5 medium potatoes, peeled and thinly sliced
1 medium onion, sliced
6 tablespoons butter
1/3 cup shredded cheddar cheese
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1/3 cup chicken broth

Steps:

  • Place the potatoes and onion on a large piece of heavy-duty foil (about 20 in. x 20 in.); dot with butter. Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes. , Fold foil up around potatoes and add broth. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.

I ate this often growing up, or some variation of it. My mom would always add things to the mashed potatoes if we were running low on potatoes - mostly carrots, but sometimes even turnip. The bits of carrot stay a little firmer than the potatoes, so you get little pops of sweetness in every bite.

½ pound carrots, peeled and cut into chunks
2 tablespoons butter
2 tablespoons half-and-half
1 medium green onion, minced
salt and freshly ground black pepper to taste

  • Combine potatoes and carrots in a pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Mash potatoes and carrots with butter, half-and-half, green onion, salt, and pepper until desired consistency

7 large potatoes, peeled and quartered
9 carrots, julienned
4 large sweet potatoes, peeled and quartered
2 onions, quartered
salt and pepper to taste
¼ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a 1/3 cup water in a 9x13 inch baking dish. Layer in potatoes, carrots, yams and onions. Sprinkle generously with salt and pepper.
  • Pour oil over entire dish until all ingredients are well coated.
  • Cover or place foil over dish and bake for 2 hours.

5 potatoes, washed
2 yams, ends cut, washed
1 -2 turnip, washed
4 -5 carrots, washed
1 white onion
2 teaspoons Butter Buds
salt and pepper

Steps:

  • Pack to the campsite in the mesh bag or bags.
  • Boil water in large dutch oven with lid.
  • Open bag, cut potatoes, yams, carrots in 4 sections.
  • Peel onion and turnip. Cut them in 4 sections.
  • Pack back in mesh bag. Tie shut.
  • Drop in boiling water. Put the lid on.
  • Make sure the bag does not float to the top.
  • Put a rock or weight on the bag if it does.
  • Cook for 15 to 20 minutes.
  • Take bag and drain any water.
  • Pour out on foil or metal pie plates.
  • To mash: Take your hatchet and mash with the back edge. Make sure the hatchet is clean.
  • Season. You can remove any skins if you want.

4 large carrots, peeled and sliced lengthwise
1 onion, peeled and sliced into rings

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a sheet pan with aluminum foil.

These easy cheese potatoes are great over the grill or campfire. And since they're in a foil packet, there's no mess to clean up!

6 potatoes, sliced
¼ cup diced onion
2 tablespoons cold margarine
¼ cup grated Parmesan cheese
¾ cup shredded mozzarella cheese
¾ cup shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire.
  • Cut 2 lengths of heavy duty foil approximately 18 inches square, placing one on top of the other for strength. Spray top one with non-stick spray. Spread potatoes on foil leaving plenty of room to fold up later. Scatter the onion over potatoes; slice the margarine over the potatoes; layer the Parmesan, mozzarella, and Cheddar cheeses over the potatoes; season with salt and pepper. Bring opposite edges of foil together and seal.
  • Place the packet directly onto your campfire and cook until the potatoes are soft, about 35 minutes.
