1 tablespoon butter
4-1/2 teaspoons all-purpose flour
1-1/4 cups 1% milk
3/4 cup shredded reduced-fat cheddar cheese
1/3 cup grated Parmesan cheese
5 cups frozen broccoli florets, thawed
2-1/4 cups frozen cauliflowerets, thawed
1 cup cubed fully cooked lean ham
1 cup soft bread crumbs
Butter-flavored cooking spray

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Add cheeses; stir until melted., Place vegetables in a 2-qt. baking dish coated with cooking spray; sprinkle with ham. Pour sauce over ham. Place bread crumbs in a small bowl; spray with butter-flavored spray. Sprinkle around the edge of casserole. , Bake, uncovered, at 350° for 25-30 minutes or until heated through and bubbly.

1 (10 ounce) can low-sodium cream of mushroom soup
2 skinless, boneless chicken breasts, cubed
2 (10 ounce) packages frozen cauliflower and broccoli mix
2 tablespoons butter
1 ½ cups milk
¾ teaspoon salt
3 tablespoons all-purpose flour
1 ½ cups shredded Cheddar cheese, or more to taste
1 pinch garlic powder, or to taste
½ cup seasoned bread crumbs, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine 1/2 the mushroom soup and an equal amount of water in a saucepan over medium heat. Add chicken. Bring to a simmer and cook until chicken is no longer pink in the center, 3 to 5 minutes.
  • Heat 1 frozen, unopened bag of cauliflower and broccoli mix in the microwave until hot, 4 to 6 minutes. Let stand about 2 minutes; open bag and transfer vegetables to a bowl. Repeat with remaining bag.
  • Melt butter in a saucepan over medium heat. Add milk and salt; stir in remaining cream of mushroom soup. Add flour slowly, stirring constantly with a whisk to prevent lumps. Add Cheddar cheese. Cook and stir until cheese sauce is thick, 5 to 7 minutes. Add garlic powder.
  • Layer half the cooked vegetables into the bottom of a baking pan or casserole dish. Add half of the cooked chicken. Pour in half the cheese sauce. Add a light layer of bread crumbs. Add remaining vegetables, remaining chicken, and remaining cheese sauce. Top with a light layer of bread crumbs. Cover pan with aluminum foil.
  • Bake in the preheated oven until bubbling, 20 to 30 minutes.

3 slices bacon
nonstick cooking spray
1 medium head cauliflower, cut into florets
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground turmeric
1 (10.75 ounce) can cream of chicken soup (such as Campbell's®)
½ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese
1 scallion, green part only, thinly sliced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Once cool enough to touch, crumble and divide into thirds.
  • Spray the inside of a slow cooker with cooking spray.
  • Place cauliflower into the slow cooker and pour chicken broth on top. Season with salt, pepper, and turmeric.
  • Combine cream of chicken soup, mozzarella cheese, and Cheddar cheese in a bowl. Pour over cauliflower mixture.
  • Cook on High until cauliflower is cooked to your liking, about 2 hours. Stir in 2/3 of the crumbled bacon just before serving.
  • Transfer to serving platter and top with green onion and remaining bacon.

  • Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan. , Add onion and chopped peppers to drippings; cook and stir over medium-high heat until tender, 6-8 minutes. In a large bowl, whisk eggs and ricotta. Stir in riced cauliflower, shredded cheeses, bacon, onion mixture, pepper and salt. Pour into a greased 13x9-in. baking dish. 1 cup sour cream
1 cup shredded Cheddar cheese
½ cup crushed corn flakes
¼ cup finely chopped green bell pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish.
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, and steam until crisp-tender, about 5 minutes. Drain, and set aside.

2 tablespoons butter
1/4 cup finely chopped red onion
1/2 lb cooked ham, cut in 1/4-inch cubes
1/2 cup fire- roasted sweet peppers, chopped
1 (16 ounce) jar ragu double cheddar cheese sauce
4 ounces shredded sharp cheddar cheese
1/2 teaspoon ground chipotle chile pepper
salt & freshly ground black pepper, to taste

Steps:

  • Cut cauliflower into 1/2-inch pieces; steam or microwave until just tender. Drain in a colander and set aside.
  • Saute onion and cubed ham in butter in a large saucepan over medium-high heat until onions are translucent.
  • Stir in cheese sauce, fire-roasted peppers, and chipotle pepper and reduce heat to medium-low.
  • Cook, stirring occasionally, until sauce is heated through.
  • Add about half of the shredded cheddar and stir until melted. Repeat with the remaining cheddar.
  • Add salt and freshly-ground black pepper to taste.
  • Add cooked cauliflower to sauce and stir gently to distribute sauce evenly.

A nice twist to a classic. Layered and baked until golden brown. A great side dish for any meal. I prefer a grilled steak or some roasted chicken, but this is so good and creamy. Originated as a recipe I developed for a restaurant I worked for, this has been a long standing favorite of friends and family. Give it a try and I am sure you will enjoy.

