1 (10 ounce) package frozen puff pastry shells
1 1/2 cups heavy cream, divided
1/4 cup A.1. Original Sauce
2 cups dark chocolate chips
2 tablespoons maraschino cherry juice
1 teaspoon vanilla extract
1 tablespoon granulated sugar
1/2 cup maraschino cherry, quartered
1/2 cup walnuts, chopped

Steps:

  • Bake puff pastry shells at 425 degrees F. for 18 minutes according to package directions. Use a fork to remove the top halves and soft pastry underneath. Allow to cool.
  • Bring 1 cup heavy cream to a simmer in a small saucepan over medium heat. Remove from heat. Stir in A.1. Origianal Sauce and chocolate chips. Stir until well blended and smooth. Set aside.
  • To make the filling, place remaining 1/2 cup heavy cream in a medium bowl. Beat on high speed. Once cream begins to thicken, add cherry juice, vanilla and sugar. Continue to whip until cream is thick and stiff. Fold in Maraschino cherries.
  • To assemble, spoon cream mixture onto pastry shell bottoms. Place pastry tops over cream. Drizzle with the A.1. ganache. Sprinkle with chopped walnuts. Serve immediately and enjoy!

Flaky puff pastry filled with cherry pie filling and topped with a sweet glaze.

1 (17.3 ounce) box Puff Pastry Frozen Dough, thawed according to package directions
1 (21 ounce) can cherry pie filling
1 large egg
1 1/2 cups powdered sugar
2 Tablespoons milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F.
  • Unwrap puff pastry dough and cut each sheet into 4 squares.
  • Place 2 Tablespoons of cherry pie filling in the middle of each square.
  • Brush the edges of each square with egg and fold in half to create a triangle.
  • Use a fork to press and seal the edges of each turnover together.
  • Brush extra egg wash on top of turnovers.
  • Place turnovers on a greased baking sheet and bake for 20-25 minutes, or until golden brown. Let cool.
  • In a small bowl, whisk together powdered sugar, milk and vanilla to create a glaze.
  • Drizzle glaze over turnovers and serve.

Every time my family has a get together, my Aunt Bev is in charge of bringing the cream puffs. No matter how many times I've asked her for the recipe, I continue to lose it. I figured posting it here would keep it at hand forever. Don't let the steps involved trick you--these will be the easiest (and most delicious!) puffs you'll ever try!

1 cup water
1/2 cup butter
1 cup all-purpose flour
4 eggs
1 (3 1/2 ounce) vanilla instant pudding mix
1 cup milk
2 cups heavy whipping cream, well chilled
1 ounce unsweetened chocolate
1 tablespoon butter
1 cup confectioners' sugar
2 tablespoons hot water

Steps:

  • For the puffs: Preheat oven to 400.
  • Heat water and butter to a rolling boil in a medium sized saucepan. Turn heat down to low, and stir in flour with wooden spoon. Stir vigorously over low heat about 1 minute or until mixture forms a ball.
  • Remove from heat, and either place mixture into stand mixer or have a hand mixer ready. Add eggs all at one time, and beat everything together until smooth and shiny.
  • Drop dough by scant 1/4 cup 3 inches apart onto ungreased baking sheet.
  • Bake 35-40 minutes until puffed and golden brown. (Do not pull out too early or they will "fall." It is better to slightly overbake than to underbake!).
  • Remove from oven, and cool to room temperature.
  • For the filling: While the puffs are baking, in a medium to large mixer bowl, blend pudding with milk until all lumps are gone on low speed.
  • Add whipping cream, and beat on medium speed for two minutes or until soft to semi-firm peaks form. Refrigerate mixture until puffs are ready to be filled.
  • For the icing: Melt chocolate and butter over low heat in small saucepan. Remove from heat; stir in confectioner's sugar and about 2 tablespoons of hot water (more or less). Beat until smooth. Consistency should be able to "drizzle.".
  • Assembly: Either cut tops off completely, or cut to the back to leave a "hinge." Fill puffs with pudding mix, replace tops, then drizzle with chocolate icing. Refrigerate until serving time. Best served day of.

Homemade ganache is just about the easiest chocolate recipe out there, a dead-simple mixture of melted chocolate and hot cream, whisked until smooth, then chilled until fudgy.

150 grams all-purpose flour (about 1 1/2 cups)
90 grams confectioners' sugar (about 3/4 cup)
26 grams unsweetened cocoa powder (about 1/4 cup)
1/2 teaspoon fine sea salt
12 tablespoons cold unsalted butter
1 teaspoon vanilla extract
52 grams cherry jam (about 2 tablespoons)
340 grams bittersweet chocolate, at least 62 percent, chopped (12 ounces)
2/3 cup heavy cream
3 tablespoons kirsch, rum, brandy or other spirit
1/2 teaspoon fleur de sel, for sprinkling

Steps:

  • In a food processor, pulse together the flour, sugar, cocoa powder and fine sea salt. Pulse in the butter and vanilla until the mixture just comes together into a smooth mass. Line an 8-inch square baking pan with parchment or wax paper. Press the dough into the pan. Prick all over with a fork. Chill for at least 20 minutes and up to 3 days.
  • Heat the oven to 325 degrees. Bake the shortbread until firm to the touch and just beginning to pull away from the sides, 35 to 40 minutes.
  • Cool in the pan for 20 minutes on a wire rack. Brush jam over shortbread's surface and let cool thoroughly.
  • Place chocolate in a heatproof bowl. In a saucepan, bring the cream to a simmer. Pour over the chocolate and whisk until smooth. Whisk in the kirsch. Spread over shortbread. Sprinkle fleur de sel on. Cool to room temperature; cover and chill until firm. Slice and serve.
