BUCKWHEAT NOODLES WITH RED CAVIAR AND SOUR CREAM



Buckwheat Noodles with Red Caviar and Sour Cream image

8 ounces dried Buckwheat noodles (soba)
2 tablespoons unsalted butter
1/4 to 1/2 cup sour cream
2 to 4 ounces red caviar (salmon roe)
2 tablespoons snipped fresh chives

Steps:

  • In a pot of boiling water cook soba for about 8 to 10 minutes or according to package directions. until done. While soba is cooking heat butter in a small skillet until it is golden brown; you want the flavor of the butter. Drain soba and return to saucepan and toss with golden butter and 4 tablespoons of sour cream, chives and half of caviar. Portion out and top with more sour cream and caviar if you wish.

1/2 cup canola oil
1 teaspoon grated fresh ginger
1/4 cup rice-wine vinegar
1 teaspoon finely chopped shallot
4 ounces osetra caviar
Salt and freshly ground white pepper to taste
6 ounces high quality dry soba noodles, cooked and chilled
1/4 cup fine julienne carrot
1/4 cup fine julienne daikon radish
4 scallions, finely chopped

Steps:

  • Whisk together the vinaigrette ingredients, reserving 1 teaspoon caviar. Combine the noodles, carrot, radish and scallions. Toss with the vinaigrette. Divide among 6 plates. Garnish with the remaining caviar.

Number Of Ingredients 11

6 ounces soba (buckwheat) or green-tea soba noodles
Salt to taste
1/4 cup finely julienned carrot
1/4 cup finely julienned daikon radish
4 scallions, finely shredded
5 tablespoons rice vinegar
1 teaspoon freshly grated ginger
1 shallot, finely chopped
3 tablespoons canola oil
4 ounces tobiko (flying-fish roe) or sturgeon caviar
Generous pinch of white pepper

Steps:

  • Add noodles to a large pot of boiling salted water. Cook about 10 minutes, until they are tender (they should not be al dente). Drain the noodles, cool in ice water for 5 minutes, then drain thoroughly.
  • Toss the noodles in a bowl with the carrot, daikon and scallions.
  • Mix the vinegar with the ginger and shallot. Beat in the oil, then fold in the tobiko or caviar. Pour this mixture over the noodles, and toss gently. Season with pepper, and salt if desired. Serve.
