CHEESY LEEKS & HAM
A low-carb leek, ham and cheese meal in 25 minutes

Steps:
- Heat oven to 200C/fan180C/gas 6. Cook the leeks in a pan of boiling salted water for 4-5 mins or until just tender. Drain and cool under a cold tap to stop them from cooking any further, then drain again well and pat dry on kitchen paper.
- Wrap each leek in a slice of ham, then arrange, side-by-side, in a large baking dish. Mix the cheddar in a bowl with the Dijon mustard and crème fraîche, until well combined. Season to taste. Spread over the leeks, then bake for 15-20 mins until bubbling and golden brown. Serve at once with plenty of crusty bread to mop up the juices.

- Heat the oven to 220C/200C fan/gas 7. Tip the leeks into a steamer basket and steam for 6-8 mins until bright green and just becoming tender.
- Meanwhile, heat the butter and flour together in a saucepan, stirring until you have a thick paste. Add the milk, a splash at a time, stirring continuously until all the milk has been added. Cook for 2-3 mins more until the sauce has thickened enough to coat the back of a spoon. Stir in most of the Yeo valley Organic mature cheddar, the mustard and some seasoning.
- Fold the steamed leeks into the cheese sauce, then tip everything into an ovenproof baking dish. Scatter over the breadcrumbs, thyme and remaining cheese, then bake for 20 mins until golden, crisp on top and bubbling at the edges. Leave to stand for 5 mins before serving.

- Preheat the oven to 375°. Lightly grease/spray a 13x9-inch baking dish.
- In a skillet over medium heat, melt the butter; sauté the chopped leeks until they are tender. Place sautéed leeks into the bottom of the prepared baking dish.
- Evenly sprinkle 1 cup ONLY of Havarti and the parmesan cheese over the leeks.
- In a mixing bowl, combine the eggs, cream, tarragon, salt, pepper and paprika; whisk until well beaten.
- Pour the egg mixture into the baking dish over the cheese layer.
- Bake at 375° for 30 minutes or until set and lightly browned.
- Sprinkle with remaining 1/2 cup Havarti and bake an additional 5 minutes or until cheese is melted.

- Heat oven to 200C/fan 180C/gas 6 and boil the kettle. Place the leeks in a single layer in a large saucepan and add enough hot water from the kettle to cover. Bring to the boil, then cover and simmer for 5 mins until the leeks are just tender.
- Lay 2 slices of ham, overlapping, on a board, then sit 2 leek halves at one end. Wrap up, repeat with the other leeks, then place the parcels in a small ovenproof dish.
- Mix three-quarters of the cheese with the crème fraîche, then season and spoon over the parcels. Mix the remaining parmesan with the breadcrumbs and scatter over the top. Bake for 15 mins until the cheese is golden and bubbling. Serve with a green salad and crusty bread to mop up the sauce.

- Heat oven to 400°F. Grease 13x9-inch (3-quart) glass baking dish with softened butter.

- Heat oven to 350ºF.
- Cook macaroni as directed on package, omitting salt.
- Meanwhile, whisk flour and chicken broth until blended. Cook leeks, pancetta and garlic in large deep skillet on medium heat 8 min. or until white parts of leeks are crisp-tender, stirring frequently. Add cream cheese spread and chicken broth mixture; mix well. Cook 2 to 4 min. or until cream cheese is completely melted and sauce is thickened, stirring constantly. Add shredded cheese; cook and stir 2 to 3 min. or until melted.
- Combine cracker crumbs and butter.
- Drain macaroni. Add to leek mixture in skillet; mix lightly. Spoon into 3-qt. casserole sprayed with cooking spray; sprinkle crumb mixture.

CHEESY LEEKS
Steps:
- 1. Slice the leeks on an angle, about 2cm thick. Put a large casserole-type pan (ideally one you'd be happy to serve in) on a medium heat and add a drizzle of oil, the butter, thyme and garlic. As things begin to bubble and fry, stir in the leeks. Leave to cook, and check on it every few minutes to stir and make sure it doesn't catch. 2. At this point, you have two choices: one is good, one is great. You can either stir the rest of the ingredients into the leeks then put into the oven to cook at 180C/gas 4 for 45 minutes uncovered, or, if you want the sweetest leeks in the world (and I think you do), turn the heat under the pan down a little and cook the leeks for about 35 minutes, stirring every now and then so they get soft and intensely gorgeous. 3. Season, then spoon it all into a dish, or leave in the pan. Stir in the cream and splash of water, sprinkle over the cheddar and parmesan, then pull the brie into parts and bomb those on top. Pop in the oven 20 minutes before you'll serve dinner and cook for 15 minutes, till golden and bubbling.
