½ teaspoon salt
½ teaspoon ground black pepper
½ pound ground chicken
2 cups fresh green beans, chopped
1 eggplant, sliced into thin rounds
2 cups shredded Cheddar cheese
½ cup crumbled buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir flour into melted butter until smooth; cook for 1 minute. Stir sour cream, onion, garlic powder, sugar, nutmeg, salt, and pepper into the flour mixture until evenly mixed; add ground chicken and green beans. Cook and stir mixture until chicken is completely browned and the onion is translucent, 7 to 10 minutes.
  • Arrange eggplant rounds into the bottom of a 9x13-inch baking dish. Spread chicken and green bean mixture over the eggplant. Top with Cheddar cheese.
  • Mix cracker crumbs and 1 tablespoon melted butter in a bowl until crackers are evenly moistened; sprinkle over the Cheddar cheese.
  • Bake in preheated oven until top is golden and cheese is bubbly, about 30 minutes.

2 medium raw eggplants, peeled and cut lengthwise into 1/4-inch-thick slices
3/4 teaspoon salt
1 lb ground chicken breast
1 cup onion, sliced
2 medium garlic, clove(s) minced
2 tablespoons parsley, fresh, chopped
1/3 teaspoon dried parsley
1/3 teaspoon chives, dried
1/3 teaspoon dried tarragon
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon table salt
1/2 teaspoon black pepper, freshly ground
28 ounces canned diced tomatoes
2 tablespoons canned tomato paste
3/4 cup soyakaas grated parmesan style soy cheese

Steps:

  • Preheat oven to 350ºF. Coat a 9 X 13-inch baking pan with cooking spray.
  • Lay eggplant slices on paper towels and sprinkle tops with 3/4 teaspoon of salt. Let stand 20 minutes to draw moisture out.
  • Meanwhile, coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add chicken and cook until browned, breaking up meat as it cooks, about 5 minutes. Add onion and garlic and cook until onion is soft, about 3 minutes more. Add fresh parsley, dried herbs, cinnamon, nutmeg and 1/2 teaspoon each of salt and pepper, and stir to coat. Cook 1 minute, until herbs and spices are fragrant.
  • Add tomatoes and tomato paste and bring to a simmer. Reduce heat to low and simmer, uncovered, until sauce thickens, about 15 minutes. Transfer mixture to a large bowl and set aside.
  • Off heat, coat surface of same skillet with cooking spray and set pan over medium-high heat. Wipe salt from eggplant slices with paper towel and add eggplant to hot skillet. Cook, until golden brown, about 2 minutes per side.

2 pounds Skinless, Boneless Chicken Breasts
2 pounds Gravy (Italian Red Sauce)
1 whole Medium Size Eggplant
8 ounces, weight Shredded Mozzarella Cheese
1 cup Olive Oil, Plus 2 Tablespoons, Divided
1 cup Milk
1 cup Flour
1 teaspoon Garlic Powder
Ground Pepper To Taste

Steps:

  • First, you need your gravy! I usually make my own, but you may use any store brands: Prego, Ragu, Paul Newman, you get the picture! If using store-bought, get the flavor you like best. Get that heating up in a pot! If using a store brand, you might want to add some fresh garlic and a splash of red wine to spruce it up a bit. Wine makes everything better! Next you will peel the eggplant. Take the purple skin off with a knife. Slice the eggplant in 1/4-inch round slices. Spread the slices out on a kitchen towel. Lightly salt each slice and let it sweat for 5 minutes, then flip and repeat on the other side. Heat up about 1 cup of olive oil in a skillet. Take each slice of eggplant and dip into milk and then flour. Fry the eggplant about 4 slices at a time until slightly brown on each side, then place on a plate with paper towels to drain. In a separate skillet, add the remaining 2 tablespoons of olive oil and heat on medium high. Add the cubed chicken to the pan and cook until done. Season with garlic powder and pepper. Take a baking dish about 9 x 13 and spread about 1 cup of the gravy in the dish. Layer the bottom of the dish with half of the fried eggplant. Add the chicken on top of the eggplant and cover with half of the remaining gravy. Add half of the cheese and evenly spread over the gravy. Layer the remaining eggplant, gravy and cheese. Bake uncovered for 45 minutes at 350 degrees. Serve hot with salad and bread! Don't forget to eat any leftovers for breakfast. With most Italian dishes, it is usually even better the second day! Those Italians just know how to cook!

