Ground beef, cheese and tangy BBQ sauce create a quick, easy and cost-effective family meal that everyone is sure to enjoy. This dish is a great make-ahead meal, and makes a great lunch the next day!

3 cups of uncooked pasta
1 lb lean ground beef
1 onion, chopped
1 cup barbecue sauce
1 cup mozzarella cheese, shredded
2 cups cheddar cheese, shredded
Chopped parsley, for garnish, if desired.

Steps:

  • Heat oven to 350F. Cook pasta according to package directions. Drain and return to pot.
  • In a skillet, cook beef and onion over medium-high heat for 10 minutes, stirring occasionally.
  • Add beef mixture, barbecue sauce, mozzarella cheese and 1 cup of cheddar cheese to the pasta and stir to combine. Spoon into a 9x13 casserole dish. Sprinkle with remaining 1 cup of cheddar cheese.
  • Bake uncovered for 30 minutes or until hot in the centre. Sprinkle with chopped parsley, if desired.

3 cups uncooked ziti pasta (11 oz)
1 lb lean (at least 80%) ground beef
1 medium onion, chopped (1/2 cup)
1/4 cup chopped fresh parsley
1 cup milk
1 cup barbecue sauce
1 cup shredded mozzarella cheese (4 oz)
1 1/2 cups shredded Cheddar cheese (6 oz)

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile, in 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • Stir pasta, 3 tablespoons of the parsley, the milk, barbecue sauce, mozzarella cheese and 1 cup of the Cheddar cheese into beef in skillet. Spoon mixture into casserole. Sprinkle with remaining 1/2 cup Cheddar cheese.
  • Bake uncovered 30 to 40 minutes or until hot and bubbly. Sprinkle with remaining 1 tablespoon parsley.

This is a recipe from Jyl Steinback's "Supermarket Gourmet Cookbook" that I received from Studentchef in the Spring 2009 Cookbook Swap. It is a quick and easy appetizer and kid-friendly snack. you can substitute ground turkey for the ground beef for lower fat or texturized vegetable protein for a vegetarian alternative.

4 medium baking potatoes, each cut into 8 wedges
1/2 cup barbecue sauce
4 teaspoons spicy seasoning mix, of your choice preferably salt-free
1 cup shredded nonfat cheddar cheese
1 lb extra lean ground beef

Steps:

  • Preheat oven to 400ºF. Line baking sheet(s) with foil and spray with cooking spray.
  • Arrange potato wedges on baking sheet(s). Sprinkle potatoes with spicy seasoning. bake 20 to 25 minutes, until cooked through.
  • Spray nonstick skillet with cooking spray, add ground beef and cook, stirring frequently, until browned and cooked through.
  • Add barbecue sauce to the cooked ground beef and cook until hot and bubbly.
  • Pour meat sauce over potato wedges; top with cheese and bake 5 to 6 minutes, until cheese is melted.
  • Serve immediately and enjoy!

1 (28 ounce) package frozen French fries
1 cup shredded Cheddar cheese
Ranch dressing

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Preheat oven to 400 degrees F (205 degrees C). Place a piece of aluminum foil over a baking sheet; spread fries in a single layer on baking sheet.
  • Bake in preheated oven until golden brown and crisp, 15 to 20 minutes.
  • Preheat broiler.

1 package (15 ounces) refrigerated fully cooked barbecued shredded beef
1 cup shredded cheddar cheese
1/2 cup chopped red onion
3/4 cup french-fried onions
Optional toppings: chopped tomatoes, chopped red onion and minced fresh cilantro
Tortilla chips

Steps:

  • Preheat oven to 350°. Spread cream cheese onto bottom of a greased 9-in. pie plate. Spread evenly with beef. Sprinkle with cheddar cheese and red onion. Bake until heated through, 15-20 minutes. 1 cups frozen corn
1 cups barbecue sauce
0.5 cups jack cheese

Steps:

  • Preheat oven to 450°F. Spread potatoes in 15x10x1-inch baking pan; spray lightly with nonstick cooking spray; sprinkle with salt. Bake 25 to 30 minutes or until potatoes ar tender and lightly browned.
  • Meanwhile, brown ground beef with bell pepper in large nonstick skillet over medium heat 8 to 10 minutes until beef is no longer pink, breaking up into small crumbles. Pour off drippings. Stir in corn and barbecue sauce, heat through.
