1 pound Yukon gold potatoes
1/2 onion, sliced
1/2 ounce olive oil
1/2 garlic, minced
1/4 cup white wine
6 oranges, juiced
1/2 bunch chopped fresh oregano
1/2 bunch chopped fresh cilantro
Kosher salt, to taste
Pepper, to taste

Steps:

  • Roast potatoes in a preheated 375-degree oven. While roasting potatoes, sweat onion in olive oil until translucent. Add garlic and cook for 2 minutes. Deglaze pan with white wine and reduce until almost all liquid is gone. Add orange juice and reduce by 2/3. Fold in herbs and season with salt and pepper. When potatoes are done, pour hot mojo over potatoes and serve immediately.

Seared Tuna with Melon Salsa and Tangerine Lime Mojo image

3 cups tangerine juice
1/2 cup lime juice
1/2 cup maple syrup
2 tablespoons red pepper flakes
1/4 cup olive oil, plus more for searing
Salt
1/4 honeydew melon, cut into very small dice
1/4 cantaloupe, cut into very small dice
1 mango, cut into very small dice
1 orange, segmented, cut into very small dice
1 small red onion, cut into very small dice
1/2 cup fresh squeezed orange juice
1 tablespoon extra-virgin olive oil
1/4 bunch mint, finely chopped
2 tablespoons olive oil
4 (4 ounce) pieces tuna loin

Steps:

  • Combine tangerine juice, lime juice, maple syrup, and red pepper flakes in a saucepan. Reduce by half. Cool. Add 1/4 cup olive oil and season with salt, and set aside.
  • In a bowl, combine honeydew, cantaloupe, mango, orange segments, and onions. Add orange juice, extra-virgin olive oil, and mint. Season with salt and set aside.
  • In a saute pan, heat the olive oil, and sear tuna until medium rare. Toss with tangerine mojo and serve with salsa.

MOJO SAUCE

3 sour oranges
1 head garlic, cloves peeled and separated
Salt
Chopped fresh oregano leaves
Freshly ground black pepper

Steps:

  • Slice the oranges down the middle and squeeze the juice. Mash a head of garlic in a morteros (a thick bowl with a mashing paddle used in Latino cooking). Add a little salt to the garlic (more than a pinch, less than a teaspoon). Add the sour orange juice to the mixture. Add oregano and pepper, to taste. Brush the Mojo Sauce on the food as it is cooking.

1/2 cup cuban marinade (mojo sauce)

Steps:

  • Pour mojo sauce over wings and marinate in the refrigerator for at least 4 hours.
  • Drain excess sauce and add garlic salt, salt and pepper.
  • Broil in the oven for 20-25 minutes.

5 mint leaves
3 wedges lime
1 cup crushed ice
1 teaspoon simple syrup
½ teaspoon lime juice
2 fluid ounces spiced rum (such as Captain Morgan's®)
2 fluid ounces cranberry juice
2 fluid ounces soda water

Steps:

  • Place the mint leaves, lime wedges, and ice into a cocktail shaker; mash well with a cocktail muddler. Pour in the simple syrup, lime juice, rum, cranberry juice, and soda water. Cover, and shake until the outside of the shaker has frosted. Strain into a chilled glass to serve.
