- For the cakes: Place all ingredients, except for the oil, into a mixing bowl and stir together until well combined. Season with salt and allow the mixture to sit for 5 minutes.

- Bring water and quinoa to a boil in a saucepan. Add salt, black pepper, and garlic. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.
- Heat 1 tablespoon oil in a skillet over medium heat; add onion. Cook and stir until translucent, about 2 minutes. Transfer to a bowl. Add kale and spinach to hot skillet; cook and stir until tender, 2 to 3 minutes.
- Combine cooked quinoa, onions, kale, spinach, mozzarella cheese, bread crumbs, and flaxseed meal in a bowl; stir to combine. Add beaten egg; mix well.
- Preheat oven to 350 degrees F (175 degrees C). Oil a baking sheet.
- Form golf-ball-size portions of the quinoa mixture into patties. Place on the prepared baking sheet.

- First, cook your quinoa according to the directions on the package. I cooked mine by combining 1/2 cup of quinoa with 1 cup of boiling water, then letting it come to a boil, and simmering, covered for about 15 minutes. Once the quinoa has absorbed all the water (this shouldn't take longer than 15 minutes), put it on a plate and let it cool completely.
- Next, saute your diced onion until it's soft and translucent. Set aside and let cool completely. Cook your broccoli until it has softened a little bit, then let it cool as well. Once the broccoli has cooled completely, dice it into small pieces.
- Now that you have everything ready, in a large bowl, mix all the ingredients together, leaving the egg until the end. Mix well so you have a smooth, wet mixture that will allow you to make patties that will stick together.
- Heat some olive oil in a pan, and make your patties. I made each using 1/4 cup of the mixture. Just make a ball out of the mixture, and squash it down a little bit. Cook each patty for about 7 - 8 minutes on each side on medium heat. You want the patty to develop a crust, but not to burn, so watch them carefully. Let cool for a couple of minutes before eating.

- Cook rice according to package directions. Allow to cool until comfortable to handle.
- Stir in one egg, mozzarella cheese, Parmesan cheese, garlic powder, and black pepper. Mix until well blended.
- Place flour in a small bowl. Beat 2 eggs in a second bowl. Place bread crumbs in a third bowl.
- Divide rice mixture into 24 equal portions about the size of a golf ball. Roll each portion into a ball. Roll rice ball in flour. Place on baking sheet lined with parchment paper. (Mix will be sticky.)
- Dip each rice ball into the egg wash. Dredge in bread crumbs, and place rice balls back on baking sheet. Refrigerate 15 minutes.
- Give each rice ball another quick roll in your hands to tighten up and smooth out the surface.
- Heat oil to 375 degrees F in a large sauce pan.
- Cook rice balls in the hot oil in batches, about 4 per batch. Gently stir with spoon. Cook until rice balls are golden brown, about 2 to 3 minutes.
- Drain on paper-towel-lined plate or baking sheet. Salt lightly.
- Serve hot with heated marinara sauce.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a mini muffin tin with oil.
- Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Drain any excess liquid and let cool briefly.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 2 to 6 minutes.

- Brown bacon in the bottom of a heavy stock pot.
- When bacon is crisp, don't bother draining. Add the carrots and onions to the stock pot and continue cooking 2-3 minutes. You may note a few bits of the bacon or veggies clinging to the bottom of the pot.
- These will come loose when the chicken stock is added and deglazes the pan.
- Add the chicken stock and bring the pot to a boil, stirring to loosen anything that may be sticking at the bottom of the pan.
- Once everything is moving freely, add the cauliflower and kale and reduce heat to a simmer.
- Simmer for 15 minutes and then add the quinoa, cream cheese, cheddar and cream.
- Stir until cheeses have melted and all ingredients are completely incorporated. Remove from heat.
- Serve with optional garnishes of additional shredded cheese and sliced green onions.

These cheesy little meatloaves are deceptively low in fat because we waited until the last minute to add the cheese, so it melts all over and is in every bite. Because we used super lean ground beef and turkey, we splurged on satisfying full-fat cheese.

- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Rinse the quinoa a few times in a fine mesh strainer. Bring a medium pot of water to a boil. Add the quinoa and cook until tender, 10 to 15 minutes. Strain the quinoa and rinse under cold water, then set aside to drain and dry out.
- Meanwhile, combine the spinach, cilantro and garlic in a food processor and pulse until finely chopped. Transfer one-third of the mixture to a medium bowl along with the ground beef and turkey, milk, breadcrumbs, 2 teaspoons of the Worcestershire, the chile powder, egg, 1/2 teaspoon salt and some black pepper. Combine the mixture well with your hands.
- Whisk together the remaining 2 teaspoons Worcestershire with 2 teaspoons of the vinegar. Divide and pat the meat mixture into four even 1-inch-thick football shapes. Arrange on the prepared baking sheet. Top each with 3 slices of tomato and drizzle with some of the Worcestershire-vinegar sauce. Bake until the meatloaf reaches an internal temperature of 165 degrees F, 18 to 20 minutes. Drizzle with more Worcestershire-vinegar sauce and top each with cheese and continue to bake until melted, about 2 minutes more. Blot the bottom of each meatloaf on a paper towel to remove excess moisture.
- Meanwhile, combine the quinoa, the remaining spinach mixture, the remaining 2 teaspoons vinegar and 1/2 teaspoon salt in a medium pot and stir, over medium-low heat, until warmed through, about 3 minutes. Divide the meatloaves, quinoa and watermelon slices among four dinner plates.
