1 1/4 lbs red potatoes
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1 egg
1/4 cup cornmeal
2 teaspoons dried parsley
20 ounces catfish fillets
4 lemon wedges

Steps:

  • Preheat oven to 400'.
  • Line a baking sheet with foil and spray with Pam cooking spray.
  • Cut potatoes into 1/2 inch sticks and place on foil. Spray again with Pam. Bake in oven for 30 minutes or until brown and crispy.
  • Season with salt and pepper lightly.
  • Meanwhile, in a shallow bowl, lightly beat egg set aside.
  • On wax paper combine cornmeal, parsley and salt and pepper.
  • Dip catfish into egg than into cormeal mixture, coat lightly.
  • Place on another lined baking sheet, lightly greased.
  • Bake 10-15 minutes each side.
  • Serve with baked potatoes sticks and lemon wedges.

1 pound catfish fillets, cut into 1 1/2x4-inch sticks
1 cup Italian salad dressing
1 ½ cups all-purpose flour
½ cup cornmeal
2 teaspoons paprika
2 teaspoons garlic powder
2 teaspoons lemon-pepper seasoning
1 teaspoon ground black pepper
4 eggs, beaten
2 cups oil for frying, or as needed
2 teaspoons salt

Steps:

  • Place fish in a bowl and pour in Italian dressing; marinate in the refrigerator, 30 minutes to 1 hour.
  • Heat oil in a deep-fryer or large saucepan.
  • Mix flour, cornmeal, paprika, garlic powder, lemon-pepper seasoning, and pepper together in a resealable bag. Pour beaten eggs into a separate resealable bag.
  • Remove catfish from the marinade and shake off excess. Discard the remaining marinade. Drop catfish into the bag with eggs and shake to coat. Remove a few catfish at a time from eggs using tongs and transfer to flour mixture; shake to coat.
  • Cook catfish, working in batches, in the hot oil until fish float to the top and are cooked through, 5 to 7 minutes. Remove cooked fish with tongs or a slotted spoon and drain on paper towel. Season fish sticks with salt while still warm.

1 1/2 cups ketchup
2 tablespoons horseradish
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce (recommended: Frank's Red Hot)
1 clove garlic, minced
Vegetable oil, for frying
1 1/2 cups buttermilk
2 eggs
2 tablespoons cayenne pepper
1 tablespoon salt
1 1/2 teaspoons freshly ground black pepper
2 catfish fillets (about 1 1/4 pounds), cut into roughly
2 1/2 by 1-inch strips
1 cup all-purpose flour 1 cup bread crumbs
1/2 tablespoon sugar

Steps:

  • To make the sauce: Mix all ingredients in a bowl and refrigerate until serving.
  • When ready to fry, fill a large heavy pot with enough oil to measure 1 1/2 inches up the side of the pan and heat to 350 degrees F.
  • To make the catfish sticks: In a measuring glass, mix together buttermilk, eggs, cayenne, salt and pepper. Pour into a large plastic bag, then add the catfish. Seal, removing as much air as possible, and refrigerate for 10 minutes. Meanwhile place flour in a shallow bowl. Combine the bread crumbs with sugar and place in another shallow bowl. Remove fish from the buttermilk mixture and coat lightly with flour. Place strips back in the buttermilk and then dredge in the bread crumb mixture. Fry strips in batches for about 3 minutes on each side or until golden brown. Drain on a paper towel-lined plate.
  • Serve catfish sticks with dipping sauce.
