CHEESY QUINOA AND BROCCOLI PATTIES

Cheesy Quinoa and Broccoli Patties image

These Cheesy Quinoa and Broccoli Patties are delicious; crispy on the outside and soft and chewy on the inside! You can add in your favorite veggies, change up the cheese to taste, whatever suits your fancy. Enjoy! This is taken directly from Shopgirl.

Provided by Sharon123

Categories     Grains

Time 45m

Yield 6 serving(s)

Number Of Ingredients 10

1/2 cup quinoa
1 cup water
5 large broccoli florets
1 small onion, diced (I like sweet red onion)
1/4 cup breadcrumbs
1/4 cup shredded cheese (cheddar, parmesan, whatever you like)
1 large egg
salt
pepper
olive oil

Steps:

  • First, cook your quinoa according to the directions on the package. I cooked mine by combining 1/2 cup of quinoa with 1 cup of boiling water, then letting it come to a boil, and simmering, covered for about 15 minutes. Once the quinoa has absorbed all the water (this shouldn't take longer than 15 minutes), put it on a plate and let it cool completely.
  • Next, saute your diced onion until it's soft and translucent. Set aside and let cool completely. Cook your broccoli until it has softened a little bit, then let it cool as well. Once the broccoli has cooled completely, dice it into small pieces.
  • Now that you have everything ready, in a large bowl, mix all the ingredients together, leaving the egg until the end. Mix well so you have a smooth, wet mixture that will allow you to make patties that will stick together.
  • Heat some olive oil in a pan, and make your patties. I made each using 1/4 cup of the mixture. Just make a ball out of the mixture, and squash it down a little bit. Cook each patty for about 7 - 8 minutes on each side on medium heat. You want the patty to develop a crust, but not to burn, so watch them carefully. Let cool for a couple of minutes before eating.
  • Enjoy!

Cheesy Cauliflower, Kale and Quinoa Soup image

You've never had cheesy cauliflower soup like this! Its powerhouse partners in deliciousness are kale, quinoa and cut-up pieces of bacon.

Provided by My Food and Family

Categories     Home

Time 30m

Yield 16 servings, 1 cup each

Number Of Ingredients 11

5 slices OSCAR MAYER Natural Smoked Uncured Bacon, cut into 1-inch pieces
3 large carrots, sliced into thin discs
5 green onions, sliced thin
8 cups high-quality chicken stock
4 cups fresh cauliflower, diced into bite-size pieces
2 cups fresh kale, finely chopped
3 cups cooked quinoa
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cut into 1-inch cubes
1 cup KRAFT Shredded Sharp Cheddar Cheese
1 cup heavy whipping cream
Optional Garnish: KRAFT Shredded Sharp Cheddar Cheese and sliced green onions

Steps:

  • Brown bacon in the bottom of a heavy stock pot.
  • When bacon is crisp, don't bother draining. Add the carrots and onions to the stock pot and continue cooking 2-3 minutes. You may note a few bits of the bacon or veggies clinging to the bottom of the pot.
  • These will come loose when the chicken stock is added and deglazes the pan.
  • Add the chicken stock and bring the pot to a boil, stirring to loosen anything that may be sticking at the bottom of the pan.
  • Once everything is moving freely, add the cauliflower and kale and reduce heat to a simmer.
  • Simmer for 15 minutes and then add the quinoa, cream cheese, cheddar and cream.
  • Stir until cheeses have melted and all ingredients are completely incorporated. Remove from heat.
  • Serve with optional garnishes of additional shredded cheese and sliced green onions.

CHEESY QUINOA PILAF WITH SPINACH

Cheesy Quinoa Pilaf with Spinach image

This creamy pilaf incorporates the fluffy, nutty-flavored grain, quinoa, with a decadent and delicious goat cheese gouda. This has an amazing flavor and texture. Try serving with steamed salmon. I think this would work well with pine nuts as well as a variety of other cheeses. Try regular goat, Parmesan, blue, etc.

CHEESY MEATLOAF WITH GREEN QUINOA

Cheesy Meatloaf with Green Quinoa image

These cheesy little meatloaves are deceptively low in fat because we waited until the last minute to add the cheese, so it melts all over and is in every bite. Because we used super lean ground beef and turkey, we splurged on satisfying full-fat cheese.

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 16

1 cup quinoa
3 cups baby spinach
1 cup loosely packed fresh cilantro leaves
1 large clove garlic
12 ounces extra-lean ground beef
8 ounces 99-percent fat free ground turkey
1/4 cup 2-percent milk
3 tablespoons whole wheat breadcrumbs
4 teaspoons Worcestershire sauce
1 teaspoon chile powder
1 large egg
Kosher salt and freshly ground black pepper
4 teaspoons red wine vinegar
2 small plum tomatoes, cut into 12 slices
5 tablespoons shredded Cheddar
12 small slices of watermelon, for serving (8 ounces)

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Rinse the quinoa a few times in a fine mesh strainer. Bring a medium pot of water to a boil. Add the quinoa and cook until tender, 10 to 15 minutes. Strain the quinoa and rinse under cold water, then set aside to drain and dry out.
  • Meanwhile, combine the spinach, cilantro and garlic in a food processor and pulse until finely chopped. Transfer one-third of the mixture to a medium bowl along with the ground beef and turkey, milk, breadcrumbs, 2 teaspoons of the Worcestershire, the chile powder, egg, 1/2 teaspoon salt and some black pepper. Combine the mixture well with your hands.
  • Whisk together the remaining 2 teaspoons Worcestershire with 2 teaspoons of the vinegar. Divide and pat the meat mixture into four even 1-inch-thick football shapes. Arrange on the prepared baking sheet. Top each with 3 slices of tomato and drizzle with some of the Worcestershire-vinegar sauce. Bake until the meatloaf reaches an internal temperature of 165 degrees F, 18 to 20 minutes. Drizzle with more Worcestershire-vinegar sauce and top each with cheese and continue to bake until melted, about 2 minutes more. Blot the bottom of each meatloaf on a paper towel to remove excess moisture.
  • Meanwhile, combine the quinoa, the remaining spinach mixture, the remaining 2 teaspoons vinegar and 1/2 teaspoon salt in a medium pot and stir, over medium-low heat, until warmed through, about 3 minutes. Divide the meatloaves, quinoa and watermelon slices among four dinner plates.
