2 tablespoons peanut oil
5 tablespoons chopped shallots
1 hot green chili pepper, seeded and chopped
1 lb carrot, cut into 1/4 " rounds
1 teaspoon cumin
1 teaspoon ground coriander
1/2 teaspoon ground fennel
1 pinch cayenne pepper
1/2 teaspoon turmeric
1/2 teaspoon salt
3/4 cup coconut milk, well mixed
10 curry leaves (optional)

Steps:

  • in a medium saucepan heat oil over medium heat.
  • add shallots and chile, cook stirring for 2 minutes.
  • add carrots, spices and curry leaves and cook another 3-4 minutes.
  • add coconut milk and bring to a simmer.
  • cover, reduce heat to low, and cook 20-25 minutes until carrots are tender.

2 tbsp olive oil
1 yellow onion
3 large garlic cloves (or 6 small garlic cloves)
1 1/2 inch piece of fresh ginger (about 3 tsp grated fresh ginger)
2 tsp coriander
1 tsp turmeric
1 tsp smoked paprika
3/4 cup coconut milk (I used the full fat Chaokoh brand one)
1/2 cup water
2 tbsp chopped cilantro
4 carrots
salt and pepper to taste

Steps:

  • Peel the onion, ginger and garlic and chop them up as finely as possible.
  • Add oil to a large frying pan and set on stove on medium heat.
  • Add finely chopped onion and let saute about 5 minutes, stirring so it doesn't burn.
  • Peel carrots and slice them well. Also, clean the cilantro and chop it up so you have 2 tbsp of it. Set the carrots and cilantro aside.
  • When onion has been sauteing for 5 minutes, add in the ginger and garlic and stir well. Let the onion, garlic and ginger saute another 5 minutes.
  • Then add in the carrots and stir well. Also, add in the coriander, turmeric, smoked paprika, coconut milk, water, and cilantro and stir well. Then cover and reduce the heat a bit and let simmer for 8 minutes - the carrots should be tender at this point.
  • Remove pan from heat and season with salt and pepper. Garnish with more cilantro and enjoy.

2 cups carrots ((chopped) (2 medium, about 325 grams))
¾ cup green peas ((or ¼ cup soaked moong dal))
2 tablespoons oil
½ teaspoon cumin seeds
½ teaspoon mustard seeds
1 sprig curry leaves ((optional))
¾ teaspoon ginger ((chopped finely))
¾ teaspoon garlic ((chopped finely, 2 medium cloves))
1 green chilies (chopped or slit (optional) )
¾ teaspoon salt ((adjust to taste))
1 large onion ((1¼ cup fine chopped))
3 medium tomatoes ((¾ cup fine chopped or pureed))
⅛ teaspoon turmeric
1¼ teaspoon Kashmiri red chilli powder ((adjust to taste))
1 teaspoon garam masala ((or curry powder as needed))
1¼ teaspoon coriander powder
½ teaspoon cumin powder ((optional))
1 teaspoon Kasuri methi ((dried fenugreek leaves))
¾ to 1 cup water ((I used 1 cup))
¾ cup coconut milk ((read notes))

Steps:

  • Heat oil in a pot. Add mustard seeds and cumin seeds.
  • When they splutter add curry leaves and onions. Saute them until the onions turn golden in color and lose the raw flavor.
  • Add ginger, garlic and green chilies. Saute for a minute until aromatic.
  • Next stir in the tomatoes and cook until they breakdown and soften.
  • Then stir in the spice powders - red chili powder, turmeric, garam masala, coriander powder and salt. Saute for 2 to 3 mins until it turns aromatic.
  • Add carrots and peas. Saute for 2 mins.
  • Pour water just enough to partially cover the carrots. I used 1 cup water. Mix and cook covered on a lot heat until carrots turn tender.
  • Then add kasuri methi (optional) and coconut milk. Mix and cook covered on a low heat for 2 mins.
  • Taste test and add more salt if needed. Serve carrot curry with rice or roti.

1 pound green beans (preferably long beans)
2 medium carrots
3 to 4 fresh hot green chilies
1 (1-inch) cube fresh ginger
1 (1-inch) cube fresh galangal, optional
4 to 6 garlic cloves
2 shallots, or 1/2 onion
3 tablespoons vegetable oil
8 to 10 fresh or dried curry leaves, or 2 bay leaves
3/4 teaspoon salt

Steps:

  • Trim the beans and cut into 1-inch pieces. Peel the carrots and cut into 2-inch lengths, then cut each piece lengthwise into quarters and halve these.
  • Finely chop the green chilies. Peel the ginger and cut into paper-thin slices. Stack a few slices together at a time and cut them into minute dice. If using fresh galangal, peel and dice it in the same way. Peel and finely chop the garlic and shallots.
  • Set a wok over a high heat and swirl in the oil. When the oil is hot, put in the chilies, ginger, galangal, garlic, shallots, and curry (or bay) leaves. Stir and fry briefly until the spices start to brown.
  • Add the green beans, carrots, and salt. Stir and fry for 1 minute. Pour in 3/4 cup water and cover with a lid. Turn the heat to medium and cook for about 5 minutes or until the vegetables are just tender.

