These delicious tots are great as a side dish or as a game day appetizer. The potatoes crisp in bacon grease before being baked with Cheddar cheese for an easy bacony, cheesy treat.

6 slices bacon
1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
½ teaspoon garlic salt
2 cups shredded Cheddar cheese, divided
¼ cup sour cream
2 tablespoons chopped green onions

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Cook bacon in a large cast iron skillet over medium-high heat until crispy on both sides, about 10 minutes. Place on a paper towel-lined plate and set aside, keeping the bacon grease in the skillet.
  • Reduce the heat to medium and add potato nuggets to the skillet. Season with garlic salt and toss until evenly coated. Cook until the outsides are crisp, about 10 minutes, turning carefully with a spatula once or twice. Remove the skillet from heat.
  • Carefully remove 1/2 of the potato nuggets from the skillet and spread out remaining nuggets in a single layer. Top with 1/2 of the Cheddar cheese. Place remaining nuggets on top of the cheese and top with remaining cheese.
  • Transfer the skillet to the preheated oven and bake until nuggets are warmed through and the cheese is melted and starts to turn golden brown, about 10 minutes.
  • While the nuggets are baking, crumble the cooked bacon. Remove the skillet from the oven and top with crumbled bacon, sour cream, and green onions.

1 pound frozen Tater Tots®
1/4 cup half-and-half
1 1/4 cups shredded Mexican cheese blend
1 1/2 teaspoons cornstarch
3 tablespoons pico de gallo or chopped tomato
2 tablespoons fresh cilantro leaves
Sour cream, for topping

Steps:

  • Bake the Tater Tots® until very crispy, following the package directions.
  • Meanwhile, combine the half-and-half, 1 cup of the cheese, and the cornstarch in a small saucepan. Whisking constantly, cook over medium heat until melted and smooth, 3 to 4 minutes. Stir in the pico de gallo.
  • When the Tater Tots are done, transfer them an 8-inch cast-iron skillet. Preheat the broiler to high. Spoon the cheese sauce over the tots and sprinkle with the remaining 1/4 cup cheese. Broil until the cheese is bubbling and melted, about 1 minute. Top with the cilantro and a dollop of sour cream.

2 medium carrots (about 8 1/2 ounces), peeled, coarsely chopped
8 ounces cauliflower florets
5 tablespoons vegetable oil, divided
3/4 teaspoon kosher salt, divided
1/2 cup shredded Parmesan (about 1 ounce)
1/2 cup shredded sharp cheddar (about 1 ounce)
1 garlic clove, finely chopped
3 tablespoons chopped chives
1/4 teaspoon freshly ground black pepper
1 1/2 cups panko (Japanese breadcrumbs), divided
Nonstick vegetable cooking spray
1 cup all-purpose flour
3 large eggs
Ketchup, for serving

Steps:

  • Pulse carrots and cauliflower in a food processor (or grate carrot on smallest holes and cauliflower on largest holes of a box grater) until rice-like in texture. Transfer to a large heatproof bowl and toss with 1 Tbsp. oil and 1/4 tsp. salt. Cover with plastic wrap and microwave on high 3 minutes. Carefully remove plastic wrap and let cool slightly.
  • Meanwhile, mix cheeses, garlic, chives, pepper, 1/2 cup panko, and remaining 1/2 tsp. salt in a medium bowl. Stir in carrot mixture until well combined.
  • Spray a rimmed baking sheet with nonstick spray. Using your hands, roll tablespoonfuls of carrot mixture into tater-tot shapes. Transfer to prepared sheet, then chill at least 10 minutes.
  • Place flour in a shallow baking dish. Mix remaining 1 cup panko and 4 Tbsp. oil in another shallow dish. Lightly beat eggs in a shallow bowl. Working in batches, toss tots in flour, then dredge in egg, shaking off excess, then coat in panko mixture. Return to baking sheet and chill at least 10 minutes or up to 1 hour.
  • To Bake:
  • Arrange a rack in center of oven and preheat to 425°F. Set a wire rack inside a rimmed baking sheet. Spray with nonstick spray, then transfer tots to rack. Bake tots until deep golden brown and cheese is melted (check by piercing a tot with a paring knife), 22-25 minutes. Serve immediately with ketchup.
  • To Fry:
  • For extra-crispy tots, fill a large, deep-sided skillet with 1" vegetable oil and heat over medium to 350°F. Working in batches, fry tots, flipping halfway through, until golden brown and crispy, about 2 minutes per batch. Using a slotted spoon, transfer to a paper towel-lined platter or baking sheet. Serve immediately with ketchup.

