CRAB MELT
This Crab Melt will become your favorite open faced sandwich recipe! Deliciously cheesy and easy to make!

Steps:
- Preheat oven to 400 degrees. Coat a 9x9 baking dish (or similar size) with cooking spray. Set aside.
- Combine Parmesan cheese, mayonnaise, chopped onion, lump crab meat, chopped artichokes, parsley, fine sea salt, white pepper and smoked paprika in a medium bowl. Toss to combine being carful to not break apart crab pieces.
- Transfer mixture to prepared baking dish. Bake for 25 minutes, or until starting to lightly brown.
- Place sourdough bread slices on a rimmed baking sheet. Place under high broil about 4 inches from the heating mechanism for 3-4 minutes or until they brown lightly. Remove.
- Evenly spoon hot crab mixture over each slice of bread, 2 slices of tomato and 2 slices of Monterey Jack cheese.
- Place back under the broiler until cheese melts, approximately 2 minutes, but watch closely considering that broilers vary greatly.
- Serve open face and hot.

I haven't prepared these yet but it was a recipe that caught my eye. These can be served as a main course with a nice green salad -- or would be prefect for an appetizer buffet.

Steps:
- Heat broiler. Combine all ingredients EXCEPT bread in a medium bowl.
- Place bread slices on a large baking sheet. Broil 5 to 6 inches from h eat until toasted (1 to 2 minutes).
- Turn bread slices over; spread each with about 1 tablespoon of the crabmeat mixture.
- Broil 5 to 6 inches from heat until cheese is bubbly (2 to 3 minutes). Serve immediately.
- Note: Some people find Swiss cheese a little strong. I'm sure Monterey Jack would work in this recipe -- and most likely Mozzarella.

- Melt butter and cheese over low heat; add lemon juice, Worcestershire sauce, and garlic salt.
- Mix well.
- Process in blender until smooth.
- In bowl, fold in crabmeat and chives.
- Slice bread into half inch slices and spread on crabmeat mixture.
- Place on ungreased baking sheet.
- Bake at 350 degrees for 15 minutes.
- Serve immediately.
