1 1/3 cups sugar
1/2 cup butter, softened
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon baking powder
2 cups all-purpose flour
1 teaspoon vanilla
1 1/4 cups mashed ripe bananas
3/4 cup broken pecans

Steps:

  • Cream sugar and butter.
  • Add eggs, one at a time, mixing well after each addition - use a mixer.
  • Stir baking soda into buttermilk and add to mixture.
  • Sift baking powder with flour and blend into creamed mixture.
  • Add vanilla and banana and mix.
  • Stir in pecans.
  • Pour into greased and floured 9"x5" loaf pan. (May also use 4 mini loaf pans.).
  • Bake at 300 degrees F for about 1 1/2 hours or until loaf tests done with a toothpick. (Bake for 50-60 minutes for mini loaves.).
  • Cool for 20-30 minutes before removing from pan.

2 cups flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
1 ¼ cups white sugar
½ cup shortening
2 egg, beaten
1 cup mashed ripe banana
1 teaspoon vanilla extract
½ cup buttermilk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
  • Sift flour, baking soda, and cinnamon together in a bowl.
  • Beat sugar and shortening together in a separate large bowl with an electric mixer until light and fluffy; add 1 egg at a time, thoroughly beating the first into the sugar mixture before adding the second. Beat banana and vanilla into the wet mixture together. Stream buttermilk into wet mixture while continually beating until smooth; add flour mixture and continue to beat until you have a smooth batter. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

I got this recipe from my sister-in-law while I was searching for a moist banana bread recipe years ago. She said the buttermilk makes all the difference. After trying a handful of different recipes - I am inclined to agree! The original recipe is for banana bread. I loved it so much I also altered it to make zucchini bread too! This recipe is one of those throw everything in a bowl and mix recipes - which is why I love it. It also freezes very well. **If you don't have buttermilk - plain yogurt can easily be substituted. Use 1/2 cup yogurt with a splash of milk.

1 teaspoon baking soda
3/4 teaspoon salt
3 large eggs
2 cups sugar
1 1/3 cups canola oil
2 tablespoons pure vanilla extract
1 1/2 cups ripe mashed bananas (about 3 medium)
1 cup unsweetened dried shredded coconut
1 cup walnuts or 1 cup pecans, toasted and finely chopped
1/2 cup buttermilk
cooking spray

Steps:

  • Preheat oven to 350°. Coat pans with cooking spray; set aside.
  • In a large bowl, whisk together the flour, baking soda and salt; set aside.
  • In the bowl of an electric mixer, beat the eggs, sugar and oil on medium-low speed until combined.
  • Beat in the flour mixture. Add the vanilla, banana, coconut, nuts and buttermilk and beat just to combine.
  • Divide batter betwen prepared pans; smooth with an offset spatula.

  • 2. Cream bananas and buttermilk together. Add shortening, sugar, eggs and cream together.

2 1/2 c shortening (i use crisco)
5 c white sugar
10 large eggs
5 c mashed blackened bananas
10 c all purpose flour
5 tsp baking soda
1 tsp baking powder
2 1/2 tsp salt
1 2/3 c buttermilk (or mix up 2 teaspoons lemon juice in whole milk)

Steps:

  • 1. Preheat oven at 350 degrees prepare 8 bread pans, grease and flour. Do not use spray. If you add nuts you may be able to squeeze out another loaf! You can also make up a bunch of mini loaves.
  • 2. In a large mixing bowl add your shortening and sugar, mix well. Add your eggs, blend well.
  • 3. Add your bananas, blend well.
  • 4. In another mixing bowl add your flour, salt, baking soda and baking powder. Whisk that to blend evenly.
  • 5. Gradually alternate your flour mixture and buttermilk to the wet ingredients beginning and ending with the flour.
  • 6. After everything is mixed, fill your prepared pans about 1/2 full.
  • 7. Bake 4 loaves at a time for about 45 to 50 minutes or until a tooth pick comes out clean. DO NOT OVER BAKE, just when the bread is baked and looks a tad wet just at the top I take them out.
  • 8. Remove them right away from your pans. I flip them on their sides then after 5 minutes flip them on their other side.
  • 9. I couldn't resist and cut one while it was still hot and put a little butter on it! All gone!

Strawberry Butter
2 tablespoons unsalted butter, well softened
2 to 4 tablespoons strawberry preserves (or another favorite jam, jelly, or preserves)

Steps:

  • Bread - Preheat oven to 350F. Spray two 8-by-4-inch loaf pans with floured cooking spray; set aside. Bread may be baked in one 9-by-5-inch pan at your own risk; or bake as muffins, mini loaves, or in a Bundt pan, adjusting baking times accordingly. In a heavy-bottomed large pot or skillet, melt 1/2 cup butter over medium-low heat, stirring nearly continuously or swirling the pan. Butter will melt, foam, turn clear, golden, turn brown, and will then smell nutty. As soon at the butter begins to turn brown, take the pan off the heat, and continue to stir for about 1 minute, to ensure carryover heat doesn't continue to cook and subsequently burn the already browned butter. Pour butter in large mixing bowl. To the butter, add the eggs, buttermilk, sugars, vanilla, cinnamon, and whisk to combine. Add the bananas and stir to incorporate. Increasing mashed bananas to 1 1/2 cups and also increasing flour to 2 cups is optional if you prefer more intensely banana-flavored banana bread. Add the flour, baking power, baking soda, optional salt (buttermilk is already salted, and if using salted butter, and then adding salt, bread could become too salty so use caution here), and stir until just combined, taking care not to over-mix or bread will be tougher as the gluten will over-develop. 1 cup mashed very ripe bananas (2 medium)
2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • In large bowl, beat sugar and oil with electric mixer on medium speed until well mixed. On low speed, beat in buttermilk, vanilla and egg until smooth. Beat in bananas. Beat in flour, baking soda and salt until will blended.
  • Stir in cereal just until mixed. Spread in pan.
  • Bake 1 hour 10 minutes to 1 hour 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool completely, about 2 hours, before slicing.

1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup mashed bananas (3 medium sized bananas)
4 tablespoons buttermilk
1/2 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda

Steps:

  • 1. Grease and flour 1 large loaf pan (9 1/4 X 5 1/4-inch) or whatever combination of pans you'd like. I used a mini loaf pan and a 8 1/2 X 4 1/2 loaf pan. You can also make banana muffins with this recipe, if you wish. Set pans aside. 2. In the bowl of a stand mixer, cream butter and sugar together. Add eggs, mashed bananas, buttermilk, and vanilla until the batter is well mixed. 3. Add in the flour, baking powder, salt and soda. Mix until well combined. Divide batter into greased and floured pans and bake at 350 degrees for 50-55 minutes or until a toothpick comes out clean. 4. Let bread cool on a wire rack for 15 minutes. Loosen the bread with a knife and carefully remove from pan. Finish cooling on rack. Slice and serve once cooled.