3 large potatoes, peeled and diced
1 head cauliflower, chopped
1/2 cup milk
1 tablespoon butter
salt

1 red pepper, diced fine
3 scallions, diced fine
1 medium onion, dice fine
3 slices bacon, chopped and sauteed
salt
pepper
1 1/2 cups shredded swiss cheese
1 cup Italian seasoned breadcrumbs
1 tablespoon butter, melted

Steps:

  • Potato and Cauliflower Layer -- In a large pot of boiling salted water on medium high heat, cook the potatoes for about 10 minutes and then add the cauliflower and cook another 5 minutes under tender. Remove from the heat and drain. Using a potato masher or even just a fork, slightly mash. I like to do a rough mash for this dish. Add, salt, pepper, milk and butter and set to the side.
  • Bacon, Pepper and Onion Layer -- In a medium saute pan, add the bacon and saute until crisp. Remove and let it drain on a paper plate lined with a paper towel. In the same pan, use the bacon drippings (no more than 1 teaspoon, you don't want too much oil) to cook the onion and red pepper red pepper until tender. Once the onion and pepper are done add the scallions, salt and pepper to taste and remove from the heat, drain if necessary (you don't want this oily) and set to the side.
  • Cheese and Crumb Mixture -- In a small bowl, add the melted butter, bread crumbs and cheese and mix well to combine.
  • Casserole -- In a casserole dish, spray with non stick spray and heat the oven to 375. Add a layer on the potato cauliflower mix; then a layer of the bacon, pepper and onions; then a layer of the cheese and bread crumb mix. Next, again, the potato cauliflower; bacon, pepper and onions; and then the cheese and bread crumbs.
  • Bake -- Thirty (30) minutes until golden brown and bubbly. This is a great side dish and makes a great presentation when you cut into it and serve.

1 1/2 cups milk
2 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
2 1/2 cups shredded Cheddar cheese

1 pinch garlic powder, or to taste
salt and ground black pepper to taste
3 cups chopped cooked ham
2 cups french-fried onions

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender yet firm to the bite, 2 to 6 minutes.
  • While cauliflower steams, heat milk in a saucepan over medium-low heat. Mix softened butter and flour together until it forms a ball. Melt flour ball into heated milk; lower heat and stir constantly until thickened. Add Cheddar cheese, onion, garlic powder, salt, and pepper; heat until cheese is completely melted.
  • Combine cauliflower, ham, and cheese sauce in a large bowl. Gently mix together. Pour into the prepared baking pan.

drizzle of olive oil
1-2 leeks white & lt green parts thinly sliced
kosher salt & black pepper
1 c heavy cream
1-1/2 c white cheddar cheese, greated

  • 1. Heat oven to 425° F.
  • 2. Drizzle olive oil onto the bottom of a 2-quart baking dish. Layer about a half of the cauliflower along the bottom, and about a half of the leeks. Drizzle with more olive oil and season with salt and pepper. Repeat until all of the cauliflower and leeks are used.
  • 3. Season the top layer with olive oil, salt and pepper, then pour over cream. Scatter cheese on top. Then, lightly cover with foil and place in the oven.
  • 4. Bake until cauliflower is nearly tender, 15-20 minutes. Remove foil and continue to bake for 30-35 minutes or until cream has thickened and reduced almost completely, and the top is golden brown and crisp.
  • 5. Remove from oven and let cool slightly before eating.

1 lb polish sausage/keilbasa
2 1/2 c milk
8 Tbsp butter
8 Tbsp flour

  • 3. Fill a large pot or saucepan half filled with water, cover with a lid, and heat over medium high heat and bring to a boil. NOTE: I DID NOT ADD SALT TO THE WATER BY CHOICE. You may want to add salt if desired. Cook about 5 to 7 minutes, then drain in colander.
  • 4. Add hot veggies back into pot and cover with a lid so that the excess liquid can drain into the pot. Then retrieve veggies by hand and break into smaller pieces
  • 5. Chop the shallot and mince the garlic & add into a medium size sauce pan, add in the butter, then heat over medium low heat till butter melts, and shallots and garlic begin to cook, add in the almond flour and stir to blend together then add in the evaporated milk, & whisk or stir until milk becomes slightly thickened, add in the heavy cream and continue to cook, add steak seasoning, & stir as mixture begins to thicken slightly, add in the finely shredded colby and monterey jack cheese. Continue to stir.
  • 6. Now add in the parmesan cheese, one cup of the cheddar. Can remove from heat, if desired. and stir until cheese melts.
  • 7. Now add some of the cooked broccoli and cauliflower into the cheese mixture, stirring carefully, so as not to break the veggies into tiny pieces. Repeat until all the veggies has been added.
  • 8. Spray a 9 X13 Size casserole dish with non stick cooking spray. Add half of the cheesy veggies to the dish then top with half of the mozzarella and half the remaining cheddar. Repeat with the veggies, and top with the remaining cheeses.
  • 9. Place dish in preheated 350 degree F. oven and bake for 30 to 35 minutes until casserole is hot and bubbly or cheese melts. Remove from oven allow to cool about 10 to 15 minutes before serving.

Broccoli can be added. Make sure you drain the cauliflower really well before adding it to the casserole dish so your cheese sauce doesn't get watered down.

2 cauliflower (heads)
1/2 yellow onion, diced
1 garlic clove, minced
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1 1/2 cups sharp cheddar cheese, shredded
1/2 cup parmesan cheese, grated
1/2 teaspoon salt and pepper, to taste

Steps:

  • Preheat oven to 400 degrees and generously butter an 8" square casserole dish.
  • Bring water to boil in a large pot over high heat and cook cauliflower for 6 minutes. Remove from heat, strain then place in a casserole dish.
  • Sauté onion and garlic in butter over medium heat until onion is translucent, about 2 minutes. Add flour, whisk to combine then cook for 1 minute. Slowly whisk in milk until flour is dissolved. Stir in cheeses until melted. Turn off heat and season with salt and pepper to taste.
  • Pour cheese sauce over cauliflower then bake 20-25 minutes or until hot and bubbly. Cool for at least 5 minutes before serving.
