I have been wanting to do something with hominy for awhile now, so at work today while waiting for phone calls, I concocted this recipe. I think it will be very good. Please try it and tell me what you think!

2 can(s) (15.5 oz. ea.) golden or white hominy
6 slice bacon, cooked and crumbled
1 large shallot, sliced
1 clove garlic, minced
4 Tbsp (1/2 stick) butter
1/2 tsp salt
1/4 tsp pepper
4 Tbsp all purpose flour
1 c half and half - or -
1 can(s) (12 oz.) evaporated milk
1 1/2 c shredded cheddar cheese, divided

Steps:

  • 1. Drain and rinse hominy; set aside.
  • 2. Cook bacon and crumble; set aside.
  • 3. Peel and slice shallots. Peel and mince garlic.
  • 4. In a medium saucepan melt butter over medium-high heat. Add the sliced shallots, minced garlic, salt and pepper and cook for 2 or 3 minutes, stirring frequently. Stir in the flour and blend well.
  • 5. Add the half-and-half or milk gradually, and stir constantly until mixture begins to thicken, about 5 minutes.
  • 6. Blend in 1 cup of the cheese and stir until melted.
  • 7. Add the hominy and mix thoroughly. Place the mixture into a lightly buttered 2-qt. baking dish. Bake, covered, in a preheated 350-degree oven for 30 minutes.
  • 8. Remove cover and sprinkle on the crumbled bacon, followed by 1/2 cup cheese.
  • 9. Continue baking, uncovered, for 15 minutes or until cheese is melted. Serve immediately.

3 tablespoons butter or 3 tablespoons margarine
1/2 cup green pepper, chopped
1/4 cup onion, finely chopped
3 tablespoons all-purpose flour
1 1/2 cups milk
1 cup cheddar cheese, shredded
1/2 teaspoon salt
1/2 teaspoon dry mustard
1 teaspoon hot sauce
15 1/2 ounces hominy, rinsed and drained
1/2 cup ripe olives, drained
1/2 cup soft breadcrumbs
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • Melt the 3 tablespoons butter in a heavy saucepan over low heat.
  • Add the green pepper and onion; saute until tender.
  • Add the flour and cook 1 minute, stirring constantly.
  • Gradually add the milk; cook over medium heat, stirring constantly, until thickened and bubbly.
  • Add cheese, salt, mustard, and hot sauce; stir until cheese melts.
  • Stir in the hominy and olives.
  • Spoon mixture into a lightly greased 1-1/2 quart casserole.
  • Combine breadcrumbs and melted butter; sprinkle over hominy mixture.
  • Bake, uncovered, at 375°F for 20 minutes or until mixture is bubbly.

Our daughter found a recipe online, I don't know what website she was looking around in, that is the base idea behind this casserole. We all loved just the cheesy hominy she made when we home on vacation. I just added a few of our favorite things to it! The diced green chilies are not 'hot', and they really make the flavor 'pop'...

2 15.5 oz cans white or yellow hominy, drained
1 16oz pkg cubed, pre-cooked ham
1 8oz pkg sour cream
2-3 c cheese, shredded [this time i used some shredded cheddar and 4 cheese italian blend of shredded cheeses]
1 4 oz can chopped green chile's
1 4 oz can sliced mushroom stems & pieces, drained
1 6 oz can black olives, drained and sliced
1/4-1/3 c chopped onion, optional
fresh ground black peppercorns, to suit your taste
I'M NOT SURE WHAT SIZE MY CROCKPOT IS, IT IS THE SMALLER OVAL HAMILTON BEACH MACHINE.

Steps:

  • 1. Mix the ingredients in the crockpot. Since I was here to keep an eye on the cooking food, I set the crockpot on high [my old crockpot's high setting isn't as hot as other machines I've had].
  • 2. Check the cooking process in half hour intervals and stir the contents in the crockpot so the cheese is mixing well as the food cooks.
  • 3. Once the crockpot's cheese is well blended and food is hot, about the 2-3 hour mark, turn the crockpot down to keep warm or low setting. Let food simmer until you are ready to serve.

1 can(s) rotel ,drained (optional)

Steps:

  • 1. Mix everything together. You can either microwave this or cook in the oven,till the cheese is melted.
  • 2. Most of the time we don't add the rotel.I usually will use it if I don't have any mexican velveeta on hand and all I have is the regular kind

61 ounces cannd hominy, drained
6 ounces canned chopped green chilies, drained
24 ounces sour cream
8 ounces monterey jack cheese, shred
1/4 cup onion, minced
2 jalapeno peppers, seeded and finely chopped
1/4 cup fine dry breadcrumb
1/4 cup butter or 1/4 cup margarine
1 whole green chili, sliced crosswise
pimento strips

Steps:

  • Combine first six ingredients in a large mixing bowl; spoon into a lightly greased 13" x 9" x 2" baking dish.
  • Sprinkle with breadcrumbs; dot with butter.
  • Bake, uncovered, at 350 degrees for 30 minutes.
  • Garnish with green chiles and pimiento strips.

1/2 c diced onion
2 clove garlic, minced
7 oz can chopped green chilies
8 can(s) container of fat free cream cheese
1/2 c shredded cheddar cheese...reduced fat...i always add extra...there can never be too much cheese!!
2 can(s) (15 ou) white hominy drained i would do 3 cans and it goes a little farther
1 pinch or two of red pepper flakes for a little kick too.

Steps:

  • 1. Preheat over to 350.
  • 2. Coat medium skillet with cooing spray and sauté onion and garlic. Cook until onions are translucent. Reduce heat to med-low and mix in green chilies. Cook 1 minute. Stir in cream cheese mixture until fully melted. Remove skillet from heat.
  • 3. Place all in a 2 quart casserole and stir to combine. Bake for 35 minutes and cool for 5 minutes before serving. I lightly cover with foil the first 25 minutes and then uncovered the last 10 minutes.

Number Of Ingredients 11

10 arbol chiles, stemmed
3 cloves garlic, unpeeled
1/2 lb. tomatillos (about 7), husked
1/2 large onion, sliced
1 boneless pork shoulder (2 lb.), cut into 8 pieces
1/2 lb. purslane, cleaned
2 cups water
1 can (15 oz.) chicken broth
1/2 lb. coarsely-cut white hominy corn (dried), soaked, drained
3/4 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA
3 oz. pork rinds, cut into 8 pieces

Steps:

  • Cook chiles in large skillet 5 min. or until toasted, stirring frequently. Place in blender. Add garlic, tomatillos and onions to skillet; cook 10 min. or until roasted, stirring frequently. Peel garlic and add to blender with tomatillas and onions; blend until smooth.
  • Cook meat in 6-qt. pressure cooker on medium-high heat 4 min. on each side or until browned on both sides; top with tomatillo sauce. LOCK pressure cooker lid in place. Cook on medium-high heat until pressure vent locks in place and regulator begins to rock gently. Reduce heat gradually to maintain slow steady rocking motion; cook 40 to 45 min. or until meat is tender. Remove from heat. Let stand 10 min. or until pressure vent drops. Remove regulator, then lid; stir in purslane. Replace lid. Let stand 5 min. or until purslane is wilted.
  • Meanwhile, bring water, broth and hominy to boil in saucepan; cover. Simmer on low heat 55 min. or until hominy is softened and liquid is absorbed. Transfer to serving bowl; top with cheese. Serve topped with meat mixture and pork rinds.
