CUBAN BEEF PICADILLO

Cuban beef picadillo is a traditional dish made with ground beef, potatoes, onions, garlic, cumin, bell peppers, white wine, tomato sauce, raisins, olives and capers.

1 lb ground beef
2 tablespoons of olive oil
1 medium large yellow onion (diced)
6 garlic cloves (finely chopped)
½ bell pepper (diced)
1 tablespoon ground cumin
3 small potatoes (peeled and cut in small pieces)
¾ cup dry white wine
½ cup whole green olives (stuffed w/ pimentos)
½ cup raisins
¼ cup capers (drained)
16 ounces of tomato sauce (2 8 oz cans)
Salt and pepper to taste
Latin style white rice
Fried ripe plantains
Tomato and onion curtido

Steps:

  • In a medium-size frying pan, brown the ground beef with a dash of cumin and pepper, drain off any excess grease, and set aside.
  • In a large frying pan, heat 2 tbs of olive oil over med-low heat and cook the diced onion until soft
  • Add the chopped garlic and cook until almost golden.
  • Mix in the bell pepper, cumin, pepper and a little salt - not too much as the olives and capers are salty.
  • Add the potatoes pieces and cook for about 5 minutes.
  • Add the ground beef and the wine, let the liquid reduce.
  • Add raisins and tomato sauce when the potatoes are about half-cooked (a knife can easily through the first part but the center is still very firm).
  • Cook for 5 more minutes and then add the olives and capers.
  • Continue cooking over medium heat, stirring occasionally, until the potatoes are ready. If the sauce thickens too much, you can add some more wine or a little bit of water. Taste and adjust any seasonings: salt, pepper, cumin or additional olives/capers.
  • Serve with rice, fried ripe plantains and a small salad.

1 clove garlic, minced, or more to taste
1 small onion, chopped
½ green bell pepper, chopped
1 pound lean ground beef
6 large pitted green olives, quartered
½ cup raisins
1 tablespoon capers
1 (8 ounce) can tomato sauce
2 (1.41 ounce) packages sazon seasoning (such as Goya®)
1 tablespoon ground cumin
1 teaspoon white sugar
salt to taste

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir garlic, onion, and green bell pepper in the hot oil until softened, 5 to 7 minutes.
  • Crumble ground beef into the skillet; cook and stir until browned completely, 7 to 10 minutes.
  • Stir olives, raisins, capers, tomato sauce, sazon seasoning, cumin, sugar, and salt through the ground beef mixture.
  • Cover the skillet, reduce heat to low, and cook until the mixture is heated through, 5 to 10 minutes.

CARNE FRIA AL ESTILO DE CUBA - (COLD MEATLOAF CUBAN STYLE)

This is another recipe that my friend Vicky Gomez gave me - it is for a type of meatloaf. She makes it by poaching it(wrapped in foil)and then serves it cold and sliced very thin on crackers or toasted pita or cocktail breads. I used most of her ingredients but instead of poaching it - I made it in the oven. We use this as an appetizer or canapés as well. Didn't allow for chilling or cooling times, which is approximately 10-12 hours.

1 lb lean ground beef
1 lb ground lean pork
1/2 lb ground lean ham
1 yellow onion, grated
2 garlic cloves, minced
1 teaspoon salt, to taste
1 teaspoon mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon fresh ground black pepper, to taste
1/4 teaspoon oregano
1/4 teaspoon ground bay leaf powder
4 eggs, lightly beaten
1 cup cracker meal or 1 cup dry breadcrumbs
freshly grated parmesan cheese, for sprinkling (optional)
5 eggs, beaten
1 cup cracker meal or 1 cup dry breadcrumbs

Steps:

  • Preheat oven to 300ºF.
  • Mix all ingredients well by hand except for breading ingredients.
  • Divide into 3-4 portions and roll each into a cylinder or log about 1-1/2"-2" in circumference.
  • Place in plastic wrap; shape into logs and refrigerate for about 2 hours, until the meat is firm to the touch.
  • First, roll the logs in beaten egg and then in Italian seasoned breadcrumbs or cracker meal or dry bread crumbs.
  • Roll each log separately and wrap in foil making sure the seams are well sealed.
  • Place on an ungreased baking sheet.
  • Bake for an hour.
  • Remove from oven DO NOT open foil.
  • Allow to cool until it reaches room temperature.
  • Refrigerate for 8 hours or overnight.
  • Cut into thin slices and serve cold with toasted pita chips, Carr's water biscuits, or Parmesan rosemary crisps.
  • As a nice topping, you can use a slice of hard boiled egg and a strip of red pimento on top.

