1 lb Velveeta reduced fat cheese product
12 1/2 ounces chicken breasts, drained and flaked
10 3/4 ounces 98% fat-free cream of mushroom soup, undiluted
10 3/4 ounces 98% fat-free cream of chicken soup, undiluted
10 ounces Rotel tomatoes & chilies
4 ounces mushroom stems and pieces, drained
1/2 cup water
1 small onion, diced
1 medium green pepper, diced
salt & pepper, to taste

Steps:

  • spray slow cooker with non-stick cooking spray.
  • combine all ingredients in slow cooker and stir well.
  • cook on LOW for 2-3 hours. stir again just before serving.

A cheesy chicken concoction wrapped up in soft tortillas! These make a great light dinner served with a green salad, refried beans, or as a fun appetizer. NOTE: Image is of Cheesy Chicken filling. I couldn't get the burritos rolled up fast enough before they were eaten! :-) Garnished with sour cream and guacamole.

2-3 large chicken breasts (boneless)
1 jar(s) salsa (whatever heat desired)
1 can(s) cream of chicken soup
1 can(s) mild, diced green chiles
1 1/2 c cheddar and jack blend cheese (grated)
1 small onion (finely chopped)
1 handful stuffed green spanish olives (sliced)
2 Tbsp tapioca
flour tortillas

Steps:

  • 1. Combine all ingredients, except tortillas, in crockpot.
  • 2. Cook on LOW for 8 hours.
  • 3. Shred chicken with a fork. Spoon onto warmed tortillas and roll burrito-style.

*2 lbs skinless, boneless chicken breasts, cut into 6 fillets
*1 lb gold potatoes, cut into small wedges
*1 10.75 oz can Campbell’s 98% Fat Free Cream of Chicken Soup
*1/3 cup fat free chicken broth
*1 cup reduced fat cheddar cheese, shredded
*1 tbsp Worcestershire sauce
*1 tsp paprika
*Salt and pepper to taste

Steps:

  • 1.Place potatoes in slow cooker. Season with a bit of salt and pepper. 2.Season chicken breasts with paprika, salt and pepper, and place on top of potatoes. 3.In a small bowl, whisk together the cream of chicken soup and the broth, and pour over the chicken and potatoes. Cover and cook on low for about 6 hours. 4.Using a slotted spoon, transfer the chicken and potatoes to a separate plate (cover with a lid or foil to keep warm), and set slow cooker onto high heat. 5.Stir in Worcestershire and shredded cheese to the liquid that is remaining, and mix well. Cover and cook for about 5 minutes (or until cheese is melted). Stir cheese sauce until well-blended, and spoon over chicken and potatoes. 1 box(es) zatarain's yellow rice, cooked according to package
1 cup(s) cheddar cheese
1 can(s) cream of chicken soup
1 can(s) whole kernal corn, drained
