This cheesecake bar recipe has a crumb crust topped with a cream cheese mixture.

Crumb Mixture
1 cup all-purpose flour
1/3 cup firmly packed brown sugar
1/3 cup Land O Lakes® Butter softened
1/2 cup chopped pecans
Filling
1 (8-ounce) package cream cheese, softened
1/4 cup sugar
1/4 cup milk
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F.
  • Combine flour, brown sugar and butter in bowl. Beat at low speed until mixture resembles coarse crumbs. Stir in pecans. Reserve 3/4 cup crumb mixture; set aside.
  • Press remaining crumb mixture onto bottom of ungreased 8-inch square baking pan. Bake 12-15 minutes or until lightly browned.
  • Combine all filling ingredients in bowl. Beat at low speed until well mixed. Spread filling over hot, partially baked crust. Sprinkle with reserved crumb mixture; press lightly into filling.
  • Continue baking 30-40 minutes or until filling is set. Cool completely; cut into bars. Store refrigerated.

1-1/2 cups graham cracker crumbs
1/2 cup finely chopped pecans
1/3 cup sugar
1/3 cup butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
1-1/2 cups sugar
2 cups sour cream
1 teaspoon vanilla extract
1/2 teaspoon butter flavoring
3 large eggs, room temperature, lightly beaten
1 cup finely chopped pecans

Steps:

  • Preheat oven to 325°. In a large bowl, combine the graham cracker crumbs, pecans, sugar and butter; set aside 1/3 cup for topping. Press remaining crumb mixture onto the bottom and 1 in. up the sides of a greased 9-in. springform pan., Place springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan., In a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, vanilla and butter flavoring. Add eggs; beat on low speed just until combined. Fold in pecans. Pour into crust; sprinkle with reserved crumb mixture. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan., Bake until center is almost set, 70-80 minutes. Remove springform pan from water bath. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight, covering when completely cooled. Remove sides of pan.

A friend of mine, who picks pecans every year, brought me some of these yummy bars along with a sack of pecans. They are incredibly rich and gooey, and freeze like a dream. Easy and perfect for the holiday season.

¾ cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 cup pecan halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square baking pan.
  • In a medium bowl, cream together the butter, brown sugar, and white sugar. Beat in the eggs and vanilla. Stir in the flour and pecans until just blended. Spread the mixture evenly into the prepared pan.
  • Bake for 35 to 40 minutes in the preheated oven, or until edges begin to pull away from the sides of the pan. Allow bars to cool in the pan before cutting.
