Fried Rice image

Number Of Ingredients 9

1 cup rice
6 cups water
3 tablespoons butter
1/2 cup finely chopped onions
1/4 cup slivered blanched almonds
1/2 cup finely chopped green pepper
1/2 cup finely diced, thinly sliced cooked ham
Salt to taste if desired
Freshly ground pepper to taste

Steps:

  • Rinse and drain the rice. Bring the water to the boil and add the rice. Let boil until rice is tender, about 17 minutes. Drain thoroughly.
  • Meanwhile, heat 2 tablespoons butter in a heavy saucepan and add onions and almonds. Stir and cook until mixture is lightly browned. Add green pepper and ham and cook, stirring, about 5 minutes.
  • Add the rice to the green pepper mixture and stir in remaining one tablespoon butter, salt and pepper. Stir to blend well. Cook 5 minutes, stirring.