2 tablespoons corn oil or 2 tablespoons peanut oil
5 tablespoons shallots, chopped
1 fresh hot green chili pepper, finely chopped
1 lb medium carrot, peeled and cut into either 1 x 1/4 x 1/4 sticks (or into 1/4-thick rounds)
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground fennel
1/8 teaspoon cayenne pepper
1/4 teaspoon ground turmeric
10 -15 fresh curry leaves, if available
1/2 teaspoon salt
3/4 cup coconut milk, from a well-shaken can

Steps:

  • In a heavy medium pan add the oil and set over medium heat.
  • Add shallots and chiles to hot oil. Stir and fry for 2 minutes, or until the shallots have softened a bit.
  • Add the carrots, cumin, coriander, fennel, cayenne pepper, turmeric, curry leaves, and salt and continue to stir and fry over medium, heat for 2-3 minutes.
  • Add coconut milk and bring to simmer.
  • Cover, reduce heat to low, and simmer very gently for 5 (possibly as long as 25) minutes.

1 1/2 pounds carrots, peeled and halved, or quartered lengthwise into long, thin sticks
5 small or 3 large shallots, peeled and cut lengthwise into 1/2-inch-thick wedges (about 1 1/4 cups)
Salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
1 cup panko bread crumbs
2 tablespoons grated Parmesan
1 fat garlic clove, minced or finely grated
1/4 teaspoon red-pepper flakes, plus more for serving
6 ounces mozzarella, hand-pulled or chopped into small pieces (1 1/2 cups)
1/4 cup green olives, pitted and rough chopped
1 to 2 tablespoons freshly squeezed lemon juice, plus more to taste
1/3 cup fresh basil, dill or mint, torn

Steps:

  • Heat oven to 425 degrees. Place carrots and shallots on a rimmed baking sheet. Season with salt and pepper, and toss with 2 tablespoons olive oil until well coated. Roast for 25 minutes, rotating pan halfway through. (The shallots will start to shrivel and brown at the edges, but they won't be cooked through yet.)
  • In a small bowl, stir together bread crumbs, Parmesan, garlic, red-pepper flakes, remaining 3 tablespoons oil and a pinch of salt, tossing until well combined.
  • Sprinkle mozzarella and olives all over carrots and shallots, then top with the seasoned bread crumbs. Continue to roast until the vegetables are golden brown and tender, 12 to 15 minutes longer. Just before serving, drizzle lemon juice all over the top and garnish with herbs.

1/2 cup apple cider vinegar
2 tablespoons sugar
2 teaspoons cumin seeds
2 teaspoons kosher salt (we use Diamond Crystal)

Steps:

  • Cook carrots in a pot of boiling salted water until crisp-tender, 2 to 3 minutes; drain and place in a heatproof shallow container.
  • In a small saucepan, combine shallot, chiles, apple-cider vinegar, 1/4 cup water, sugar, cumin, and salt. Bring to a boil, stirring until sugar and salt have dissolved.
  • Pour brine over carrots to cover. Let cool completely, then cover and refrigerate at least 4 hours and up to 5 days. Remove from brine to serve.

1 cup chicken stock or reduced-sodium chicken broth
1/2 pound shallots, thinly sliced
1/2 stick unsalted butter
1/4 cup chopped sage
1 tablespoon finely chopped thyme
1/4 teaspoon grated nutmeg

Steps:

  • Cut carrots into 3-by 1/2-inch sticks.
  • Bring stock to a boil with 3/4 teaspoon salt and 1/2 teaspoon pepper in a 12-inch heavy skillet. Add carrots and simmer, covered, until just tender, about 15 minutes.
  • Remove lid and boil until most of liquid has evaporated, about 5 minutes. Transfer carrots to a bowl and wipe out skillet.
  • Cook shallots in butter with 1/2 teaspoon each of salt and pepper in skillet over medium heat, stirring occasionally, until golden- brown, about 6 minutes.
  • Add sage, thyme, and nutmeg and cook, stirring, until very fragrant, 1 to 2 minutes.
  • Remove from heat and return carrots to skillet, tossing to coat. Season with salt and pepper.

4 tablespoons (1/2 stick) unsalted butter
4 large shallots (about 1 cup), thinly sliced into rings
1/4 cup honey
2 tablespoons Dijon mustard

Steps:

  • Bring a medium saucepan of water to a boil and add salt. Add carrots, and cook until tender, 10 to 15 minutes. Drain well; set aside.
  • Melt butter in a medium skillet over medium-high heat. Add shallots, and cook, stirring occasionally, until beginning to brown, 2 or 3 minutes. Stir in honey, mustard, and salt. Add carrots, and cook until heated through.
