HAM SAUSAGE AND RICE SOUP

This ham sausage and rice soup is hearty and full of flavor, yet it takes under an hour to make. I love making soups because they are good for you comfort food.

2 Ribs Celery (Diced)
1 Small Onion (Diced)
2 Tablespoons Garlic (Minced)
18 Ounces Sweet Italian Sausage Links (package of 5)
3 Cups Ham (Diced)
4 Cups Chicken Broth
2 Tablespoons Soy Sauce
14.4 Ounces Corn (1 frozen bag)
12 Ounces Stir Fry Vegetables (1 frozen bag)
2 Cups Rice Cooked
1 Teaspoon Salt
1 Teaspoon Pepper
½ cup Fresh Parsley (Chopped)
1 Cup Heavy Cream

Steps:

  • In a large kettle, add the onions, celery, and garlic. Cook on medium-high heat until translucent and starting to caramelize.
  • While the onion and celery mixture is cooking, remove the casings from the Sweet Italian Sausages. Add the sausages to the kettle and break apart while cooking like you would hamburger.
  • When the sausage is about half cooked through, add the diced ham, chicken stock, soy sauce, corn and stir fry vegetables. Continue cooking until mixture comes to a boil.
  • Add the cooked rice, salt and pepper to taste. Cook until the soup comes back to a boil.
  • When the soup comes back to a boil. Turn off the heat. Add the fresh parsley and heavy cream. It is ready to be served.

This thick and chunky soup is my family's favorite Fall "comfort food" soup. I buy the smoked ham and smoked sausage at our local Farmer's Market. The smoked sausage gives this hearty soup a wonderful smokey flavor. I especially like this soup when I use the broth and leftover ham from the Christmas ham that my Father-in-law...

1 20 ounce bag dried mixed beans (i use 15 bean soup with seasoning packet)
2 qt water
4-6 envelopes ham flavoring (from a 1.41 ounce box)
1 c diced onion
2/3 c peeled and diced carrots
1 c peeled and diced potatoes
2 c leftover ham, cubed
1 lb smoked sausage, cut into thin slices
2 bayleaves, broken in half
1 32 ounce container chicken broth
1/2 c quick cooking barley

Steps:

  • 1. Place dried beans in a LARGE pot and pick through to check for stones. Rinse beans, drain and add water to cover by at least 2 inches. Soak at least 8 hours or overnight.
  • 2. After soaking, drain beans, rinse, drain again and add 2 quarts water**, flavoring packet (that comes with beans) and 2 envelopes of ham flavoring. Bring to a boil and simmer, uncovered, for 1 hour, stirring occasionally. (Note: you may have to add more water during this step to make sure beans are covered with liquid.) ** OR, INSTEAD OF PLAIN WATER, PLACE A HAM BONE IN A LARGE DUTCH OVEN AND ADD WATER TO COVER HALF OF BONE. ADD 2 BAY LEAVES AND A SLICED ONION TO THE POT. BRING TO A BOIL, REDUCE HEAT. COVER AND SIMMER FOR 1 TO 2 HOURS. REMOVE BONE AND STRAIN BROTH. USE THIS BROTH INSTEAD OF PLAIN WATER. Take any meat off of the bone and add to soup with the rest of the meat as mentioned in Step 3.
  • 3. After simmering for 1 hour, add onion, carrot, potato, ham, sausage, bay leaves and 2 more envelopes ham flavoring to pot. Simmer an additional 45 minutes to 1 hour, stirring often, until beans are soft and begin to break apart.
  • 4. Add chicken broth (enough to make desired consistency) and quick cooking barley (and more ham flavoring if needed). Simmer for 10-15 minutes or until barley is cooked.
  • 5. Serve with salad and crusty bread.
  • 6. FREEZES WELL!!

Plain and simple. This soup has no spice in it, gets its flavor from the farmer sausage and green pepper.

1 1/2 lbs farmer sausage (smoked)
2 tablespoons vegetable oil
3 potatoes, peeled and diced
2 large carrots, diced
3 celery ribs, diced
1 1/2 cups diced rutabagas
1 onion, chopped
1 green pepper, diced
5 cups beef stock
3/4 cup kidney bean
1 (5 ounce) can tomato paste
salt and pepper
2 tablespoons fresh parsley

Steps:

  • Cut sausage into 1 inch pieces, then in half again.
  • In a frying pan heat oil cook sausages for 3 minutes.
  • Add diced potatoes cook for 2 minutes set aside.
  • In a large soup pot add beef stock, carrots celery, rutabaga, onion.
  • Boil 20 minutes or until vegetables are tender.
  • Add sausage, potatoes,kidney beans, tomato paste, salt and pepper.
  • Simmer for 10 minutes.
  • Add green pepper and parsley simmer another 5 minutes.

3 eggs
1/2 cup milk

Steps:

  • Mix all ingredients together to make a stiff dough.
  • Knead well.
  • Roll dough out very thin.
  • Flour both sides of dough.
  • Cut in half and form two rolls.
  • Cut off narrow strips.
  • Cook for a few minutes in a large pot of boiling water.
