VEGAN SOUR CREAM AND ONION DIP



Vegan Sour Cream and Onion Dip image

A plant-based recipe for vegan sour cream and onion dip, perfect for snacking. Serve with pita chips or raw veggies for dipping.

2 Tbsp. (28 g) plant-based butter
1 medium sweet onion, such as Vidalia, sliced thinly
2 garlic cloves, sliced thinly
¼ tsp. (1½ g) kosher salt
¼ tsp. (1½ g) paprika
¼ tsp. (1½ g) fresh thyme leaves, plus more for garnish
8 oz. (225 g) plant-based cream cheese such as Miyoko's, Kite Hill, or Violife
1 tsp. (5 ml) freshly squeezed lemon juice
1 Tbsp. (3 g) dried chopped onions
Homemade or store-bought crispy fried shallots, for garnish (optional)
Chips or crudités, for serving

Steps:

  • Heat the plant-based butter in a medium sauté pan over medium-low heat until the butter melts, about 1 to 2 minutes.
  • Add the onion and mix well. Cook slowly, stirring occasionally, until the onions are deeply brown, about 15 minutes. Add the garlic, salt, black pepper, paprika and thyme and cook 1 to 2 minutes more or until the garlic is lightly browned.
  • Scrape onion mixture into a small food processor or blender and pulse 4 or 5 times or until the onions are puréed.
  • Add the plant-based cream cheese and lemon juice and pulse 4 or 5 times until the onions are well dispersed throughout and dip has the consistency of sour cream. Do not over-pulse, or the plant based cream cheese will begin to get loose and runny. Scrape the mixture into a bowl and stir in the dried, chopped onions if using. Garnish with crispy shallots and more thyme, if desired. Serve with chips or crudités.

1/4 cup cream cheese, at room temperature
1/4 cup of chopped green onions
1 cup of sour cream
2 tablespoons of green onion powder
1/2 tablespoon of salt to taste

Steps:

  • Chop up the green onions quite finely. You'll want to taste the green onion in each bite, but you don't want to be biting down on large chunks of raw onion.
  • Mix the sour cream, softened cream cheese, and dehydrated green onion powder until you get a nice green color.
  • Add in the chopped, fresh green onions and mix well.
  • Taste and add salt if necessary. Cover and refrigerate dip for at least two hours before serving.

3 tablespoons plus 1/3 cup olive oil
1 large red onion, thinly sliced
1 large red bell pepper, thinly sliced
1/2 fennel bulb, cored, thinly sliced
2 teaspoons herbes de Provence
1 teaspoon sugar
8 garlic cloves, finely chopped
1/3 cup sour cream
1 tablespoon drained capers
18 4x1 1/2x1/4-inch slices olive bread

Steps:

  • Heat 3 tablespoons oil in heavy large skillet over medium heat. Add onion and next 4 ingredients. Cover; cook until vegetables release their juices, stirring occasionally, about 12 minutes. Uncover; sauté until juices evaporate, about 10 minutes. Add garlic; cook until vegetables are very tender and just beginning to brown, about 12 minutes longer. Cool completely.
  • Puree vegetable mixture and sour cream in processor until almost smooth. Season generously with salt and pepper. Transfer to bowl. Sprinkle with capers.
  • Preheat broiler. Arrange bread slices on baking sheet. Brush both sides of bread slices with 1/3 cup oil. Toast about 2 minutes per side. Cool. Serve with spread.
  • A combination of dried thyme, basil, savory and fennel seeds can be substituted for herbes de Provence.

2 tablespoons olive oil
2 lb boneless skinless chicken breasts, cut into 1-inch pieces
2 tablespoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons butter
1 small onion, thinly sliced
2 to 3 cloves garlic, finely chopped
1 cup sour cream
1/2 cup chicken broth
2 tablespoons cornstarch
3 medium green onions, sliced (3 tablespoons)
Hot cooked rice

Steps:

  • In 12-inch skillet, heat oil over medium-high heat. Sprinkle chicken pieces with Italian seasoning, salt and pepper; add to skillet. Cook 2 to 3 minutes, stirring frequently, until golden. Add butter, onion and garlic. Cook about 5 minutes, stirring occasionally, until onion is tender.
  • In small bowl, mix sour cream, broth and cornstarch until smooth. Pour over chicken mixture. Reduce heat to low. Cook about 5 minutes longer, stirring occasionally, until chicken is no longer pink in center and sauce is thickened. Stir in half of the green onions.
  • Serve chicken and sauce over rice. Sprinkle with remaining green onions.

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
¼ cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French style green beans, drained
2 cups shredded Cheddar cheese
½ cup crumbled buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
  • Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
  • Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.
