Candied yams are a classic Southern side dish, especially when it comes to Thanksgiving. Even though Mama makes the same sweet potato casserole every year, she won't be offended if you bring these candied yams once she tries them. Lightly spiced and oh-so-sweet, these candied yams will become a mainstay in your Thanksgiving recipe lineup. Cinnamon, nutmeg, and vanilla combine with sweet potatoes for the most comforting holiday dish you can serve. One of the best parts about this side dish is that it only has 20 minutes of hands-on time, and you can assemble the dish up to 3 days in advance. Make the recipe through step 3, store it covered in the refrigerator, then bake it Thanksgiving Day. With all the other dishes you have to worry about on Thanksgiving, these candied yams will be a breeze. We recommend serving them straight from the oven while the syrup is still hot.

4 pounds sweet potatoes, peeled and cut into 1⁄2-inch-thick rounds
1/2 cup salted butter
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1/4 cup heavy cream
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F. Layer sweet potato slices in a lightly greased 13- x 9-inch baking dish.
  • Melt butter in a small saucepan over medium. Add sugars, stirring until well combined. Stir in cream; cook, stirring often, just until mixture comes to a simmer, 5 to 7 minutes. Remove from heat; stir in vanilla extract, cinnamon, salt, and nutmeg.
  • Pour sugar mixture evenly over sweet potatoes, and cover with lightly greased aluminum foil.
  • Bake, covered, in preheated oven, about 40 minutes. Uncover and gently stir potato mixture. Bake, uncovered, until potatoes are tender, 25 to 30 more minutes. Transfer potatoes to a serving bowl with a slotted spoon; pour syrup over potatoes. Serve immediately.

4 large yams
3 tablespoons butter
1 tablespoon cornstarch
½ cup packed brown sugar
1 ½ cups apple juice
1 tablespoon lemon juice
½ teaspoon ground cinnamon
½ teaspoon ground allspice
3 large apples - peeled, cored and sliced

Steps:

  • Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
  • Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
  • Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.

Most commented they liked it because it did not have marshmallows and also loved the addition of apple. I think it would be good with a handful of dried cranberries sprinkled on top too.

2 lbs sweet potatoes, peeled & cut into 1/2 inch slices
1/2 cup packed brown sugar
2 tablespoons unsweetened apple juice
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (my addition)
1 medium tart apple, peeled and sliced

Steps:

  • Place sweet potatoes in a saucepan and cover with water; bring to a boil.
  • Cover and cook for 10 minutes or until crisp-tender; drain.
  • In a bowl, combine the brown sugar, apple juice, salt, cinnamon and nutmeg; set aside.
  • Arrange cooked sweet potatoes and apple slices in an 8-inch square baking dish coated with non-stick spray. (This is where I would add the dried cranberries too).
  • Drizzle brown sugar mixture over the potatoes and apples.
  • Bake, covered, at 350 degrees F, for 25 minutes.
  • Uncover and continue baking for 20-25 minutes longer, basting occasionally with pan juices.

4 medium yams
1 granny smith apple (peeled and chopped)
1/2 cup golden raisin
1/4 cup brown sugar
1/4 cup cane syrup
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 lemon, juice and zest of
1 fluid ounce brandy
1 tablespoon cornstarch
1/4 cup pecans (chopped)
8 ounces marshmallows (optional)

Steps:

  • Peel, slice and boil yams for about 1/2 hour.
  • Drain and reserve 1 1/2 cups liquid. Bring liquid to a boil, add sugar, cane syrup, spices, brandy and lemon.
  • Reduce heat and cook about 5 minutes.
  • Add fruits and simmer another 10 minutes.
  • Add corn starch dissolved in a little water, cook for 10 minutes.
  • Place yams in a baking dish and poor syrup over them.
  • Bake until bubbling.
  • Top with marshmallows, if desired, about 5 minutes before removing from oven.
  • Sprinkle with pecans after removing from oven.

Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
  • Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
  • Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.

  • Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 30 minutes or until just tender. Drain and cool slightly. Peel and cut into 1/4-in. slices., In a greased 13-in. x 9-in. baking dish, alternately layer potatoes and apples. Pour orange juice over top.
