For the cake
Cooking spray
1 c. (2 sticks) butter, softened
2 c. granulated sugar
5 large eggs, room temperature
1 tsp. pure vanilla extract
1 tsp. lime zest
1 tsp. lemon zest
3 c. sifted cake flour, plus more for pan
2 tsp. baking powder
1/2 tsp. kosher salt
3/4 c. 7-Up
For the glaze
1 1/2 c. powdered sugar
1 tbsp. lime juice
1/4 tsp. kosher salt
1 tbsp. 7-Up

Steps:

  • Preheat oven to 350° and grease a large bundt pan with cooking spray, then add a little flour and tilt pan around to coat.
  • In a large bowl with a hand mixer, beat together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition, then add vanilla and both zests.
  • In a separate large bowl whisk together flour, baking powder, and salt. Add ⅓ of the dry ingredients to butter mixture, beat to combine, then add ⅓ of 7-Up and mix to combine. Continue to do this until you have used up all of the dry ingredients and the 7-Up. Pour batter into prepared bundt pan and smooth top with an offset.
  • Bake for 1 hour or until a toothpick inserted into the middle comes out clean. Let cool 10 minutes then invert onto a cooling rack to cool completely.
  • Meanwhile, make glaze: Whisk together powdered sugar, lime juice, and salt in a bowl. Add 7-Up, 1 teaspoon at a time, until mixture reaches consistency of sour cream. Drizzle over top of cooled cake before serving.

1 ½ cups butter (softened)
3 cups sugar
5 large eggs
3 cups flour
2 TBSP lemon juice
¾ cup 7-UP soda
3 ¼ cups powdered sugar
1 teaspoon vanilla extract
3 TBSP lemon juice
¼ cup 7-UP soda

Steps:

  • Preheat oven to 325 degrees.
  • In a large bowl cream together the butter and sugar until light and fluffy with an electric mixer. Add in lemon juice and eggs one at a time. Mix in the flour.
  • Add in the 7UP and mix until combined.
  • Pour batter into a well-greased 10-12 cup bundt pan. Bake for 1 hour or until toothpick inserted comes out clean.
  • Cool in the pan for 15 minutes, then invert onto a rack and let cool completely.
  • Mix up all the glaze ingredients until smooth. Drizzle glaze all over the cake. Garnish with lemon zest if desired. Enjoy!

1 cup unsalted butter (softened)
1/2 cup butter-flavored shortening
3 cups granulated sugar
5 large eggs (room temperature)
1 teaspoon vanilla extract
1 teaspoon lemon extract
Zest of 1 lemon
Zest of 1 lime
3 cups all-purpose flour (sifted)
1/2 teaspoon salt
1/4 cup heavy whipping cream
1 cup 7-Up soda
1 cup powdered sugar
2 tablespoons 7-up

Steps:

  • Preheat oven to 325 F.
  • Generously grease and lightly flour a bundt pan. Set aside.
  • In a large bowl, cream together butter, shortening and sugar.
  • Mix in the eggs one at a time.
  • Fold in the vanilla extract and lemon extract.
  • Fold in the lemon zest and lime zest.
  • Gradually add in the flour and salt and mix until combined.
  • Mix in the heavy whipping cream and 7-up until well combined and batter is fluffy.
  • Spoon batter into bundt pan.
  • Bake for 1 hour and 10-15 minutes (check on it after the 1 hour mark) or until knife inserted into middle comes out clean.
  • Let cake sit in pan until pan is warm to the touch.

3 stick butter, softened
3 c granulated sugar
3 c all purpose flour
6 large eggs, room temperature
2 Tbsp lemon juice
2 Tbsp lemons zest plus 2 teaspoons lemon extract
3/4 c 7 up or any lemon lime soda ( i used ginger ale)
5-6 drops yellow food coloring (optional)
7-UP BUTTER GLAZE
1/2 c 7 up
1 c sugar
2 Tbsp butter
2 tsp lemon extract

Steps:

