EASY CHEESY CHICKEN STROMBOLI



Easy Cheesy Chicken Stromboli image

Preheat your oven for an easy, cheesy recipe for chicken stromboli dunked in marinara sauce.

Number Of Ingredients 7

1 pound homemade or store-bought pizza dough
2 cups shredded rotisserie chicken
2/3 cup shredded Parmesan cheese, plus more for garnishing
1 cup homemade or store-bought marinara sauce, divided
4 slices fresh mozzarella cheese
1/3 cup fresh basil leaves
2 Tablespoons olive oil

Steps:

  • Preheat the oven to 375ºF. Line a baking sheet with parchment paper.
  • Lightly flour your work surface then roll out the pizza dough to a rectangle measuring 11x13 inches.
  • In a small bowl mix together the shredded chicken with the Parmesan cheese and 1/2 cup of the marinara sauce. (Reserve the remaining 1/2 cup of marinara sauce for dipping.)
  • Position the dough so the longer side is closest to you then arrange the chicken mixture in the center of the dough. Top the chicken with the sliced mozzarella and then the basil leaves.
  • Beginning 1 inch from the top of the dough, cut 1/2-inch slits from the center of the dough outward toward the edges. Fold the top portion of the dough over then alternately braid the strips across the center. Cut off any excess dough then tuck the two end pieces underneath the stromboli. Transfer the stromboli to the baking sheet. (See Kelly's Notes.)
  • Brush the top of the stromboli with the olive oil, sprinkle it with additional Parmesan cheese then bake it for 25 to 30 minutes until it's golden brown and the cheese is melted. Remove the stromboli from the oven, transfer it to a rack and let it rest for 10 minutes. Slice and serve.

2 tablespoons olive oil
2 tablespoons salted butter
1/2 large yellow onion, sliced thin
2 cloves garlic, minced
1 head broccoli, cut into small florets
Kosher salt and freshly ground black pepper
All-purpose flour, for rolling out the dough
One 1-pound loaf frozen bread dough, thawed
2 tablespoons sun-dried tomato pesto
1 cup shredded Cheddar
8 slices mozzarella
8 fresh basil leaves, plus more for garnish
1/2 cup grated Parmesan
One 24-ounce jar marinara, warmed

Steps:

  • Preheat the oven to 400 degrees F. Oil a baking sheet with 1 tablespoon olive oil and set aside.
  • Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 2 minutes. Add the broccoli and season to taste with salt and pepper. Cook until the broccoli has softened slightly and become bright green, about 1 minute. Remove from the heat and set aside.
  • Lightly flour a clean work surface and stretch or roll the dough into a large rectangle, about 11-by-13 inches. With the long side closest to you, spread the pesto on the dough, leaving about a 1-inch border on all sides. (You'll want to maintain the 1-inch border when adding the remaining toppings.) Top the pesto with the broccoli mixture and sprinkle over the Cheddar. Shingle the mozzarella slices over the Cheddar. Sprinkle on the basil leaves.
  • Fold the short sides in, then roll the dough into a log. Place the stromboli seam-side down on the prepared baking sheet. Using a sharp knife, make 5 to 6 diagonal slits on top of the dough. Brush the top with the remaining tablespoon olive oil and sprinkle with the grated Parmesan.
  • Bake until golden brown, about 20 minutes.
  • Allow to cool for about 5 minutes before slicing and serving. Serve the warmed marinara alongside and top each serving with some more fresh basil.

1 basic pizza dough
1 (8 ounce) package Perdue Short Cuts original roasted carved chicken breasts, diced
3/4 cup cheddar cheese, shredded
3/4 cup mozzarella cheese, shredded
1/2 cup onion, chopped
garlic salt
1/2 cup parmesan cheese
1 egg
3 tablespoons water

Steps:

  • Let dough rise in warm place until doubled in size.
  • Roll dough out on a floured surface. Shape into a 12"x14" Rectangle. Place diced chicken, cheddar cheese, mozzarella cheese, chopped onion, 1/4 cup Parmesan Cheese and sprinkle with Garlic Salt, leaving 1/2" without the filling so you can pinch and seal it closed. Roll up jelly roll style (start with long side) and fold ends and pinch to seal. Place onto a greased baking sheet seam side down. Cover and let rise 45 minutes.
  • Beat egg and add water to make an egg wash. Brush egg wash onto dough and sprinkle with remaining Parmesan Cheese and sprinkle with Garlic Salt. Bake at 350 for 30 minutes or until it is golden brown.

2 cups shredded chicken breasts
2 cups shredded mozzarella cheese
28 ounces spaghetti sauce
2 tablespoons parmesan cheese
1 tablespoon fresh parsley, chopped
1 lb bread dough

Steps:

  • Preheat oven to 400 degrees.
  • In a medium bowl, mix the chicken, mozzarella, 1/2 cup spaghetti sauce, Parmesan cheese and parsley. Set aside.
  • Spray a jelly roll pan with nonstick cooking spray. Roll dough to form a 12 X 10 inch rectangle.
  • Pour the chicken down the center of the dough. Fold the dough over to cover the chicken mixture, pinching all the seams and ends to seal.

This is a chicken and potato casserole recipe I made up and may still need tweaking. It only takes a few ingredients and is super easy to make.

1 tablespoon olive oil
4 each potatoes, peeled and cubed, or more to taste
1 (15.25 ounce) can whole kernel corn, drained
1 (10.5 ounce) can condensed cream of chicken soup
1 ½ cups canned chicken, drained
½ cup milk
⅓ cup sour cream
2 tablespoons salted butter, melted
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of a large baking dish with olive oil.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until halfway cooked, about 10 minutes. Drain and place in the prepared baking dish.
  • Combine corn, condensed soup, chicken, milk, sour cream, and melted butter in a large bowl; stir to combine. Pour mixture on top of potatoes and spread evenly across the baking dish. Cover with aluminum foil.

1 (28 ounce) jar spaghetti sauce
¼ pound cooked ham, sliced
¼ pound Capacola sausage, sliced
¼ pound salami, sliced

garlic powder to taste
¼ pound mozzarella cheese, shredded
1 onion, sliced
6 mushrooms, sliced
