PEACH MELBA SUNDAE

Peach Melba meets knickerbocker glory in this decadent sundae. Add a dash of champagne or prosecco for a grown-up dessert - the perfect end to a summer menu

150ml double cream
½ tsp vanilla extract
40g icing sugar
½ glass champagne or prosecco, to serve (optional)
3 scoops vanilla ice cream (the best quality you can afford)
2 peaches , cut into wedges
75g raspberries
1 tbsp almond flakes , toasted, to serve
75g raspberries
1 tbsp caster sugar
1 lime , juiced

Steps:

  • Put a sundae glass or bowl in the freezer to chill. To make the sauce, put the raspberries, sugar and lime juice in a blender, and blitz to a purée, loosening with a splash of water if necessary. Set aside. Meanwhile, whip the cream with the vanilla and icing sugar until it holds its shape, then transfer to a piping bag fitted with a star-shaped nozzle, if you like.
  • Pour the champagne or prosecco (if using) into the chilled glass, then neatly layer balls of ice cream, peach wedges, raspberries, raspberry sauce and cream, finishing with a big swirl of cream on the top. Scatter with the toasted almonds and serve straight away with two spoons.

My daughter, while devouring this, repeated a phrase she once heard in a talk "Surely the food of the Gods". It is divine. The walnuts remind me of those expensive jarred walnuts in syrup you get at the grocery store. Consider adding in some fresh raspberries too. The original recipe called for 1 C walnuts, we like more. You can add 1 t vanilla if you like to the syrup. Refrigerate extra nuts for another day. You can garnish with some chopped candied ginger if you like.

4 scoops vanilla ice cream
4 peaches
1 cup light corn syrup
1/4 cup brown sugar, packed
3 tablespoons butter
1 1/2 cups walnuts, whole & coarsely chopped
1/4 cup candied ginger, chopped (optional)

Steps:

  • Place the ice cream in four dessert cups. Place in freezer.
  • Combine corn syrup, brown sugar, butter, walnuts and ginger if using in pot and bring to a boil. Cook rapidly for 3 minutes. Remove from heat.
  • Top ice cream with 2 peach halves (or slices to equal same). May be fresh or canned peaches. Spoon walnut sauce over each. Sprinkle with a little chopped candied ginger if desired.

1/3 cup sugar
1 teaspoon vanilla extract
1/2 cup old-fashioned oats

1 (10 ounce) package frozen raspberries
3 ripe peaches
1 pint non-fat vanilla frozen yogurt (or low fat, or caramel)
4 tablespoons sliced almonds, toasted

Steps:

  • Place the raspberries and their syrup in a food processor. Process until the mixture forms a smooth puree.
  • Pit and slice the peaches. Don't peel; the skin contains healthy fiber.
  • Pit and slice the peaches. Dont' peel these either.
  • When ready to serve, fill 4 dessert goblets with even portions of the frozen yogurt. Spoon the puree over the yogurt, and top with the peaches. Garnish the sundaes with the toasted almonds. Enjoy!