  • Tot mixture can be formed but not breaded 1 day ahead; cover loosely with plastic and chill.

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Bring a pot of water to a boil. Add broccoli; boil until tender, about 5 minutes.

1/2 large head caulflower, coarsely chopped
1/3 cup reduced-fat sharp cheddar
1/4 cup coarsely grated Parmesan cheese
2 tablespoons almond flour
1/2 teaspoon Vege-Sal (or a slightly smaller amount of salt)
1/2 teaspoon Spike Seasoning (Probably optional, but it does add flavor. You can substitute another all-purpose seasoning blend that tastes good with cauliflower)
Fresh-ground black pepper to taste
1 egg

Steps:

  • Preheat oven to 400°F/200°C. Spray a Mini Muffin Pan with non-stick spray. Cut away the leaves of the cauliflower, but use most of the inner core part. Coarsely chop the cauliflower, place in a micro-wave proof bowl, cover with cling wrap, and microwave 2 minutes on high. (Microwaves can vary so you may need to experiment with the time, but the cauliflower should be just slightly soft.) Quickly take off the cling-wrap and let the steam escape, and if you see any water in the bottom of the bowl, put the cauliflower into a colander and let the water drain off. Put the steel blade in the food processor, add the cauliflower, and pulse until the cauliflower is finely chopped but still slightly chunky. (Be careful not to over process so you don't end up with cauliflower puree!) If there is any water in the food processor bowl, drain the cauliflower again in the colander. Put finely chopped cauliflower into a bowl and add the reduced-fat sharp cheddar, coarsely grated Parmesan, almond flour, Vege-Sal or salt, Spike Seasoning (if using), and fresh-ground black pepper. Stir until ingredients are well-combined. Add the egg and stir until the ingredients are mostly coated with egg. (You might be tempted to add another egg, but don't. You'll be surprised how well this sticks together.) Use a One Tablespoon Cookie Scoop or a steel one-tablespoon measuring spoon to scoop out rounded spoonfuls of the mixture and place it in the mini muffin pan. Bake 15 minutes.   • Season chicken with salt, pepper, and onion powder.

1 medium zucchini
1/4 cup finely chopped or grated onion
1/4 cup garlic & herb bread crumbs
1/4 cup grated Parmesan cheese
1 egg, beaten
Salt and pepper to taste
Ketchup, if desired

Steps:

  • Heat oven to 400° F. Spray cookie sheet with cooking spray. Grate or finely chop zucchini; squeeze out all of the excess water with a clean dish towel. In medium bowl, mix zucchini, onion, bread crumbs, Parmesan cheese, egg, and salt and pepper to taste. Mix until well blended. Shape about a tablespoonful of mixture into a small round log. Place on cookie sheet. Repeat to use all of mixture, placing 1 inch apart. Bake 18 to 22 minutes, turning halfway through bake time. Serve with ketchup.

3 green plantains
1 teaspoon salt
1 teaspoon pepper
1 teaspoon chili powder
4 slices mozzarella cheese
4 hot dogs, or other preferred sausage
oil, for frying

Steps:

  • Grate the green plantains into a large mixing bowl.
  • Add salt, pepper, and chili powder, and mix to combine.
  • Wrap one slice of cheese around a hot dog link and cut into fifths.
  • Take one tablespoon of your plantain mixture and encase one slice of the cheese-wrapped hot dog, shaping into a cylindrical "tot."
  • Repeat until all slices are covered and shaped, and place on a parchment-lined baking sheet. Freeze one hour.
  • In a large pot over medium-high heat, heat your oil to 375ºF (190ºC).
  • Drop four to five tots into the oil and fry until golden brown, about one to two minutes.
  • Place on a paper towel to drain excess oil.
  • Serve warm with your favorite dipping sauce!

