PERFECT SUMMER FRUIT SALAD



Perfect Summer Fruit Salad image

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

Number Of Ingredients 13

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

I love this Fruit Salad! It is so festive and perfect for any celebration but it is especially welcome on The Fourth of July and Christmas dinner tables. Personally, I serve it at all family gatherings and everyone loves it. You can make as much or as little as you need based on the number of guests. And you do not need to add sugar because the white chocolate chips add just enough sweetness. I hope you will try this wonderful and beautiful fruit salad.

Number Of Ingredients 3

1 small container of strawberries for 6 - 8 people and more for larger gatherings.
I small container of blueberries and more for larger gatherings.
I cup(s) white chocolate chips. add more or less if you prefer.

Steps:

  • Rinse, core and quarter or halve Strawberries and place in a fancy glass or crystal bowl.
  • Rinse Blueberries and add to Strawberries.
  • Add White Chocolate Chips to fruit mixture.
  • Blend all together. Cover and place in fridge until ready to use.

1 pound fresh strawberries (sliced and halved (about 3 cups))
1 pound diced fresh pineapple (about 3 cups)
1 pint fresh blueberries (about 2 cups)
5 kiwi fruit (peeled and cut into bite-sized pieces (about 2 cups))
2 cups seedless red grapes
1 large banana* (peeled and cut into bite sized pieces (about 1 cup))
Chopped fresh mint (optional)
zest of 1/2 medium orange
juice of 1/2 the same medium orange (about 3 tablespoons)
zest of 1 small lime (or 1/2 small lemon)
juice of the same 1 small lime (or 1/2 small lemon)
3 tablespoons honey
1 teaspoon pure vanilla extract
1 tablespoon poppy seeds

Steps:

  • If you will not be serving the fruit salad right away, place all of the fruit except the banana in a large serving bowl: strawberries, pineapple, blueberries, kiwi, and grapes.
  • In a small bowl or large measuring cup, whisk together the dressing: orange zest and juice, lemon zest and juice, honey, vanilla extract, and poppy seeds.
  • Pour the dressing over the fruit and with a large spoon, toss gently to combine. Cover and refrigerate for at least 30 minutes to allow the juices to marry (1 hour is even better). Just before serving, stir in the banana. Sprinkle with fresh mint. Enjoy!

1 medium fresh pineapple
3 medium apples (red, yellow and green), cubed
1 small cantaloupe, cubed
1 large firm banana, sliced
1 pint strawberries, halved
1 pint blueberries
4 cups seedless red and green grapes
3 kiwifruit, peeled and sliced
DRESSING:
3 ounces cream cheese, softened
1/2 cup confectioners' sugar
2 teaspoons lemon juice
1 carton (8 ounces) frozen whipped topping, thawed
Additional berries for garnish, optional

Steps:

  • Peel and core pineapple; cut into cubes. Place in a 3- or 4-qt. glass serving bowl. Stir in remaining fruit., In a large bowl, beat cream cheese until fluffy.