1/4 cup olive oil
1 large white onion, cut into 1/2-inch cubes
1 tablespoon minced garlic
1 chopped green pepper
1 cup chopped canned tomatoes
1 tablespoon paprika
1 tablespoon dry oregano
1 tablespoon dry cilantro
2 1/2 pounds beef top round, cut into 1-inch cubes
1 cup dry Sherry
4 large peeled potatoes, cut into 1-inch cubes
Salt and white pepper
White rice, as an accompaniment

Steps:

  • In a heavy skillet, heat oil and saute onions for 5 minutes. Add garlic, peppers, tomatoes, spices, and meat and saute for 5 more minutes. Add Sherry and simmer, uncovered, 5 minutes. Add potatoes and enough water to cover meat and potatoes. Let simmer until the potatoes are tender, about 25 minutes. Season with salt and pepper. Can be served with white rice.

1 tablespoon vegetable oil
2 pounds beef flank steak
1 cup beef broth
1 (8 ounce) can tomato sauce
1 small onion, sliced
1 green bell pepper, seeded and sliced into strips
2 cloves garlic, chopped
1 (6 ounce) can tomato paste
1 teaspoon ground cumin
1 teaspoon chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon white vinegar

Steps:

  • Heat vegetable oil in a large skillet over medium-high heat. Brown the flank steak on each side, about 4 minutes per side.
  • Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. Cover, and cook on High for 4 hours, or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice.

1 (1 1/2-pound) flank steak
2 teaspoons kosher salt, or more to taste
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
2 tablespoons olive oil
1 large red onion, sliced
4 cloves garlic, sliced
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon dried oregano
¼ teaspoon cayenne pepper
⅛ teaspoon ground cloves
⅛ teaspoon ground allspice
½ cup white wine
1 ½ cups tomato sauce
1 ½ cups chicken broth
2 bay leaves
2 bell peppers, sliced

Steps:

  • Cut flank steak in half across the grain. Mix salt, black pepper, and cayenne. Season both sides generously with the salt mixture.
  • Heat olive oil in a pot over high heat. Add steaks and cook until outsides are well browned, 4 to 5 minutes per side. Remove steaks to a plate.
  • Reduce heat to medium. Add red onion, garlic, and more of the salt seasoning. Cook and stir until starting to soften, 3 to 5 minutes. Stir in cumin, paprika, oregano, cayenne pepper, cloves, and allspice. Cook and stir for 1 minute. Pour in white wine, scraping up the browned bits from the bottom of the pot. Stir in tomato sauce and chicken broth.
  • Return beef and accumulated juices to the pot. Season with salt and add bay leaves. Reduce heat to low, cover, and simmer until beef is almost fork-tender, not falling apart, about 2 hours.
  • Remove pot from heat and let stew cool to room temperature, at least 45 minutes. Refrigerate, 8 hours to overnight, for best results.
  • Remove beef to a plate and set stew over medium heat. Tear beef along the grain into 1/8- to 1/4-inch-wide shreds; place back in the stew. Add bell peppers, poblanos, smoked paprika, capers, olives, and sugar. Stir together and reduce heat to medium. Simmer until peppers are soft and meat is tender, 15 to 20 minutes. Turn off heat, remove bay leaves, and stir in cilantro.

2 cucharadas de aderezo italiano fuerte KRAFT Zesty Italian Dressing
1 cebolla, picada
1 libra de solomillo de res (sirloin), cortado en cubos de 1 pulg.
1/2 libra de papas nuevas, cocidas, gruesamente picadas
1 paquete (10 oz) de granos de elote (maíz), congelados
1 lata (8 oz) de salsa de tomate (jitomate)
1/4 taza de agua
1 taza de queso colby y monterrey desmenuzado KRAFT Shredded Colby & Monterey Jack Cheese
1/4 taza de cilantro, picado

Steps:

  • Cocina y revuelve la cebolla en el aderezo dentro de una sartén grande a fuego medio-alto por 3 min. Agrega la carne; cocínala, revolviéndola de vez en cuando, durante 5 min o hasta que se dore.

1 large onion, chopped
2 -3 garlic cloves, chopped
1 (6 ounce) can tomato sauce
1/4 cup dry white wine
1/2 cup pimento stuffed olive, chopped
1/4 cup raisins
salt & pepper

Steps:

  • In a large skillet brown the meat, onions and garlic.
  • Pour out whatever fat you may render.
  • Turn heat down to low; add tomato sauce and wine.
  • While it simmers, chop up the pimento stuffed olives and add to meat mixture.
  • Add raisins & adjust the seasonings.
  • Serve on a bed of rice.