2 tablespoons parmesan cheese, shredded
1/2 teaspoon garlic powder or 1 garlic clove, minced
3/4 lb boneless skinless chicken breast, chopped
1 (14 ounce) can diced tomatoes
1 medium onion, chopped
1 large green bell pepper, chopped
1/2 cup mushroom, sliced
3/4 teaspoon dried Italian seasoning
1/4 teaspoon ground black pepper
1/4 cup reduced-fat mozzarella cheese, shredded

Steps:

  • Preheat the broiler.
  • Arrange eggplant slices in a single layer on a non-stick baking sheet.
  • Mist the slices with cooking spray and broil 4 inches from heat for 2 minutes (or until golden)
  • Turn the eggplant over and mist again. Sprinkle with Parmesan cheese and garlic. Broil for 1 minute (or until golden) and set aside.
  • Heat a non-stick skillet coated with cooking spray over med-high heat for 1 minute. Add the chicken and cook, stirring often, for 5 minutes or until no longer pink. Add the tomatoes with juice, onion, bell pepper, mushrooms, Italian seasoning, and black pepper, stirring to break up the tomatoes. Bring to a broil. Reduce heat to low and simmer for 5 minutes.
  • Preheat oven to 375.
  • Coat an 8 inch baking dish with cooking spray.
  • Arrange 6 eggplant slices in the bottom of the dish. Top with the chicken mixture. Arrange remaining 6 eggplant slices over the chicken mixture. Sprinkle with the mozzarella cheese.

1 large eggplant, breaded and fried
1 can(s) tomato sauce or your own
2 pkg chopped spinach, thawed and drained well
1 pkg dry pesto - reconstituted according to package
1 c grated mozzarella
1/2 c parmesan cheese

1 ½ cups elbow macaroni
3 eggplants, peeled and cut lengthwise into 1/4-inch thick slices
6 tablespoons olive oil, divided
2 teaspoons garlic powder
salt and ground black pepper to taste
1 onion, diced
1 (8 ounce) package sliced fresh mushrooms
6 chicken thighs
1 pinch garlic powder, or more to taste
½ cup Marsala wine
¼ cup water
¼ cup tomato paste
2 teaspoons fresh oregano leaves
2 leaves fresh sweet basil, chopped
1 sprig fresh rosemary, leaves stripped
¼ cup grated Parmesan-Romano cheese, or to taste

Steps:

  • Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain and transfer pasta to the prepared baking dish.
  • Place eggplant slices in a large pot of lightly salted water. Let eggplant soak to help remove some of the bitterness, about 30 minutes. Drain and pat eggplant strips with a paper towel to dry; transfer to a baking sheet. Brush eggplant with about 2 tablespoons olive oil; season with 2 teaspoons garlic powder, salt, and pepper.
  • Heat a large skillet over medium-high heat; saute eggplant until slightly browned, 5 to 10 minutes. Spread cooked eggplant over pasta.
  • Pour 2 tablespoons olive oil into the same skillet; saute onion and mushrooms until tender, 5 to 10 minutes. Spread onion mixture over eggplant layer.
  • Season chicken thighs with garlic powder, salt, and pepper to taste.
  • Pour remaining 2 tablespoons olive oil into the same skillet; cook chicken until browned, about 5 minutes per side. Arrange chicken on the onion layer.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour wine into the skillet, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add water, tomato paste, oregano, basil, and rosemary leaves; cook and stir until sauce is smooth and thickened, about 5 minutes. Add chicken to the sauce, cover skillet, decrease heat to low, and simmer while oven preheats, 5 to 10 minutes.
  • Arrange chicken atop the onion layer and pour sauce over chicken and vegetables. Cover dish with aluminum foil.
  • Bake in the preheated oven until chicken is no longer pink and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted in the thickest part of chicken should read 165 degrees F (74 degrees C). Sprinkle Parmesan-Romano cheese over chicken.
