There's no letting the dough rise overnight with these delightful cinnamon pecan rolls...all you need is a package of ready-made rolls. It can stay your secret that these sticky treats weren't made from scratch!

1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
3/4 cup pecan halves
1 package (11 ounces) heat-and-serve rolls

Steps:

  • In a bowl, beat butter, brown sugar and cinnamon until well blended. Spread in the bottom of a 9-in. round baking pan. Top with pecans. Place rolls upside down over pecans. , Bake at 450° for 8-10 minutes or until golden. Immediately turn onto a serving platter. Serve warm.

These make a really crisp, yummy cookie. I just learned about these this year from a friend who used to make them in Minnesota. You'll love to add them to your special cookies to make at Christmas time.

6 tablespoons butter
1 cup brown sugar
1 beaten egg
1 pinch salt
1/2 teaspoon vanilla
6 tablespoons flour
1 cup finely ground pecans

Steps:

  • Cream softened butter and brown sugar together well.
  • Add next five ingredients and blend well.
  • Drop onto greased cookie sheet 2-3 inches apart.
  • (I recommend doing only six at a time even though it slows down the process.) Bake at 350F for 7 minutes.
  • Remove from oven and allow to cool a few seconds.
  • With spatula remove one at a time, flip over then roll.
  • (It's handy to have a cup of cold water close by as these are still pretty hot. If you let them sit too long they will harden and you won't be able to roll them.).

4 large eggs, separated
1 cup confectioners' sugar
2 cups ground pecans
1 cup heavy whipping cream
3 tablespoons sugar
2 teaspoons baking cocoa
1/2 teaspoon vanilla extract
Chocolate shavings and additional confectioners' sugar, optional

Steps:

  • Let eggs stand at room temperature for 30 minutes. Line a greased 15x10x1-in. baking pan with waxed paper; grease and flour paper and set aside., In a large bowl, beat egg yolks and confectioners' sugar until thick and lemon-colored, about 5 minutes. In another bowl, beat whites until soft peaks form; fold into yolk mixture. Fold in pecans until well blended (batter will be thin). , Spread batter into prepared pan. Bake at 375° for 10-15 minutes or until cake springs back when lightly touched. Cool in pan for 5 minutes. Turn onto a linen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll cake up in towel, starting with short end. Cool completely on wire rack. , Meanwhile, beat the cream, sugar, cocoa and vanilla in a bowl until soft peaks form. Carefully unroll cake. Spread filling over cake to within 1/2 in. of edges. Roll up again. Cover and refrigerate for 1 hour before serving. If desired, garnish with chocolate shavings and confectioners' sugar. Refrigerate leftovers.

3 1/2 to 4 cups Gold Medal™ all-purpose flour or Better for Bread™ flour
1/3 cup granulated sugar
1 teaspoon salt
2 packages regular or quick active dry yeast
1 cup very warm milk (120°F to 130°F)
1/3 cup butter or margarine, softened
1 egg
1 cup packed brown sugar
1/2 cup butter or margarine
1/4 cup dark corn syrup
3/4 cup pecan halves
1/2 cup chopped pecans
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons butter or margarine, softened

Steps:

  • In large bowl, mix 2 cups of the flour, the granulated sugar, salt and yeast. Add milk, 1/3 cup butter and the egg. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough remaining flour, 1 cup at a time, to make dough easy to handle.
  • On lightly floured surface, gently roll dough in flour to coat. Knead about 5 minutes or until smooth and elastic. Place in greased large bowl, turning dough to grease all sides. Cover and let rise in warm place about 1 hour 30 minutes or until double. (Dough is ready if indentation remains when touched.)
  • Grease 13x9-inch pan. In 1-quart saucepan, heat 1 cup brown sugar and 1/2 cup butter to boiling, stirring constantly; remove from heat. Stir in corn syrup; cool 5 minutes. Pour into pan. Sprinkle with pecan halves.
  • In small bowl, mix all filling ingredients except 2 tablespoons butter until crumbly. Punch down dough. On floured surface, pat or roll into 15x10-inch rectangle. Spread with 2 tablespoons butter; sprinkle with filling. Roll up tightly, beginning at 15-inch side. Pinch edge of dough into roll to seal; stretch and shape to make even. Cut into fifteen 1-inch slices. Place slightly apart in pan.
  • Cover unbaked rolls tightly; immediately refrigerate at least 12 hours (to allow for rising) but no longer than 48 hours.
  • Heat oven to 350°F. Uncover and bake 30 to 35 minutes or until golden brown. Immediately place heatproof serving plate upside down onto pan; turn plate and pan over. Let pan remain about 1 minute so caramel can drizzle over rolls.

ROLLS: 2 cups chopped pecans
3 oz. pkg. cook & serve butterscotch pudding
1/2 cup butter
1 cup domino demerara sugar
pkg. frozon yeast rolls
CREAM CHEESE ICING: 2 tbsp. butter, softened
3oz. pkg. cream cheese, soft
1 1/4 cup confectioners sugar
1/2 tsp. vanilla
1/4 tsp. lemon juice
1/4 cup (approx.) milk

Steps:

  • ROOLS: combine nuts with dry pudding mix. In a non-stick muffin pan, spoon 1 ttbsp. of nut mixture into each cup. Place one frozen dough ball in each cup. In small pot, melt butter. Add demerara sugar, stirring constantly until sugar is melted. Spoon about 1 tbsp. of syrup over each roll. Let rolls rise until double in size. Follow instructions on pkg. for rising and baking. The quick methods works great. Turn baked rools out of pan immediately onto a sheet of foil. Loose pecans can be piled on top. cool slightly. ICING:Cream butter and cream cheese with a flat spatula. Slowly add confectioners sugar. Mix until smooth. Add vanilla and lemon juice. Gradually add milk until desired consistency. Pour or drizzle ozer rolls. Let cool.