  • 1. Preheat oven to 350 degrees F. This is the pan I used to bake the cake, it has 11 cup capacity, and is called a Dimensions Bell Pan.
  • 2. Cream Butter with sugar until very light and fluffy at least 10 to 15 minutes or so. While butter and sugar is blending measure our flour & set aside till needed.
  • 3. Then add the eggs one at a time, beating well after each addition.
  • 4. Add about a third of the flour, beat to blend.
  • 5. Add the lemon juice, zest, & extract, & beat to blend. Add more of the flour with the 7 up, and finish with flour, beating well to blend.
  • 6. Now spray or butter and grease your Bundt pan with cooking spray or Bakers Joy. Pour batter into preheated 350 degrees F. oven, and bake for 1 hour and 15 minutes or until tooth pick inserted into center of cake comes out clean.
  • 7. To make the glaze, add the 7 Up to a small sauce pan, add the butter,& sugar, and bring to a simmer over low heat, till mixture becomes syrupy. Remove from heat add lemon extract, and stir to blend.
  • 8. Poke holes into top of cake while still in pan, and slowly drizzle about half of the glaze over the cake. Then invert cake onto large platter, poke holes into cake and slowly spoon or drizzle glaze over cake, allowing the glaze to seep into the cake. Serve plain or with your favorite ice cream.

5 eggs
3 cups all-purpose flour, sifted

1 cup lemon-lime carbonated beverage (such as 7Up®)

This is one of 25 dessert items being featured at a reunion where I AM HAVING A DESSERT TABLE. This classic recipe calls for 7 Up, but I was out of 7 Up & did not want to go to the store, and used Mountain Dew instead, and it still turned out great. Not only do I add lemon Juice to this recipe, I also add the zest of one lemon. It is always guest and family approved every time I serve it. The glaze add a little twist to the original recipe. I got the idea from my 6 Flavored pound Cake that also has a glaze. I am sure you and your friends & family will also approve of this Classic Dessert.

  • Preheat oven to 350 degrees F. Cream butter with sugar until fluffy for about 15 to 20 minutes, till light and airy. Beat in eggs one at a time, and beat well after each addition.
  • Add flour, and lemon juice and mix as you go, then add lemon zest, and mix again. Add 7-UP and blend until well incorporated into batter.
  • Butter or grease a bundt pan then dust with flour, or USE BAKERS JOY MY FAVORITE and add batter to pan. Bake in preheated 350 degree oven for 1 hour and 15 minutes or until toothpick inserted in center of cake comes out clean, or until cake springs back when lightly touched. Prepare glaze by adding 7-Up with sugar, and heat until sugar dissolves and glaze becomes syrupy about 2-3 minutes. While still hot, add butter and stir until butter melts.
  • Poke holes in cake with a skewer, then spoon glaze over cake and allow glaze to penetrate cake thru holes.
  • PLEASE NOTE: I usually let cake sit in pan for about 10 minutes, and then invert onto a serving plate. Then poke holes and add glaze. If you like you can double the glaze ingredients, and poke holes into the cake while it is in pan, and drizzle half of glaze, then invert onto a serving plate, poke holes and add the remaining glaze.This cake is very moist & tasty.

1/2 cup shortening (Crisco is good)
3 1/2 cups sugar, divided
3 cups all-purpose flour
1 1/4 cups 7-up, soda divided
1 teaspoon almond extract
1 teaspoon vanilla
1/2 teaspoon salt
5 large eggs

Steps:

  • Set oven to 300 degrees F.
  • Grease and flour a 10" tube pan.
  • In a large bowl combine butter, shortening, 3 cups sugar (use only 3 cups sugar) vanilla and almond extract; beat using an electric mixer until light and fluffy (about 5 minutes).
  • Sift the flour and salt together.
  • Add eggs, 7-up, and the flour mixture to the butter mixture, using the following directions:.
  • This method must be followed; add 1 egg in at a time; then add a bit of Seven-Up, then a bit of the flour mixture, then a bit more of Seven-Up; repeat until all the eggs, flour mixture and 1 cup Seven-Up is used up (you will use the remaining 1/4 cup for glaze).
  • Spoon mixture into prepared baking pan.
  • Bake at 300 degrees for 1 hour and 40 minutes, or until cake tests done.
  • Cool in pan on a wire rack for 10 minutes.
  • Remove from pan.
  • Mix the remaining 1/2 cup sugar and the 1/4 cup Seven-Up soda.
  • Spread the glaze mix over cake.
