4 large white onions
8 ounces sliced mozzarella
8 ounces sliced pepperoni
2 cups all-purpose flour
1 tablespoon Italian seasoning
1 teaspoon garlic powder
One 12-ounce bottle beer
Kosher salt and freshly ground black pepper
1/4 cup shredded Parmesan
1 cup your favorite marinara sauce, for dipping

Steps:

  • Fill a large a large Dutch oven or deep fryer with 3 inches of oil. Heat the oil to 350 degrees F.
  • Cut the onions crosswise into 1/2-inch-thick slices and separate into rings. Using 2 rings that will fit inside one another, sandwich a slice of cheese and a slice of pepperoni between the rings and press together. Repeat.
  • Place 1/2 cup of the flour in a shallow dish. In a large bowl, whisk together the remaining 1 1/2 cups flour and the Italian seasoning and garlic powder. Slowly whisk in enough beer to produce the consistency of a thick pancake batter. Season with salt and pepper. Let rest for 5 minutes.
  • Gently dredge the stuffed onion rings in the flour and then dip in the batter. Fry in batches until golden brown, 2 to 3 minutes. Sprinkle with salt and Parmesan.
  • Serve immediately, with marinara sauce on the side.

1 lb ground beef
1 teaspoon salt
½ teaspoon pepper
1 teaspoon onion powder
¼ lb cheddar cheese, cut into 1-inch (2 cm) squares
1 large white onion
1 cup flour
5 eggs, beaten
3 cups panko breadcrumbs
oil, for frying
ketchup

Steps:

  • Heat oil in a pot over medium heat to 350°F (180°C).
  • In a bowl, mix together the ground beef, salt, pepper, and onion powder.
  • Peel and slice the onion into 1-centimeter (½ inch) rings. Detach the rings from each other.
  • Take a spoonful of the beef mixture and press it into the bottom of a ring.
  • Push a cheddar square into the center of the beef.
  • Seal the top with another spoonful of the beef, pressing it flat.
  • Repeat with the rest of the rings.
  • Place the flour, eggs, and bread crumbs into three separate bowls.
  • Dip a ring into the flour, shaking off excess, then into the egg, the bread crumbs, then back to the eggs, and one last time into the breadcrumbs.
  • Repeat with the remaining rings.
  • Fry the rings for 5-6 minutes, until deep golden-brown.
  • Drain on a paper towel, then serve with ketchup!

Crisp on the outside and gooey on the inside, these mac and cheese delights are baked in your doughnut pan -- a gadget you may have used once, then promptly stashed in the far back corner of your cabinet. Shaped like onion rings and served with marinara, these indulgent treats are stuffed with both mac and cheese and a layer of mozzarella -- for extra cheese pulls.

1/2 cup (2 ounces) elbow macaroni
15 buttery crackers, such as Ritz
2/3 cup panko breadcrumbs
Nonstick cooking spray, for the pan
1/2 cup half-and-half
Pinch of cayenne
2 ounces cream cheese
1/2 cup freshly grated Cheddar (about 1 1/2 ounces)
4 ounces mozzarella, thinly sliced
Marinara sauce, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring a pot of salted water to a boil. Add the macaroni and cook until al dente, about 6 minutes. Drain and set aside.
  • Meanwhile, add the crackers to a large bowl and crush into fine crumbs with the back of a measuring cup. Add the breadcrumbs and mix to combine. Coat a 6-cavity nonstick doughnut pan with nonstick spray. Add half of the breadcrumb mixture to the cavities, tilting the pan and gently tapping it to spread around the breadcrumbs so they cover as much of each cavity as possible. It's okay if a few extra breadcrumbs remain at the bottom of each cavity.
  • Heat the half-and-half and cayenne in a medium saucepan over medium heat until the mixture just comes to a simmer. Continue to simmer over medium-low heat until the half-and-half is reduced by a little more than half, about 2 minutes. Add the cream cheese and stir until melted. Stir in the Cheddar until all of the cheese is melted and the sauce is smooth. Add the macaroni to the saucepan and stir to combine. Season with salt if needed.
  • Carefully fill each doughnut pan cavity halfway with the macaroni and cheese. Top each with a layer of mozzarella slices, then the remaining macaroni and cheese. Evenly cover each with the remaining breadcrumb mixture and gently pack down each ring with your fingertips. Lightly spray the top of each with nonstick spray.
  • Bake until the cheese is bubbly and the breadcrumbs are lightly browned and crispy, 7 to 9 minutes. Let rest in the molds until the macaroni and cheese mixture stays together in a ring when you lift it out with the help of a butter knife, 5 to 10 minutes. Serve with marinara sauce.

Wonderful stuffed burger that can be easily changed to suit different tastes. My kids who normally don't have onions on their burgers REALLY enjoyed these. We served with french fries and root beer floats!

3 pounds ground beef
¼ teaspoon salt
½ teaspoon ground black pepper
3 tablespoons barbeque sauce
½ teaspoon garlic powder
½ pound bacon, cut into 1/4 inch pieces
1 medium onion, finely chopped
¾ cup shredded Cheddar cheese
6 hamburger buns, split

Steps:

  • In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. Turn the heat down to medium and pan fry the onions in the remaining bacon drippings until soft and translucent and just beginning to brown. Mix together onions and bacon in a small bowl.
  • Prepare a grill or large skillet for medium heat.
  • As the grill heats, pull beef patties out of the refrigerator; top 6 of the patties with 1- 1/2 tablespoons of the bacon and onion mixture each, and sprinkle with shredded cheese. Top each with one of the remaining patties and press the edges together to seal.
  • Grill or pan fry the stuffed and sealed patties until cooked through, 2 to 3 minutes per side. Serve on hamburger buns with condiments of your choice.