1 sack frozen tater tots, any brand
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried rosemary
1 teaspoon hot pepper flakes
1/2 cup baby spinach or arugula, 2 handfuls of leaves
1/2 cup fresh basil, about 10 to 12 leaves
2 tablespoons pine nuts (pignoli), a palmful
1 small clove garlic, cracked from skin
Salt and pepper
2 rounded spoonfuls grated Parmigiano or Romano
1/4 cup extra-virgin olive oil, eyeball it
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 tablespoon butter
1/2 pound breakfast ham, chopped
8 large eggs
A splash half-and-half or milk
Salt and pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Open tots and pour 4 portions onto a nonstick cookie sheet. Sprinkle the tots with salt and dried seasonings and toss them around a bit to get the herbs to stick to the tots ¿ as the frost starts to melt the flavorings will set into place. Bake the tots until crisp, about 12 minutes.
  • Combine ingredients for green sauce in food processor and process until sauce forms; you are making a pesto sauce for the eggs. Set pesto aside and reserve.
  • Heat a nonstick skillet over medium-high heat. Add extra-virgin olive oil and butter to pan, then add the chopped ham and cook to lightly brown at edges, 3 minutes or so.
  • Remove the tots from the oven and switch the broiler on to toast your bread.
  • Beat eggs and splash of half-and-half or milk with salt and pepper. Add eggs to the ham in the skillet and scramble them up with the ham to desired doneness and remove from heat.
  • Toast bread under hot broiler, 30 seconds on each side. Rub with cracked garlic then spread with butter and top with a sprinkle of Parmesan, the diced mozzarella and ground black pepper.
  • In a microwave-safe bowl, heat the tomato sauce, oregano, crushed red pepper, and the garlic clove from the toast. Cover with plastic wrap and heat for 2 minutes. Serve as dipping sauce for the tots.
  • Stir the pesto into the ham and eggs, making them "green", and serve with garlic-cheese toast on the side.

3 cups sharp cheddar cheese, shredded, save back 1 cup for top of casserole
1 pint sour cream
1 (10 3/4 ounce) can cream of chicken soup
1 teaspoon salt
1/2 teaspoon pepper
chopped ham (optional)
bacon bits (optional)
green pepper (optional)
1 cup crushed corn flakes
1/2 cup melted butter

  • Mix together.
  • Put on top casserole.
  • Try different types of cheese.
  • Mix well and place in a greased casserole dish.
  • Bake 350F degree 30 minutes.
  • Add cheese, bake 30 more minutes!

1 medium head of cauliflower
2 Tbl heavy cream
2 Tbl butter
1/3 cup shredded sharp cheddar
4 egg whites
salt & pepper to taste
oil for frying

Steps:

  • Clean and trim the cauliflower, adding the florets to a microwave safe bowl. Add the cream and butter to the bowl. Microwave for 5 minutes. Add the cauliflower and cheese to a magic bullet or food processor and blend until still chunky - kind of like a cooked oatmeal consistency. Season with salt and pepper. Chill for at least half an hour. Whip the egg whites to a stiff peak. Fold 1/3 of the egg whites into the cauliflower mixture to lighten it up. Then fold the cauliflower mixture into the rest of the egg whites and gently mix until combined. For best results, chill for another half hour or they won't hold their shape as well. Fit a pastry bag with a round or star tube with about a 3/4 inch opening. Spray the inside of the bag with nonstick spray. Gently squeeze out 1 inch sections onto a greased cookie sheet, cutting with a butter knife as you go. When finished, bake in a 375 degree oven for 10-12 minutes (or longer if you're skipping the frying) until puffed and slightly browned. Remove from the oven and serve - or heat 1/4 inch of oil in a saute pan and when it's very hot add the tots. It doesn't need long, a minute per side to turn them golden brown and crispy. Serve immediately.

1 lb ground beef
1 (15 ounce) can green beans
1 (10 3/4 ounce) can campbell cheddar cheese soup
8 ounces frozen tater tots (more if desired)
1 cup shredded cheddar cheese (optional)

Steps:

  • Cook ground beef and drain grease.
  • Pour ground beef in bottom of ungreased 8x8 pan.
  • Drain green beans and layer on top of ground beef.
  • Smooth Cheddar Cheese Soup over the green beans.
  • Place tater tots strategically to cover entire casserole.
  • If desired, sprinkle shredded cheddar cheese over tater tots.
  • Bake in the oven using the directions from the tater tot bag.
