2 sticks (1 cup) salted butter
1 cup brown sugar
1 (12 ounce) box Crispix cereal ((about 12 cups))
1 ½ cups chopped pecans ((6 ounces))

Steps:

  • Preheat oven to 325°F. Line an extra large baking sheet (or two smaller baking sheets) with foil and spray with cooking spray.
  • Spread cereal and pecans on prepared baking sheets. Set aside.
  • Mix butter and brown sugar in a saucepan over medium-high heat.
  • Boil for two minutes, stirring constantly.
  • Pour caramel mixture over cereal and nuts; toss to coat.
  • Bake for 8 minutes. Remove from oven, stir, and bake for an additional 8 minutes.
  • Allow to cool, breaking apart any large clumps with a wooden spoon or spatula.

2 (9 ounce) boxes Ritz Bits miniature crackers
1 cup dry roasted peanuts
1/2 cup butter or 1/2 cup margarine
1 cup granulated sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Preheat oven to 250*.
  • Combine crackers and nuts in a greased, large shallow baking pan.
  • In a saucepan, bring butter, sugar, and corn syrup to a boil and cook for 5 minutes.
  • Remove from heat and add vanilla and soda.
  • Pour caramel mixture over crackers and nuts; stir well.
  • Bake for 1 hour, stirring every 15 minutes.
  • Pour onto waxed paper and break apart; allow to cool.
  • Store in airtight container.

½ cup butter
¾ cup white corn syrup
1 cup packed brown sugar
1 cup chopped pecans
1 cup almonds
1 (12 ounce) package crispy corn and rice cereal

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spray a large roasting pan with non-stick cooking spray.
  • In a medium-size microwave safe bowl, mix butter, white corn syrup and brown sugar. Place the mixture in the microwave and cook 2 minutes, or until butter melts.
  • Place the cereal, pecans and almonds into the prepared roasting pan. Pour the melted butter mixture over the cereal and nuts and mix gently until the cereal and nuts are coated.
  • Bake for 1 hour, stirring every 15 minutes.
  • As the snack mix is cooling, be sure to continue to stir so that the mix will not harden in one big lump.

6 cups Rice Chex
6 cups Corn Chex
6 cups Crispix
1 cup butter, cubed
1 cup packed brown sugar
1/2 cup corn syrup
1 teaspoon vanilla extract

Steps:

  • Grease three 15x10x1-in. baking pans; set aside. In a large heat-proof bowl, combine the cereals; set aside., In a heavy saucepan over medium heat, bring the butter, brown sugar and corn syrup to a boil, stirring constantly. Reduce heat. Simmer, uncovered, for 5 minutes, stirring occasionally. Remove from the heat; stir in vanilla. Pour over cereal and stir until well coated., Transfer to prepared pans. Bake, uncovered, at 200° for 1 hour, stirring every 15 minutes. Cool completely. Break apart and store in airtight containers.

1 teaspoon plus 3/4 cup butter, cubed
45 Club crackers (2-1/2x1 inch)
1 can (14 ounces) sweetened condensed milk
1/2 cup packed brown sugar
3 tablespoons light corn syrup
1 cup semisweet chocolate chips

Steps:

  • Line a 9-in. square baking pan with foil and grease the foil with 1 teaspoon butter. Arrange a single layer of crackers in the pan., In a large saucepan, combine milk, brown sugar, corn syrup and remaining butter. Bring to a boil over medium heat, stirring occasionally. Reduce heat to maintain a low boil; cook and stir 7 minutes. Remove from heat. Evenly spread a third of the mixture over the crackers. I have a house full of picky kids, so I end up with lots of open boxes of cereal. This works with pretty much any cereal you'd want to eat. I've used Kix, Apple Jacks, Rice Krispies, Cheerios, Cocoa Puffs, even Life! I like the stick or mini pretzels the best. I'd bet the big sourdough ones, crushed a bit of course, would be really good too. Please please please be very careful with the boiling syrup. Keep an ice bath nearby in case you spill on yourself. Any seasoned candy maker knows how horrible candy burns are.
